What have you eaten today? (Low carb forum)

B=tea and a little water. Lunch = 2 eggs inside a breakfast mushroom with reduced sugar tommy K (treat) after #1 of 6 chemo. Evening= beef mince with some onion, Italian herbs, passata and a little bovril, topped with slices of celeriac and cheese. Attempt at LC comfort food (bit of an oxymoron but that was ok) - think the bovril (1 tsp in meal for 2) was a god idea and I have always liked passata and onion.

Hope you don’t feel too rough! And I hope the chemo doesn’t affect your sense of taste.

@Annb -- I really empathize with your frustration. It really doesn't seem fair, does it? How are your overall blood sugar levels, have you at least seen some type of drop while eating so little? Someone might have mentionend this before, but have you ever had your c-peptide levels measured? High consistent insulin can prevent your body from accessing your fat reserves. Alternatively, starving yourself might increase your stress hormone cortisol, which might also work against you. Other than this, I am at a loss, why you don't lose weight on so few calories. I admire your dedication.

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol. One DD keto roll -- one half with butter and bresaola, the other half with mayonnaise and cheddar.

Lunch: Another DD keto roll, each half with mayonnaise and smoked salmon. Liver pate 120g and a square of 95% chocolate.

Dinner: A small hamburger patty with melted cheddar. Two glasses red wine.

Homemade bitter lemon throughout the day.

I have had my c-peptide level tested and it was "normal" but my insulin level was said to be higher than it should be. Dr suggested that I am probably insulin resistant. My BG is usually higher than I would like it to be; sometimes much higher (eg 14.4 a few nights ago, 21.6 another night). I have been trying to control BG level with diet and insulin for many months now and I seem to be injecting more and more insulin, which is worrying.

For a while, low carbing did reduce BG levels, but then it started to climb again. Then fairly recently I started Intermittent Fasting - no change and even more recently I tried adding the 5:2 diet. No change. Today my BG has been 9.9, 11.3 and then falling over the afternoon to 8.3 - after what I consider to be pretty high doses of insulin. The only really successful day was the day I had ramen for my 2 meals of the day. Calories well below the 500 in the 5:2 diet.

Today I had my self-promised 2 boiled eggs mashed with butter and about 7.15, a bowl of ramen. I'll be checking BG shortly to see if that has helped. I have also had the unwanted higher level of insulin before both meals.

I have been wondering @ziggy_w how you make your bitter lemon. I love the more bitter fruit drinks but, because I take Simvastatin, I am not supposed to drink grapefruit juice. The best I can do is lemon juice in water but would love a change.

I just tested and BG is now 7.0. Better than it has been for a while but that is after mostly watery stock and some bits of veg and 34 units of insulin.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over roast chicken with cauliflower and broccoli salad followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: Coffee chia pudding and black coffee.
Dinner: tuna melts with roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.
 
@DJC3 Shoulder/elbow problem started as an RSI from the job I had at the time. It fluctuates, but never completely goes away.
@Annb seems shoulder problems are common in people with diabetes or insulin resistance. am applying ibuprofen gel 10% ( brought into france by Son1- not available to buy here) morning and night atm and trying not to stress it, but with gardening , housework and simple things like getting dressed in the morning that is not easy

We got the builders in. Surprise its builders plural. We were expecting one. :wideyed: Will be more euros now, unless they finish in less than the week.
Shopping, bought some APPLES Reine de Reinettes- These are reported to be suitable for eating, cooking and making cider.
midmorning H had choc bicuits on the table, ate one, but not really nice, will be better able to resist if he buys the same again.
More of the tedious digging, might finish it tomorrow- weather permitting .
lunch: usual small piece of baguette, half a tomato, lettuce. and some "Crab Claws"with mayo. Realised they were just crabsticks in a different shape - tasty but what a disappointment. Crabsticks or surimi seem to be very popular over here.

