What have you eaten today? (Low carb forum)

I can't get smoked haddock either - except the horrible bright yellow dyed stuff. Don't suppose the smoked mackerel is any better really, but for some reason, I do buy it.
We don't even have 'horrible bright yellow dyed stuff', and I'd be happy to try it. As for the mackerel, I'll simply buy a whole smoked mackerel, as these taste much better than the smoked fillets, and clean it at home. Half of it goes in my fish dish, the other half will be turned into a salad with chopped onions, mayonnaise and whatever else comes to mind while I'm busy.
On second thought, I may need to buy two mackerels, as half of it usually disappears in a mysterious way while cleaning it...

Has anyone else noticed that people are starting to ignore lockdown rules and social distancing? At the weekend my neighbours both sides (all on furlough) have had a steady stream of visitors. One side even had their hot tub and BBQ going. :banghead:.

Today... Bed time last night 6.7 and FBG this morning was 9.1 and I have no idea why!

Breakfast: the usual omelette with carb syrup syrup
Lunch: will be Actimel drink and a bit of cheese
Dinner: big field mushrooms stuffed with pesto and lots of mozzarella then baked on a bed of wilted spinach
 
At 11.30 I had my brunch - the "breakfast bake" from yesterday, with some cheddar cheese grated and melted over the top. I shouldn't have bothered - the cheap cheddar I have is pretty tasteless once melted.

I did have some of the chicken wings yesterday evening and I expect I shall have more later on today. The breakfast thing didn't keep me full for all that long yesterday so I cooked a whole pack of wings. I'll have some of them cold for my evening meal.

Think I have missed a couple of days
Usual lc toast and lots tea for brekkie
Saturday we had cold meat, cheese and salad for lunch.
In the evening had bbqd chicken mini fillets and two meaty sausages with Waldorf salad.

Yesterday same brekkie
Lunch was soft Brie from farm shop with a very thin slice sourdough for me and tomat & cucumber salad.
Supper was Lamb Keema with cauli rice.

@SlimLizzy so sorry to hear about the floods it must have been scary for you. Hope that you are ok.
 
Neil usually makes his own white bread - that way he can be sure there are no additives to trigger his allergies - but now we find we can't get white strong flour or yeast. He has about 1 kilo of flour left and half a tin of dried yeast. I just looked online but the bread flour available there costs a fortune! I do have a bag of white, soft flour and some SR flour which I was using for my baking and which I shan't be using meanwhile but it won't make the same bread. He'll have to experiment - he's an experimental cook as well - gets it from me.

Just spoke to DIL who told me that she heard Em singing, while washing her hands: "Happy birthday to me, happy birthday to I, it isn't my birthday, but I don't want to die!" I think she must have absorbed the message. Sad really - it's a bit like growing up under the shadow of the bomb.

I'm intending to try to smoke my own (supermarket quality) white fish in a biscuit tin, but don't have access to any wood shavings either - apart from some willow branches that Neil has cut down and I'm not sure they will be suitable. So I'm ordering wood chips (oak) from Amazon. Trouble is, they won't arrive until the end of the month. That's a long wait for someone as impatient as me.

Ann - At the moment, Amazon sometimes predicts a silly long delivery lead time, on items they consider non urgent. We had that last week with a light fitting which came in 2 days (on Prime) whereas the prediction/tracker was suggesting about the 20th.

My guess is they are ring fencing some delivery capacity for "essentials", then taking up that capacity if it isn't required.


Edited to add, YouTube has a gazillion videos on home smoking in all sort of containers.
Hopefully, you might find similarly.

I was going to buy a home smoker but I really wanted to try the DIY way and have 3 old biscuit tins to experiment with. I saw a video of Jamie Oliver using a biscuit tin and chicken wire which appealed to me. That's the way I want to try. If it all works well, I'll branch off in other directions. I am the kind of person who has hundreds of cookery books but never follows a recipe - preferring to make it up as I go along. I am actually very bad at following directions - again like Neil; we neither of us ever read instruction books but just work out the best way to do things to suit us. Irritating for other folk, I'm sure. Especially when they like a recipe and ask how it was made, because we really have no idea.

I did get hungry and had one of the chicken wings. Probably will have another one or two before night. BG is reasonable today - really trying hard to avoid any carbs. Thirsty today though, drinking plenty of tea and water.
 
Back to work today. Noticed just how often my mind wandered to eating - very interesting. Managed to resist any mindless trips to the fridge, but did eat twice.

Lunch was 2 fried eggs and 3 small rashers streaky bacon.

