What have you eaten today? (Low carb forum)

Wonderful news not surprised you celebrated really pleased for you both. I don’t think cream in coffee will spoil the fast im sure that Jason Fung says it’s ok to have small amount of cream if can’t fast without it. I did IF and one meal a day with black coffee and black tea for one month but needed to lose lots of weight at that stage. I do tend too to fast from about 7 to 10 following am most days with only water and black tea it’s a personal choice. Good luck
Thanks! Mr B's BG tends to rise all morning without any food, so the cream is a compromise. He's also still on Metformin first thing, but he seems to tolerate this okay without a meal. I can probably go without cream, as happy to have black coffee. I'm fasting for weight loss only. For Mr B it's just for BG benefits, as he now just needs to maintain his weight. I don't think we'll go as far as OMAD or longer fasts, but we both find it easy to skip breakfast, so worth a try.

Def good idea to keep up with cream if he dosent want to lose weight plus, as you say, it will stop his bgs climbing. I did need to lose weight.
 
Greetings from Snowy Derbyshire! I didn't get chance to post yesterday, as we were at the Eye Hospital again for Mr B's review and got a bite to eat on the way home to celebrate. It was all good news! The bleed in the right eye is clearing, so it looks like he won't need surgery (vitrectomy). There is no apparent progression of the retinopathy in the left eye (his good eye), so no laser needed. Injections for the maculopathy continue for now, but hopefully they will start to become less frequent. I'm over the moon for him. On the way home, we went to our favourite local American diner type restaurant that specialise in fancy burgers, ribs and burritos. It was the first time we've been since Mr B's diagnosis. I'll spare you the sordid carby details of my meal, but Mr B made good choices. He had his fave burger (with in-house smoked bacon and cheese) served without the bun, coleslaw and an extra halloumi salad. He had literally a couple of chips but showed remarkable restraint. Today has been more restrained for both of us and our first bash at gentle IF (although we tend not to eat past 8 in the evening, so we have an 11 hour fast most nights).

Breakfast: Coffee with a tiny drop of cream (will the cream in the coffee spoil the benefits for Mr B?)
Lunch: Mini frittatas with cheese, tomato and spring onion. Baby spinach, avocado and cucumber. Greek yoghurt, berries, almonds.
Dinner: Salmon with pesto wrapped in prosciutto. Roasted asparagus and tomatoes, cavalo Nero with chilli, garlic and lemon. SF jelly and cream. Almond milk hot choc, because ***SNOW!!***

BibaBee - You and your husband must be really delighted with his progress and improvement. Your is one of those stories when updated, that just makes me think,......... Wow!

From what you describe of your husband's choices yesterday, it sounds like he's committed to his arrangements, rather than tolerating them.

Onward and,..............erm, onwards!

great news about mr b indeed...long mat it continue improving.

breakfast..usual 3 tbsp greek yoghurt 10 blueberries, one mug tea.6am

that took me through to 1pm
lunch was leftovers from last nights steak, and brocoli, pepper sauce.
cold but tasty.
a little salad and cheese afterwards.

dinner 7pm shared half grilled chicken cottage chicken with missus, salad an a slap of coleslaw.
lemon tea for both of us.

water and half a dozen teas

had attempt at a keto muffin..simple recipe, pinch of baking powder, salt, one egg & 2 tsp of coconut flour.
microwave one min...even i can do that..:D

was ok, not sure its how it was intended, but ate it anyway..firm,
might do small batch in muffin tray and add some chopped berries next time.

Breakfast lemon ands ginger water, fat free Greek yogurt and mixed fruit berries, tea
Mid morning boiled egg,
Lunch tomato, cheese, few walnuts and almonds, a little coconut, apple, coffee

Dinner chicken thigh with cheese and wrapped in bacon, broccoli, cabbage and boiled onion, fat free Greek yohgurt and mixed berries, tea
2 hours after dinner reading 5.6
I think I am getting the hang of this thanks to all your advise and support. Couldnt have done it without you so thank you.

if i was being picky i'd miss the hot chocolate
and i used to munch apples, but now i have max a half..as they started to push my bg's up a tad.

but all in, great efforts.:D

i also have asthma and i've noticed that although its well managed, this year, since changing my diet, its almost non existent,
which was a nice side effect.:)

Really good news about your asthma. I was watching a talk by Joanne McCormack yesterday ( she’s a GP in Cheshire I think) who said exactly the same thing - she has patients who have resolved both asthma and eczema through a low carb diet. There seem to be so many health benefits.
 