Rushed around picking up the walnuts when we got back, had started to rain a bit and was getting dark. Walnuts are taking over the kitchen.
MrSlim cooked, omelette with smoked salmon, chives and peas for me, he also had chips
Peeled and cooked some apples from tree2. This is the renumbered tree 2 different from before. They are yellow, small to med size. Seem to have a lot of core and many are infested. so binned those. The remaining few were cooked, most kept their shape, although i suspect with longer cooking would go to pulp. ok to eat. Nothing special though. Keep hoping to find one really delicious variety.
We tried the Reine de Reinette. Was not impressed. Give me a Coxs Orange Pippin please.

@Annb -- This must be frustrating to no end. Glad that your blood sugar levels are currently at decent levels. Based on what you have said, I really think it might be the high insulin levels (both natural and injected), which increases insulin resistance and make it so hard for you. The statin might furthermore add to the insulin resistance. Is there any way, you might have access to a medical professional, who has some experience with this?

As to the bitter lemon -- Use the juice and the rind of four lemons, plus the pith of one lemon. Add about 2 tablespoons of cinchona bark (available on Amazon), a little bit of citric acid and erythritol to taste (I use 7 tablespoons of erythritol), and tab water (about 0.7 liters). Heat, let come to a slight boil, and boil for about ten minutes. Strain the liquid, fill it in a bottle and let it cool. Mix the concentrate with carbonated water (I use one part bitter lemon concentrate and 10 parts carbonated water).

The lemon pith and the cinchona bark are responsible for the bitter taste, I not sure if they mix with a statin.

Dinner: This pair of steaks and veggies.

Breakfast: Usual c&m omelette, bacon, tomatoes.

Drinks: Black coffee / tea no sugar, water.

Early dinner: Half a ribeye steak. Lamb's lettuce with Caesar's dressing and grated cheddar. A glass of red wine.

Later: Homemade low-carb chocolate pudding with whipped cream.

Some more homemade bitter lemon throughout the day.
 
Hi All yesterday’s food
Breakfast: slice LivLife toast, butter, tea.
Lunch: 2 cheese scones (after baking a batch abt 3g each) butter, tea.
Supper: 2 small lamb steaks, aubergine type curry accompaniment which came with the meal deal. Tasty but too carby to add to a curry.

Thanks for that recipe @ziggy_w. I'll have to go to Amazon for supply of chinchona bark but I'll certainly give it a try.
 
I had breakfast today - very hungry after only a bowl of ramen (sans noodles) yesterday evening. BG was 5.8 at 8.15 so that's a result. However, by the time I had breakfast it was 9.0.

Breakfast at 10.30 was 35 units of Humilin S and 2 beefburgers (from the butcher because my own never taste very good) and 2 large mushrooms. I've realised that I just don't like burgers because I found the butcher's ones pretty tasteless as well and I just left one of the mushrooms and most of one of the burgers - gave the remaining 2 in the pack to No 2 son for his dogs. BG at 12.15 down 0.1 to 8.9.

I can only afford some more ramen later today to keep calories down. I've made some stock from 3 chicken carcases roasted and there are quite a lot of pickings to add to the ramen which should still keep both the carbs and the calories down. We'll see what happens.

@ziggy_w, I'm still trying to get an appointment to see the only doctor I know of who thinks there's something in low carbing. Meantime, I'm just doing my own thing which may, or may not, be leading to disaster!
 
I got up early today and had 1/2 almonds waffles with some butter and maple syrup washed down with black coffee for breakfast wasnt feeling that hungry. I had to get up early as I had an appointment in Sydney at the hospital to see my Gastroenterologist. I'm on new treatment so I'm being monitored at the moment and praying that it works I also have come down with a cold and feeling tired from it so hadn't prepared any food to take with me. After seeing my GI I was pickerish it was nearly 3pm but as had no homemade food on me I ended up buying a germany bread roll with pastrami cheese and salad to eat not much to choose from at that time of day and just wanted to go home my trip is 2 hours on the train and with my cold just wanted to get home. Dinner I had some homemade chicken soup but didn't eat any of the vegetables was only able to tolerate the broth. I also ate some chocolate I'm not happy about that but life goes on and tomorrow is another day. I blame it on my cold.
