What have you eaten today? (Low carb forum)

Evening everyone
Feeling really glum, a little while ago I took a 2 hr reading after a peanut butter PhD bar: it was 8.9!!! This is the highest I’ve seen since I started monitoring. Ive got my A1c on Monday so this will bring the average up too - heaven knows what it was after one hour.

@Goonergal Ive bought the chicken - its about 2 pint of cream/ buttermilk, hadn’t realised it was so much so cant begin tonight. Shame it has to be chucked out afterwards. Do you actually wipe the chicken dry after soaking? Sorry to keep asking questions.

Hi @DJC3 that one reading shouldn’t impact your HbA1c. Just put it down to experience - was it your first one of those bars, or have you eaten them before?

I don’t wipe the chicken after soaking, just,put whatever I’m cooking straight into the cooking dish and the rest into bags for freezing.
 
Hi all
Hungry day today after my water fast for blood draw. Another puppy care day but nearly at end of week. Five days is fairly demanding although fun - sure will be doing more in future but hoping not such a long period as with caring has meant have done less for me - unless you count running around with the puppy. Haven’t played for years! Big work conference week after next so lots of work outstanding too! At least I’m now feeling well and back to normal.
Late breakfast after blood draw one slice of bacon and egg
Lunch two slices of low carb toast one with mackerel pate one with cheese followed by slice choc olive oil cake
Dinner chicken breast and cauliflower cheese with small glass of red wine followed by raspberry mousse

It was the first one of that flavour.

Ive previously had the choc and raspberry one, but as a dessert after a meal - the post reading was a bit high then but not quite in this league.

Down to 6.1 now, 1hr post Nandos and 3hr post PhD so feeling a bit less panicky

Day started ok
B: 2 eggs fried in butter, 2 thin rashers bacon and a small fried tomato. Couple of mugs coffee and cream

L: none as I was out, except coffee from Costa

Mid aft: home and hungry hence PhD bar

D: had already ordered Nandos when I took the PhD bar reading, otherwise would have skipped it and done some exercise instead. Probably should have done that anyway in hindsight but I was still in shock. Had a 1/4 chicken leg with Med salad.
Waiting for it to go down a bit then will get on the exercise bike

Good luck on Monday I’m sure it will be immaterial as part of the hbaca1 don’t forget the really low readings you don’t take during the night. Also sometimes meters @nd strips do funny things. Remember my last weeks 12! Meant I had to get a replacement meter. Did you retest several times and then average? I always do if get unexpected reading.

Hi Shelley, yes I remember your 12.
I did retest immediately but got 9.1 second time so decided to stick with the first one!
I’m calming down a bit now, as @Goonergal says -I’l just mark it down to experience and give the other bars to my daughter or hubby.
Just goes to show how different we all are, I know @Rachox has them without any effect.
 
Good evening all. My dear wife had a very disturbed night's sleep and bless her tried very hard to leave me undisturbed. Nonetheless, I woke early for me lately and have felt sleepy all day. As a result I have eaten much more often today and feel what I imagine it might feel like having eaten a lorry load of redymix! On the plus side readings have stabilised so maybe my theory of needing to eat more has legs or could just be serendipity :( Menu as follows:

B: 2 pints tea with almond milk @ 5.50 then 2 pints @ 8.00
MMS: Mug coffee with double cream; Homemade high fibre toffee and chocolate bar; 2 slices cold pork 11.00
L: Bacon sandwich - Livelife bread Heinz reduced sugar tomato ketchup; salt beef sandwich with the crust 1.20
MAS: Chocolate Olive Oil cake; Double cream and strawberries blitzed in nutribullet; 1 pint tea with almond milk 4.15
D: Asparagus (ours) quiche with keto pastry base (trial of keto pastry); Salad; Hellmans Mayo; Glass red wine; 6.40
Don't sweat the samll stuff - you have been doing all the right things. @Goonergal I suspect you are getting much smarter at understanding your body's cues for feeding or sparing; @shelley262 glad to hear you are feeling back to normal.
 