@jjraak , my asthma has virtually disappeared since low carbing, I still take my brown inhaler regularly but I can’t remember the last time I needed the blue one :)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold bbq chicken with leafy salad, one cherry tomato and cucumber followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: Starbucks coconut cappuccino and a caramel Carb Killa bar.
Dinner at Bella Italia: new on the menu butternut squash Lasagne, took a chance on this but only saw a 0.2 rise in BS from pre to 2 hour post meal :happy: Followed by LC Bounty.

@shelley262 you are such a good “granddogma” to be on call. Snap on our lunches! (I think I used that right? It means something else over here- polite substitute for an expletive, invented by the 20-somethings I think. We said “shoot!”, they say “snap!”

@ianpspurs I seem to have gone the other way with fats- dairy fat has been mostly avoided unless in the rare cheese item, or ice cream. But this WOE has definitely reactivated my dairy addiction, and I have no problem eating all the dairy things now. Trade one addiction (sugar) for another. Sigh. I’m afraid meat fat is never going to look good to me... I’ve been “mostly vegetarian” for 45 years, which is a very long time to one’s brain and gut. I still really enjoy the smells of all except organ meats cooking, but eat a burger? Not likely...

Apparently if I eat enough cream and butter, I can have celeriac, tomatoes, chia, and chocolate for supper with the cheeses. 0.33 rise at 2 hours- 6 points, not bad right? Winter blues are making me stuff my face.... @Rachox you beat me though with your butternut lasagna. That sounds fabulous! Could make mini lasagnas on giant portobellos?

Lunch roasted celeriac: love it! Tasts like potatoey carrots. Tomatoes, celery,, tin of unsalted sardines with olive oil, a square of 90% chocolate, with cream

As I was saying! The celeriac showed up again, yum! Cottage cheese, swiss cheese,a few chia seeds in this mirning’s coffee dregs with cinnamon and cream. Pretty sloppy pudding but tasty. Then that chocolate called my name again...
Weight loss definitely stopped. I guess I cut out some fat? It’s depressed winter blues time might be slightly impossible.

Great that you love celeriac I used to almost exist on potatoes, they were central to many of our family meals, and find it’s a great replacement for chips and roasties especially. You may find that eating a fair bit more in response to hunger - but staying lc and not putting up your bgs - and then lowering amounts again for a bit or fasting a bit when you feel less hungry can have the effect of kickstarting weight loss again.

@zauberflote - we can get Ezekiel 4:9 products online here. Checked a UK supplier but in the bread line the only one they currently have available is the 7 sprouting grain versions. I agree the carb count looks high in comparison to some of the high protein breads we can get here. I'm just curious over whether these sprouting grains do behave differently. I realised Ezekiel 4:9 is a bible verse so me being me decided to read it and I get why they called the bread. Don't understand why he had to lie on his side for 390 days and I was amused that God told him to use human excrement for fuel to bake it! Was somewhat relieved that he said no and was told OK you can use cow dung then. Who would have thought bread would get me reading the bible!

@maglil55 re bread and bible reading - is it not the bread of life? The back issue has abated more than resolved thanks. Just left with the what caused the lat muscle issue and dealing with the long term issue. I need to activate my open appointment with physio even though methinks surgery or live with it are the only options. Thanks for asking, much appreciated.

@shelley262 - hope Cooper is on the way to recovery. Friends of ours have had issues with their 2 dogs recently. Both had coughs but not at the same time. They kept alternating but both finally recovered.

@Emma_369 - when our boiler went (again during a very cold snap) it was 4 days before they could fix it. We had thick socks on, loads of layers, duvets and hats and gloves on. We also did a lot of visiting. Now I have precautionary heaters in the attic. Hope it's fixed now.

Now that I've caught up on everything - yesterday Bed 6.3 FBG 6.2. Seem nice and stable now. It's really, really cold and frosty today. Finally got the woolly hat out for the school run. No 1 has decided he's going vegetarian. He's in a meat eating household so he's made the decision himself. Told me he loves his pets and it just seems wrong that you would eat animals. Can't really argue with that. He says he'll eat fish but no meat at all. Time to start upping my vegetarian skills again.
B. Simple Bacon and eggs with a Tassimo Americano grande with a dash of cream.
L. 1/4 of a PhD raspberry bar while I pushed on with the kitchen cupboards. Over half way now. 7 down 6 to go. Would progress further if I could stop admiring the completed one's.
D. 2 lemon sole sauteed in butter and lemon, loads of wilted spinach and a few veggie chips. Scoop of halo top and 6 raspberries.
@ianpspurs - glad the back is improving. It's no fun as I well know.
Ah well back to the cupboards.

Well boiler man has just been to look and is coming back after work with correct parts to fix so hopefully by tonight we’ll be sorted
