I don’t really use alcohol in cooking as daughter can’t have it, and the yoghurt instead of cream was to try and prioritise protein over fat which I’m trying to do at the moment.
My Latest IP yoghurt is made with UHT skimmed milk, and after straining half the volume of whey off I reckon I have double the protein content but with minimal fat and carbs. It’s not as nice as the ff type really, but good for dressings.
I make 2ltrs of yoghurt at a time - 1ltr semi-skimmed + 1ltr full fat milk. I like it that way. I find full fat a bit too rich in the mornings, and fully semi-skimmed tastes a bit "thin".