@SueJB Thanks for that. I am looking at lacto fermentation generally as some research suggests the process is helpful for blood sugar control. Toying with the idea of buying a sauerkraut kit to do it properly. Have you ever tried that?
Hi @ianpspurs I would never dream of buying a kit to pickle cabbage, it's not needed. Salt, a weight and shredded cabbage in a big pot and time and time aka patience

@SueJB I would generally agree but we have always pickled with vinegar. The big book of posh sauerkraut says one must use a cabbage mashing stick to make the pukka stuff and I am a sucker for a piece of orfentick smutter. My wife doesn't like vinegar but would be prepared to try this method of pickling so it may be politic to fork out for the lovely ceramic jar, weight, basher etc

@ianpspurs I lived in Poland for 7 or 9 years... can never remember exactly probably the result of too much Zubrowka!! I used a saucepan or a bottle to mash before I bought a rolling pin. That was on the advice of a Polish friend so I think that's quite authentic. Me thinks you've taken on a "alf J" accent.

I had one this morning for breakfast! Because I was offered cereals or toast for breakfast after fasting for the Oxford Biobank Research! :banghead:
Reading 5.4 before then 6 after two hours, so I’m happy with that.

@ianpspurs There's no vinegar in sauerkraut or kimchi for that matter. It's not pickled, it's fermented. There's absolutely no need for the basher but I would happily go along with buying a wide-mouthed ceramic, hand-thrown, wide-mouthed pot just because I love them.
 
Breakfast: dark chocolate and raspberry phd bar and black coffee.
Lunch: small piece of left over fathead pizza with cauliflower, broccoli and yellow pepper salad followed by Greek yoghurt and raspberries.
Mid-afternoon Hartleys 10cal jelly and black coffee.
Dinner: carbonara made with Explore Cuisine edamame spaghetti, bacon, mushrooms, peas, double cream and egg with a sprinkle of extra mature cheddar followed by strawberries and salted caramel Oppo.
 
Bed 6.5 and FBG was also 6.5. Another madcap day. No 2 grandson had 2 school visits today and seemed determined to excel at being naughty. In between I managed an aqua zumba session and the hairdresser. Forgot to collect next terms school clothes from M&S though.
B. 2 scrambled eggs and a bit Mattesons smoked sausage. Tassimo Americano grande with a dash of cream.
L. Small bit Lemon Drizzle cake with a little of my yoghurt/cream cheese icing.
D. DD Keto mushroom omelette but with 2 eggs not 3.

Also had celeriac chips.
I suspect I'll have another bit drizzle cake. Gee it's good.

Thanks to No 1 grandson I've remembered another one of MILs statements and it's a cracker.
She flatly refused to go on a beach holiday because she didn't want to be killed by a satsuma!

I know there's no vinegar which is why my dear wife would probably try this method. I think way back in the mists of time, before freezers, relatives preserved green beans in a similar way. We have been bottling tomatoes and some fruit for a few years but lacto fermentation is now in vogue and promises a health dividend as well as a new taste.
 
Hi everyone, well today was 2nd HbA1c test since diagnosis, HCA taking my blood assumed it was an annual check up, offered to do full bloods so may get a bit more info when results come back?
Breakfast was livlife toast with some peanut butter
Morning snack a couple of salami crisps, celery and cream cheese
Lunch - low carb pitta rolled with roast beef, sliced baby tomato, sliced gherkin and mayo
Evening meal of some Indian tikka masala with cauliflower rice

I have also had a bash at making the chocolate olive oil cake, it smells delicious but may have to wait until tomorrow to try it ;)

@shelley262 Funny you should say that as my wife said she thought it would be really nice warmed and I wondered if @jayney27 was a new poster to this thread before realising she had changed her avatar:banghead: By the way, in my food list I mentioned we tried the keto pastry for the first time - it worked really well and yes, real men do eat quiche:angelic:

Yes Shelley I imagine it tasting better warm, a little bit gooey maybe, either way I think it will be a little slice of heaven, not had chocolate cake since before I was diagnosed. I did have a little slice of cake at Christmas and from my granddaughters first birthday cake in April, so this will be a very welcome treat. That said my eldest grandson will be five this weekend so there will be cake then too, good job my blood test was today.
Thank you, I decided to change my photo, it seemed strange seeing myself all bundled up in a coat, that photo was taken on a lunchtime walk at work in February, this one was taken at the end of my holiday in May so yes it’s a bit more summery.

I warm it a lot - Pastry sounds good
