What have you eaten today? (Low carb forum)

B kefir with hemp seeds and a few garden berries
Mid am had a delivery of LC bakery goods from DGF including their newish gluten free keto bread rolls got bulk into freezer but kept out a few bits for next few days.
L two boiled eggs ( still working on my short date eggs!) and one of my new keto rolls I'm enjoying them they are very seedy and substantial they taste quite rustic\home made. Afterwards a few squares of 100% chocolate
D ACV in water then pulled pork, salad and LC roti with glass of red wine then a LC cake and decaffeinated coffee.
 
The soup looks lovely @nutribolt and I like the name!
My food today:
B- scrambled eggs on protein bread toast.
L- ham and avocado with salad veg mixed with h/m mayo and a sprinkling of lemon pepper! @AndBreathe it arrived yesterday and I can see I will be adding it to all sorts of dishes. It was great with the mayo. Montezuma’s absolute black and some macadamias.
D- had some minute steak, onions, mushrooms and peppers, didn’t fancy a Chinese style stir fry so flash fried in dripping and melted in some blue cheese at the end. It was like the filling of a steak and Stilton pie. (Tender stem broccoli past it’s best with it). 2 glasses red. IMG_3016.jpg
 
Woke far too early but managed to have only mint tea until 10 when I had ff greek with seeds and strawberries and some leftover frittata

12ish an iced black coffee, asked for cream on the side, but they poured it from an Elmlea pot!!! So left it
Watched hubby eat cake

D: cabbage and carrots fried with bacon, served with cheese grated on. I had feta and stilton. Boys had theirs on toast with feta and cheddar. Ons shot malt whisky on 1 ice cube.

Not feeling quite so rough today. Maybe the antibiotics are working, but still unsure what or where the infection is, sinuses maybe.

Evening all

Today friends, one of whom is type 2 diabetic, joined us for lunch.

B: Two poached eggs with a knob of butter, slices of avocado and tiger prawns seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Melanzane alla parmigiana, (aka aubergine parmigiana) using aubergine slices without breading or flour, passata, mozzarella, Parmesan, olive oil, oregano, garlic and seaonings. I tossed some breadcrumbs with a little olive oil plus grated Parmesan and sprinkled on top before baking. (That way, I could serve the topping to those who can handle breadcrumbs, but omit the topping from my own portion and finish with extra Parmesan instead.) Basil, IMHO, works best torn on to the dish at the last minute.
Salad made with watercress, chicory, Romano peppers, radishes, salad onions, basil and black olives, dressed with an olive oil, basil and balsamic vinaigrette and topped with toasted pistachios.
Skipped pud.
Water to drink.

D: Seafood salad made with crevettes, lettuce, fennel, cherry tomatoes, celery and salad onions with a dollop of homemade mayonnaise for dipping, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb killa bar.

Wednesday 12 July - bed 7.9 FBG 7.2 @Annb - it really is ridiculous that there is no MRI in Stornaway at least. The hoops you have to jump through for care are a joke. @DJC3- the road works around here are incredible. I thought I had them all sussed, but they sneaked a large 3 way control on a very busy stretch. Today, I had the eldest most of the day, then I had to nip to their house as DIL was working and son's band had a wedding to play at!

B. TAG and 1 slice of SRSLY toast with coronation chicken. Benecol dairy free. Then, I picked up eldest, and he helped me with shopping.

L. A bit of crustless quiche

D. By the time I got back from son's house, I couldn't be bothered doing too much so I took 2 slices of SRSLY bread, formed a wall with bacon, cracked an egg in the middle, then airfry for 10 mins at 170°. Surprisingly, the yolk was still soft. Hubby saw it on YouTube, and I thought it looked interesting. CC little chocolate pot. I am currently enjoying a gin and zero lemonade.