Dinner was an enormous pile of tiny lamb chops picked up on offer in Morrison’s at the weekend plus 3 small lamb ribs bought at the same time. All marinated in olive oil, lime juice, garlic and thyme. Delicious but created a huge amount of oil in the air fryer - @DCUKMod now see why a deeper drip tray might be necessary. @maglil55 noticed some condensation between the panels of glass on the door - have you had that?
 
@Annb I suggest you try and source Neil’s bread flour and yeast from some small independent mills in Scotland or even N Ireland. I struggled to get wholemeal flour for the last couple of months and in the end found what I wanted from a mill in Eire which was shipped in less than a week. I used Kells in Kilkenny and bought the wholemeal soda bread mix. I know in England Doves Farm Organics do a bread box daily containing flour and yeast so might be worth a look. But equally there might well be Scottish mills that could use the business.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and birthday cake phd
Late Lunch: 2 x Babybels followed by LC brownie, coffee chia pudding and LC chocolate granola.
Dinner: Ribs with mixed veggies followed by SF jelly, cream and vanilla and raspberry LC granola.
 
Black coffee and soda water this morning.
Lunch was chicken and veg soup made with yesterday’s leftovers. DGF blueberry& lemon drizzle cake with cup of tea afterwards.
Dinner fat head pizza thanks to an emergency delivery of almond flour (and Monkfruit sweetener) from a friend indeed. Topped with sour cream instead of tomato paste, with salami, mushrooms and extra mozzarella.
 
Bed 6.1 FBG 5.8 yesterday. A strange day. I felt pretty much OK apart from an odd turn early afternoon. I got very stuffy, started to sweat, Hubby was cooking sausages and a wave of nausea swept over me. I had to go and lie down. 30 mins later I was fine!

We've been living together for 12 years now, so he has been exposed to my views on the white gunk-like Frankenfood that Is known as Elmlea.
Anyway, he declared that he would use it up in his coffee, but after doing so pulled a face and tipped it down the sink.

She is clever in many ways - an extrovert version of her uncle Neil.
Finished off the chicken wings in fits and starts this evening - kept thinking "that's it, shan't have any more" but then going back for another one and another one. And suddenly, they were all gone!
Just took the second rib steak out of the freezer for tomorrow.

Breakfast: usual 2 CWC, 2x nut granola.
Lunch: salad. Galette with smoked salmon and cream cheese . Remembered to check BG before lunch 5 3. One hour 7.0. Two hours 6.1. Three hours 5.7. Perhaps if I had been a bit more active might have got better numbers, a little digging perhaps. There is one more galette left, but that will be ham and cheese filling.
Dinner. Moussaka, green beans , brocolli. Water, wine.
Snack several chunks of cheese.

Isn’t it awful stuff? Same thing happened here a year or so ago - just once, I think everyone is still traumatised by my reaction to the sight of it in my fridge.
 
Sooooo tired! We had a power cut from 00.13 to 01.24 - should have been okay but numerous burglar alarms going off kept us awake then, when the power finally came back on, one of the burglar alarms (don't know who's) wouldn't permanently turn off and intermittently blared out on and off for another four hours. Good job we couldn't work out where it was coming from..... finally gave up trying to sleep and got up to read - went back to bed when whoever it was had managed to fix their alarm (about 5am) then the dustbin men turned up at 7.30 so decided to get up to start the day and now I'm starving! FBG was 9.3!!! Might have a nap later.

Had some raspberries and cream for breakfast, which put BG up by 1.4 - more than I would like when there was so little of it. Feeling a bit off today, so maybe the reading is skewed a bit.

Currently prepping broccoli cut into spears for meal later on and also some Brussels sprouts - blanching them and will grill some of the broccoli with my steak and fry the sprouts in butter with some chili. The steak is a big one so it should keep me going.

Waiting for No 2 son to arrive with post, if there is some. My last little drop of milk has gone off so I'll need to get him to get me some more when he finishes his work. Next shopping will not be until Friday.

What a horrible night you had. I get irritated enough when a power cut makes my answerphone play up. Suspect I may have been a lot more bad tempered than you seem to have been, in your situation. You not only deserve, but must need a nap!

I've now reached the stage of rendering down the thick pieces of fat from the beef so that I can add some butter and fry off the Brussels sprouts. With all the prep done, I am itching to get started cooking but I shouldn't be eating until much later, so I will just have to contain myself. At least I have some milk now - elder (much older) granddaughter left it in the porch and ran off.
