What have you eaten today? (Low carb forum)

I don’t really use alcohol in cooking as daughter can’t have it, and the yoghurt instead of cream was to try and prioritise protein over fat which I’m trying to do at the moment.
My Latest IP yoghurt is made with UHT skimmed milk, and after straining half the volume of whey off I reckon I have double the protein content but with minimal fat and carbs. It’s not as nice as the ff type really, but good for dressings.

I make 2ltrs of yoghurt at a time - 1ltr semi-skimmed + 1ltr full fat milk. I like it that way. I find full fat a bit too rich in the mornings, and fully semi-skimmed tastes a bit "thin".

That’s a good idea, I could experiment with mixing the skimmed and ss except I can’t fit the IP inner pot in my fridge. I have to make it in smaller batches. I use a small metal bowl inside, I think it might have been you who flagged up when they were on offer at Lidl - such a useful set of bowls.
 
Yesterday:

Three egg omelette with a sprinkling of cheese and three butchers sausages
Lunch: Leftover lamb chop with a small salad, pickled sundries, cheese coleslaw, a portion of homemade carrot cake (low carb, alas it was far too dry - the rest will go nicely with some yoghurt today) and some yoghurt & fruit.
Dinner: I was far too busy dropping step-son off at activities and meetings so had a salad, tuna tin and an Atkins bar (quite nice, but a bit too chocolately for me)

You could also try adding a spoonful (I use 3 in 2ltrs) of milk powder to your mix, at the start. I also find that helps thicken it. I don't strain, so get a full 2ltr from each batch.

(Milk powder tends to be skimmed milk, so you wouldn't be adding any fat, although full fat milk powder is available, even if I've never seen it locally here.)

Glad my enabler qualities have come in useful. :)
 
Breakfast: bacon and egg. Managed to break one egg as I cracked it into the pan! *!*! Hate doing that.

Checked my average BG levels over the last week and it is down in the mornings from 12.8 to 8.5. Can't be bad. So something is working.

Lunch: will be out - no idea what it will be but my friend did ask what she should avoid. "Any carbs", of course. So she just won't give me any potatoes, she says. Fine by me.

Evening: I didn't eat many of the roasted vegs yesterday so I've added to them and added some veg stock from the freezer to make some soup. So, If I do need something else by then, it's ready to go.
 
Meal 1 was a tin of salmon some sauerkraut and lettuce in a SLC roll. Haven’t had canned salmon for years - I had cravings for the bones in it during one of my pregnancies, I didn’t eat the fish so husband got mightily fed up with salmon sandwiches for lunch. I went through tonnes of it. Handful of almonds afterwards.
Meal 2 Cobb salad with chicken, bacon, Hb egg, blue cheese red pepper and spinach. Choc chia pud to follow.
@AndBreathe the yoghurt straining is more to reduce carbs than to thicken it, and of course Dennis loves the frozen whey lollies!

Breakfast: Three butcher's sausages & three egg omelette (with a spoon of cream cheese as an experiment)

Snacks: Didn't eat enough last night, and ate breakfast a bit early, so had pork scratchings, two squares of 75% Lindt and a no sugar jelly (think the chocolate has repeated on me since).

Late Lunch: Tomato and cheese salad, tin of sardines in tomato sauce followed by the rest of the carrot cake mix with yoghurt.

Dinner: Tandoori mixed grill, mushroom bhaji and half a naan bread as a treat.
 
The Covid story here has developed further, hubby got ill so took a test and has covid :( He’s had 2 doses of vaccine and so far, he’s not too bad at all. We’ve banished him to our bedroom upstairs and I’ll be on the sofa bed downstairs!
I teased him that I’ll only bring him pizza or toast and anything else flat that I can slide under the door! :joyful:
Anyway, back on topic:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and raspberry Carb Killa bar.
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Dinner: chicken drum sticks with salad and coleslaw followed by SF orange jelly, cream and LC chocolate and ginger granola.

Just had a pick through the fridge, bit of cheese, couple of cherry tomatoes, rest of the dragon fruit, Chobani Fit Vanilla Greek Yoghurt that @muzza3 put me onto the other day for lunch.
Rib fillet steak, mushrooms, onions and tomatoes for dinner.

