What have you eaten today? (Low carb forum)

@Annb sorry your plans didn't work out a real shame when you've gone to such an effort
@Grace04 're kefir yes make my own with organic kefir grains and organic whole milk - it goes quite thick and when mixed with seeds thickens it more - I mix some with seeds and put back in fridge overnight ready for morning and it tends to thicken it nicely.if not in production as been away for example I tend to buy kefir yoghurt such as Waitrose's own gut health variety.
Dinner
Two days to report on
Breakfast both days hm kefir with shelled hemp seeds
Lunchtime both days two fried eggs with slice of LC toast and a few squares of 100% chocolate
Dinner Saturday lamb curry and LC roti
Sunday cold roast chicken and salad
Both days glass of red wine and puddings a few strawberries and yoghurt.
My garden strawberries are almost over but notice my raspberries are starting to ripen and these are definitely my fave berries.
Thank you Shelley. I think I might go back to making it. At the moment I’m making chia seed pudding for breakfast but I think it’s probably a bit higher in carbs.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and DGF lemon cookie.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!
I don’t usually post a pic of Sunday tea, I think my ILs would think I’m mad photographing my tea! However I sneaked a pic of my infamous Jaffa cake, 8.5g carb each with an otherwise virtually carb free meal barely nudges my blood sugar! :hungry:

Morning all. I was really good with salad and chicken drumsticks and hard-boiled egg until they brought out the cakes. I wish someone would teach me how to say NO with my mouth when my mind says YES please!! So I had 2 of Mr Kiplings almond slices. And I can't test my bs because I've left my monitor at my friend's house. It's pensioners lunch today so I'm taking strawberries and cream for dessert instead of the 2 crackers with cheese. Hve a happy day folks :joyful:
 
Morning All
So yesterday
Brekkie was usual slice LC toast, butter, copious tea.
Lunch was two slices ham, chopped salad, spoon coleslaw.
Supper was early evening bbq meat, sausage, beef burger, small bit chicken and thin slice of pork. Too hot to be bothered with any accompaniments other than a spoon of Stokes ketchup which I discovered when in Suffolk and found it a very superior product. I have bought the Reduced sugar version which tastes the same as the original. This is odd because I have never bothered with ketchup before though the boys went through vats of Heinz when they were young!
Today
Brekkie the same.
Lunch will be small piece of bacon & cheese quiche with chopped salad (leaves, two cherry tomatoes (h/g great flavour) and cucumber.
Supper will be bbq leftover meat with salad and/or roasted asparagus.
@shelley262 I hope you saw I give a good report on the Sainsburys B Free high protein wraps (4g each) which will be useful occasionally for chicken fajitas. Two was quite filling and just felt normal.
 
This morning I baked 2 batches of my legendary cheese scones. MrB described his sample as flippin' excellent. BiL will be pleased with his gift.
On the upside, I had some grated cheddar left over when I had dressed the uncooked scones, so that became my treat of a couple of cheese crisps.

Yay! Win all round.
 
I am feeling quite proud of myself at the moment - when my guests didn't arrive I put all the shortbread and all the oatcakes into boxes and sat them on the kitchen table for Alistair to pick up today. A bit tempted to have some shortbread, but I desisted. I find that, although they are sitting there on the table and I can see them all the time, because I have put them in boxes and allocated them to Em's family, I can, fairly easily, ignore them. They have been shut away. They do not exist. Must see if I can trick myself in similar ways with other no no's.
 
How do you fix your spinach?

It looks as though you've replied to a poster who hasn't been seen on the forum for some 3 years.

The way I poach egg(s) on a bed of spinach is quick and easy. Rinse the spinach. No need to remove the stalks. Choose a pan with a lid. Heat the butter (or olive oil if preferred). Cook your spinach with a grating of nutmeg, salt and black pepper over low heat for about a minute or until wilted. Top with softly poached eggs and season with a grinding or two of black pepper.
 
Has there been any news of Riva_Roxaban?
Good thought Ann. Anyone know? Such a stalwart of this thread and his love of a night cap.
He was last seen on the forum in late februari. His last post was in late januari.

We had some good conversations throughout his illness through PM too.

Let's all drink one on Riva, I'm pretty sure he'd like that!
 
Evening all

B: Two poached eggs topped with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Caerphilly.
Water to swallow tablets
Espresso.

L: Baked whole sea bass, belly stuffed with lemon verbena and garlic, drizzled with olive oil and accompanied by asparagus spears with butter, garlic mushrooms and a medley of broccoli, leeks, and red peppers.
Skipped pudding,
Water to drink.

D: Seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions and mustard cress, with a dollop of aioli for dipping and topped with toasted pumpkin seeds.
Water to swallow tablets.

Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a carb killa bar.
Dinner: low carb cauliflower cheese with Brussels, broccoli and carrots.
