What have you eaten today? (Low carb forum)

@DJC3 You must be so relieved, so pleased for you. Your celebratory meal was absolutely deserved and the mezze sounded delicious!

Thank you for everyone's lovely kind words and well wishes. This forum well and truly kept me afloat in our darkest days and for that I am eternally grateful. It was a very long day for us, appointment slot at 1.15 and we didn't get home until 6.00. They were running behind and then we hit rush hour traffic. The good news is that there has been further improvement, the less good news is we're back there in 4 weeks to go through the whole process again. All the staff were lovely and know about his anxiety problems, which made it easier. This was the 7th set of injections....we're beginning to feel like we live there. Anyway....on today's fodder.....

Breakfast: Coconut chocolate chia pudding. Not for me I'm afraid, I found it far too rich. It might work for a dessert, but too much for breakfast. I only ate a few mouthfuls, which was probably a good thing because.....

Brunch / Early Lunch: We decided to pop to a local café for a cooked breakfast, as we needed to leave around midday for hospital. All the usual suspects, bacon, sausage, black pudding, egg, tomato and mushrooms. I succumbed to a slice of granary toast , but no beans (I've never liked them anyway). Mr BB kept it all low carb. It was a good decision, as it helped keep his mind off things for a while.

Dinner: Neither of us felt like cottage pie, so just a selection of 'bits'. Babybel, mature Gouda, sliced Cajun chicken, avocado, cherry toms, cucumber, baby spinach. With further improvement, you must both be just ecstatic. Whilst I'd hate to be in his shoes, that it's getting him somewhere must make the repeated appointments marginally more palatable.
 
Evening all. My fast is over. From 1pm Wednesday to 1pm today i have had just water and black coffee
1.30 pm - cappuccino (6.6g)carbs
6.00pm - walked in from work and just had to have a piece of hotel chocolat 70% chocolate

Oh how I wish I’d just cooked myself a huge steak! It’s my first ever time even trying never mind cooking with blue cheese. The second it came out of the packet and the smell hit me, the heaving started :bag: I had to abandon the kitchen and send my stronger stomached better half in to finish off the recipe. I was all set to bin it and order takeaway but he assured me it tasted better than it smelt. He Cooked my courgette in just salted water as not quite sure about the cooking in hot sauce as per the recipe. So I braved it and tried it and it does indeed taste ok. If I’d have been served it in a restaurant I’d have been quite happy. As it stands, my house stinks of the awful cheese and so only for that reason this recipe won’t be making a reappearance. But can’t love ‘em all I guess. If I’m trying one a week there’s bound to be some failures. Better luck next time :)
Can I change your mind about stroganoff? The Rick Stein recipe I use is brilliant.

I have the cookbook and have used this recipe for years. I tend to use a lot of paprika but not all Hot - some sweet some hot. Sadly I cant have the matchstick potato chips now but I have mine with matchstick celeriac chips or courgette chips. It means I just have to make one big pan of stroganoff for everyone and the only adjustment is what the chips are made of. Trust me, this recipe will make you love stroganoff again.

A bit boring foodwise today after yummy yesterday.
Breakfast: 2 egg cheese omelette. Coffee&cream

Visit to GP this morning to discuss my cholesterol but when I got there she said it was a mistake that I’d been called in and everything was fine! We chatted about lchf instead and she seemed very interested but then started rabbiting on about her son’s organic veg company in the Czech republic and her inability to grow kale. It was quite surreal, I think she was just enjoying a chat and forgot she was supposed to be working.
Lunch was bits and bobs from the fridge, sauteed shredded sprouts with chorizo and grilled halloumi. Peach chia pud using @Rachox Benecol recipe - not at all bad, will do it again.
Dinner roast chicken and cauliflower cheese followed by a handful of Callebaut 100% chocolate drops and a decaff coffee& cream.
 
Hope everyone is now recovered from the various lurgy attacks. I've been dipping in and out desperately trying to catch up as I have a very busy weekend. @DJC3 - great news. I certainly know how you feel. It's a bit of a double celebration as my one surviving brother also got the all clear yesterday so he too is off the hook for another 6 months. We were up there today for arrangements for tomorrow. He still has all his family there but they'll be dispersing in a week or so hence the gathering tomorrow. So, meal out tomorrow followed by Bohemian Rhapsody. Would have been even better to have been able to do it tonight as it was the sing a long version! So tomorrow will be Nandos first - Anyone know if Nandos frozen yogurt is ok for us or is it sugar packed? @Goonergal - have a lovely weekend. Enjoy. Back to the catch up.
Wednesday

B. 2 scrambled eggs with 3 rashers of crispy streaky bacon. Tassimo Americano grande with a dash of cream.
L. The other half of that Phd caramel bar - definitely too sweet. I wont get that one again.
D. I'd been spicing ribs since yesterday so it was a rib fest served with nandos pirinaise (think that's how you spell it). Lots of water as it was hot stuff.
Thursday
Bed higher at 7.3 FBG 6.3. It's fine during the day but I still have a niggling sore throat. Aqua today. Should be aqua zumba but instructor has been struck down by the bug so it's my Monday instructor standing in.
B. 2 scrambled eggs and Tassimo Americano grande with a dash of cream. Then off to aqua.
L. Hubby had lentil soup made for the boys so I had a cup of it and it didn't do too much harm. It was chilly out so warmed me up nicely.
D. Was going to chance more soup but changed my mind and stuffed a small chicken breast with some haggis and had with a pepper sauce and vegetable chips. 6 raspberries and a spoonful of clotted cream.
Today - Friday bed 6.3 FBG 6.4 no DP today either.