Problem is that an MRI scanner would cost millions and then there are the operating costs and building a room suitable for the strong magnetism onto the radiology department. Then extra staff would probably be needed to work it. On the other hand, each person who flies to Glasgow costs the Health Board at least £500 - that's for one patient who can travel alone and whose appointment allows travel to and from in one day. Our family has cost the Health Board £2000 in the last 3 weeks - that's eldest granddaughter, DIL and me. No idea how many other people have to be flown to Glasgow for investigation or treatment. It must amount to a fair sized budget.

DIL's coffee-walnut cake is baked, but not finished. They were stopping in Stornoway for an hour or so to sort through a big suitcase of clothes I had handed over, so went directly home after that. I'll finish it tomorrow and Al can take it then.

More baking to do tomorrow for visitors on Friday. Still trying to find recipes suitable for the T2 lady with an odd diet. Oatcakes are a given - she expects them now. Bits and pieces to go with them - Neil will have to get them tomorrow. Also need to make some mayo - same lady refuses to eat anything commercially produced - since there may well be a platter of salady things. Other things as well for others who don't want oats.

Oh, please give it a try!
Odd combinations can work out very well. My inebriated friend once tried cubes of Gouda cheese in a chocolate fountain at a small festival, and in no time everyone was buying cheese cubes at the one stall to combine with the chocolate fountain stall right next to it! It was pretty tasty too (and before diabetes).
And they're finally airing last years GBBO episodes here, and I had a good laugh over Noel liking the cherry with paprika yesterday!

I've been eating an onion mash with cauliflower instead of potato and boiled onions, slowly fried onions, and spring onions with a jalapeno burger today and yesterday.
In a couple of weeks, my stint as a moderator will come to an end, and I expect to be a more regular poster on this thread from then on. :joyful:

This does sound interesting but I’m not sure I understand the construction aspect. Could you post a picture or a link?
 
Coincidentally, on a travel programme tonight ,the presenter (Greg Wallace) was making a personalised choclate bar and he added quite a bit of black pepper to the chocolate. Apparently it adds a zingy graininess.

I might give it a try as I miss flavours in dark chocolate

I'll see if I can find the youtube item again. You basically wrap the bacon into an oval to form a wall on the bread. I think streaky bacon might be easier as you have to ensure there are no escape areas in the "wall" where the egg white can escape. Other option would be a SRSLY seeded roll as that would have a natural hollow.

Always interesting combos on here but I’m such a lazy cook! Been meaning to say @LivingLightly yours always reads like a restaurant menu I’d like to go to. Thanks for the aubergine idea which I fancy.
@Annb your visitors needs sound a bit cranky to me, good luck with it all.
So yesterday woke early with a horrible tummy upset so got by to evening on a slice of LC toast and two cups of tea. Lucky for me supper was a chicken & mushroom casserole thing I had made the day before so just needed heating up to go with rice/cauli rice. Was bland and suited me. Much more like me today.
Brekkie usual slice LC toast, butter, copious tea.
Lunch am out to pub with elderly friend so will have to see what I can find, just a starter maybe.
Supper will chunky cod fingers and very last of local asparagus.

The most cranky one is the T2 lady - chronologically she's younger than me by a few months but she seems even older. O dpn't mind catering for her odd ideas. She probably thinks I have some odd ideas as well. Besides, oatcakes are so simple to make. They are in the oven right now. Intending to make some banana/oat muffins for her as well. Some scones and maybe pancakes for everyone else along with a chopped salad and h/m mayo. DIL's coffee/walnut cake is finished and packed up for Alistair to take when he comes with the post. I prabably shan't see him - I have top go to Stornoway to get my legs rebandaged.

Sorry to hear your tummy has been giving you trouble. I hope it sorts itself out soon - maybe the fish will help - Neil finds some fish can help when his Crohn's flares up despite him being vegetarian most of the time.

Time for breakfast so I'll scramble a couple of eggs with cream. That'll keep me going - possibly for the rest of the day.

If I need more, there are still sausages and green veg left from yesterday.