Lunch was slow cooked lamb in an Iranian style. It was very tasty. Before eating, I was told that the vegetables were cabbage and Brussels sprouts but that the potatoes had been cooked in the dish along with the veg and lamb. So, I estimated the amount of insulin to take and went ahead - only to find that the (new) potatoes were in their skins and hadn't lost any starch into the sauce and that the cabbage and sprouts were a tiny amount (enough for one portion between 5 of us!). So I got the dose wrong and on the way home BG dropped down to 3.2. For me that's very low. Luckily, I wasn't driving but by the time I got home, I was shaking and sweating. Quick fix with a bag of crisps. Then, feeling really ill, went to bed for the rest of the afternoon. OK now.

Alright Muzza, I have always like vanilla yoghurt so this one is pretty good I am chasing the protein at the moment so 15% a pot is great, I can make the fat up with some cheese or whatever as it's a bit low.

Price is right at the moment as well. :D

That low carb pizza looked great. I had a Good/Bad night last night at my Brother in Laws 64th birthday. 4 pieces of Turkish Pide, Cheesecake and 4 glasses of red. Just counting the macros now and up to 264g of carbs. Hope I have got that out of my system for a while. Great news though was a fbg of 4.8 this morning
 
The "feeling awful" returned during the night so Igot up, took some cocodamol and sat for a while but didn't even enjoy the late night TV. Eventually went back to bed and slept in until 7 o'clock; then got up and fell asleep again in the chair. Eventually roused myself to get washed and dressed and have breakfast. BG at that point 12.1.

Breakfast: bacon and eggs. I'm hoping that that will keep me going for much of the day.

Any other food required will be in the form of one or other of the 2 soups I have ready - 1: mushroom or 2: mixed green veg and cauliflower.
 
I made a big pot of soup yesterday, a creamy cheesy leek soup with minced meat, very nice. And then I forgot to put it in the fridge. :banghead:
I expect I'll survive eating it today, but not sure I'll dare eating it tomorrow still. It was 17 degrees in the kitchen tonight.

I figured I wouldn't have much time to cook after coming home today late afternoon; I'm going to pick up a bunny as a friend for my lonely bunny. The bunny lives very close to the place where I always get my guinea pigs, almost an hour away, so I thought I could get some more of them too, being in the area.
I currently have 11 piggies, 14 is the perfect amount for some unknown reason, so if I get 4 or 5 I should be good for the next year at least :)

But it looks like I'll need to do some repairs to the rabbit pen first: late last night two friendly ladies knocked on my door with my bunny in their arms, it had been hopping on the road!

So you see, the soup had better not have gone off tonight.
 
So back to Thursday which was my birthday but no celebrations due to one son ill with Covid and the other self isolating for unrelated reason. However Mr PM insisted on treating me to lunch at the pub. I just had a starter of smoked salmon & Prawn cocktail which they turned into a small bowl with extra salad and Marie Rose sauce separately. They have one elderly server who totally “gets” my needs and looks out for me.
In the evening I just had a toddler meal of two fishfingers and one tenderstem of broccoli. A few glasses of Cremant. Still awful FBG yesterday.
Yesterday we went to the coast and had a walk then picnic lunch on the beach of rollitos, a chicken leg and a few strawberries. Very nice listening to the waves on the pebbles. Yesterday evening had a tomato & basil omelette preceded by two white peach gins & soda, still not enough or too much to give me better FBG today.
Lunch today was one slice HiLo toast piled high with chicken liver pate, cup of tea and 2 squares dark choc. This evening will be Thai t/a of stirfried chicken with ginger & spring onion and a side of Pak Choi.
@Antje77 if only the GPs and bunnies liked soup it would solve the problem. I am relieved I am not the only one that gets distracted!

A fishy day for me today:
1-Tinned salmon in SLC roll followed by 25g 100% cchocolate ( 6 bags Montezumas absolute black arrived today, I’m going to have to hide them from myself)
2- Wonderful local hake with the chorizo crumble topping and some baked mushrooms, peppers and aubergine. Then choc chia pud
@Riva_Roxaban I’ve seen that bacon weave pizza too but never tried it, be sure to show us a photo if you make it.