L. Nothing
D. More lentil soup but not so lucky this time hit 9 one hour on. Dropping quick though. 6 raspberries and a spoonful of clotted cream.
Plenty water again. Looking forward to tomorrow - a bit like my life little high, little low, Anyway the wind blows, doesn't really matter to me. Wish we were going to the sing a long now.

Fantastic news about your brother! I’m so pleased for you all. It must be even worse for your family having lost so many to cancer already. He must have been beside himself. What a relief.

Oh yes the singalong version would have been marvellous I’m singing now having read your post.
 
@BibaBee - wonderful news on Mr BBees eyes. I certainly don't envy the treatment. My brother (sadly the one who passed last year (nothing to do with his eyes)) also had the eye injections which even creeped out some of the nurses at the eye pavilion. Eventually he ended up with 20:20 Vision in one eye. The other eye wasn't as good but was corrected with glasses. The appointments did get bigger gaps.

They actually very easy to make. Melt erythritol in a pan, add a pinch of salt and clotted cream. Wait until it caramelizes and stops bubbling. Add the sliced almonds. Takes a couple of minutes until almonds are browned. Pour unto a wax paper sheet, spread out with spatula and let cool. Break into smaller pieces. Melt high cocoa content chocolate in pan (about 80 degrees) and dunk the bottom of the florentines in the melted chocolate and put bottom up onto the wax paper to let chocolate solidify.

Btw, was way less messy then trying to make the coconut bites.

I’m keen to try, can’t be any messier than the coconut bites! Next time I make them Im just going to make coconut sandwiches and not bother covering the sides.
 
Thanks @ziggy_w . They usually go for a course if 5 or 6 injections every 4 weeks, then increase the time between treatment to 8 weeks, 12 weeks, etc. We're up to 7 now, still every 4 weeks. They are being quite cautious, as they know he has rapidly brought his blood sugar under control (down from 122 in June to 41 in November). Although good in the long term, such massive changes can make the maculopathy worse in the short to medium term. The time before last, his left eye decided to throw a bit of a wobbler, so it's a bit unpredictable. We see his consultant in just over a week, so she might be able to give us an idea of the longer term plans. Just hope he gets away without laser in the left.....he's already had it in the right eye.
So pleased he’s improving hard though that reduction of bgs can also impact Take care you’ll get there eventually crossing fingers for you both.

Just eaten some amazing caramel - best yet - lots of inulin and butter. Really easy to make. Just walk the dogs and it appears in the fridge. Very proud of myself - a real talent:angelic:

Sounds really good and with inulin wouldn’t be too sweet you’d just get the texture and flavour? @DJC3 may be worth a try for the Florentines idea?
I agree with @ianpspurs on the inulin (as you know I'm a big fan of it for creme brulee). The Lankanto classic monkfruit also makes a really good caramel. I used it during the summer when I made low carb sticky toffee pudding for everyone. It's one of Caroline Ketchum's recipes but I did adjust it a little. I used black treacle instead of syrup substitute as it was just 2 teaspoons in the cake and for the carbaholics I added chopped rum soaked dates and raisins to the mix. I had a little cake bar for myself minus the dates/raisins. The caramel to pour on and cook into it at the end , the monkfruit was more what I was after. Monkfruit melts very easily - I used 1/4 cup lakanto monkfruit classic (golden works too) and 3 tablespoons each butter and double cream. Very easy melt the monkfruit on a low heat stirring all the time (it goes liquid very easily). Once liquid add the butter and keep stirring until the butter melts then add the cream and keep stirring for another 2 or 3 mins. You can bring the heat up until it's almost boiling but don't let it boil. Inulin is less sweet but this is bloomin' good for sticky toffee pudding

I've found a good stroganoff recipe @Emma_369 , it's a Tom Kerridge one. I substitute the low fat soy 'cream' for the real stuff and it tastes really nice. No cheese!!:D

Hi @DJC3,

I just use a teflon-coated pan and heat it to about 180 to 200 degrees. Erythritol melts just like sugar, but requires a higher temperature. The erythritol doesn't really caramelize, but the clotted cream does once you mix it with the melted erythritol -- in the end the result is pretty much the same. The important thing is to keep stirring, so the mixture doesn't burn.

Last time, I used about 6-7 tablespoons of erythritol, two pinches of salt, about 3-4 tablespoons of clotted cream, 100g of sliced almonds.
