Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Sweet peppers, stuffed with feta cheese, eggs, Kalamata olives, chopped mint and baked until golden on top.
Salad using chicory, sweet cicely, Romano peppers, radishes and salad onions, dressed with an olive oil, oregano and balsamic vinaigrette and topped with roasted macadamia nuts.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, mussels, lettuce, cherry toms, celery and Welsh onions dressed with olive oil and a squeeze of lemon juice, parsley and garlic, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

I went with the funny one because it did make me laugh out loud, and happy memories make me smile as well, even if they're touched with grief.
I find it comforting that Goonergal is still mentioned on this thread, she's still a part of our community.

Going to try to make up for yesterdays sacrilege by having a go at a low carb wrap turned pizza again, this time hopefully without dropping it!
Just give me a minute to make the piece of watermelon I just had do its job nudging my BG up a little so I can assemble my pizza.
The watermelon was a gift from my cleaner as a thank you for housing her two guinea pigs during her holiday. The guinea pigs already had a piece this morning so I could decadently treat my hypo with a piece from the juicy middle, leaving the sides for the guinea pigs. :hungry:

Monday 14 August - bed 7.9 FBG 6.7. Another miserable night. I think I overdid the boots. Muscles in both legs were solid, and it took me ages to loosen them. Even worse, the same solid tightness surrounded both ankles, which made it nigh on impossible to walk. At least the pins and needles have gone, but there are signs of inflammation in the right foot. I'll give it a couple of days, but if it's still the same, I reckon I'll have to try to get a GP appointment.

B. TAG and a bacon/egg sandwich with 2 slices of SRSLY bread. Benecol dairy free.

L. Nothing

D. Hubby found salt and pepper squid in the freezer, which I had with salad. CC Little chocolate pot with 3 raspberries. Moretti Zero later, when I felt a little better.

I am just waiting for one with wheels on the front to be delivered from Amazon. I'd already ordered it before my feet and ankles started playing up because my walking was getting a bit more unsteady. I'm thinking the same way about getting a GP appointment because I still can't get rid of the pain, particularly in my left foot and ankle - not even resting works.

Liking the look of that squid.

Tuesday 15 August - bed 7.9 FBG 7 4. @Annb, my left leg has returned to what is "normal" for my legs. The right leg/foot is still not good. I'm fine standing. The issue is walking. My "bad" leg was always the left, so I have a collection of right-hand crutches. Now that the right leg is the issue, I'm trying to use a RH crutch on the left, which is a bit "off," and feels weird. I ventured out to my son tonight to deliver the boxes of labelled school clothes. It was a struggle to get from the car to the house when I got home. I'm hoping it's a lot better tomorrow.

B. Just TAG and a Benecol dairy free. I was feeling a bit queasy.

L. Hubby insisted I have a bit of crustless quiche.

D. Some tuna and corn in mayo, 2 slices of SRSLY toast with benecol spread, a cheese triangle, and some of the tiny tomatoes. CC little chocolate pot.

Lots of water and paracetamol. I hope the zimmer helps. It was great for support, but it took an age to get things done. That was until they gave me a caddy that clipped on the front that allowed you to transport things.

Late breakfast was 3 small back bacon rashers with two eggs, was ravenous after taking our dog for a longer walk than usual. Noticed BG was higher than the 'dawn phenomenon' despite only having a glass of water since waking.

Dinner, gammon steak, sautéed cauli rice in olive oil and butter, French green beans, creamed mushrooms. Could only eat half of the steak, the other half is saved for a snack tomorrow.

Total net carbs 16g.

@Antje77 the second pizza looks delicious. I think Goonergal would have enjoyed her plate being centre stage of the pizza catastrophe the first time.
@maglil55 and @Annb so sorry to read you are both still suffering with gammy legs, it makes life so difficult ( and painful) I know from personal experience.
Today I had black coffee until an early lunch of scrambled eggs and cheese on lc toast followed by the last of the blackberry clafoutis.
Dinner was grilled plaice and red pepper, fried mushrooms, steamed broccoli and h/m mayo mixed with lemon pepper. 1 glass dry white wine.

A really nice sunny long dog walk along the beach
1 iced coffee
L: 2 cold sausages, cucumber radishes, manchego, mayo. 85% chocolate
Another shorter dog walk
D: 1 sausage as appetiser, 3 oysters, hake, portobello mushrooms.
Later 1 glass red wine

Not wishing to derail the thread, but this is one of my favourite quotes, relating to loss:

It seems about right for many and few.

Anyway, last night's slow cooked lamb shoulder cold cuts were magnificent. Not my favourite meat for cold cuts, but the slow roasting really did keep all it's best properties.

Couple of rashers of bacon and one egg for breakfast

To celebrate the Lionesses victory I had a gin and slimline tonic and a bag of pork scratchings.

Dinner was smoked salmon and cream cheese.

A new low for me as carbs came in under 6g carbs. Tomorrow I'll make up for my lack of vegetables by making a nice veg soup (need to tidy up the fridge). It'll be interesting what the 'dawn phenomenon' does.

1 Ensure plus drink
1 lemon jelly
For lunch at 13:00


My wake up was 5.6

4 hours later before dinner (18::00 hrs) above it had jumped to 12.0

I was told only to test when I awake and before my 18:00 hours dinner.

Am I doing something wrong please ie what eat for lunch or when I test 4 hours later (most of what I’ve seen on here and booklets given say should be under 11 after 2 hours after a meal)

Thank you! Totally confused newbie who is determined this must be easier :))

Hi @jomar_uk welcome to this low carb thread. I didn't know what ensure was but just checked it out think it's 47g of carbs for a small pot? With the mashed potatoes that would have been quite a few carbs in one go for your body to deal with.
Presume you are taking ensure to add particular nutrition quickly but wonder if a different lower carb way of doing it? Maybe supplements? Are you trying to gain weight and to improve another condition as well as reducing sugar? If you need more fat to fill you and gain weight think about introducing more ways with your food e.g. Keeping the skins on your chicken thighs cooking them in olive oil and serving in a butter and cream sauce?
Testing is best two hours after eating wonder if it was higher then! Potatoes generally but especially mashed often cause rises for many. I can eat a couple of small new potatoes if they have been cooked in advance, chilled and frozen and then cooked from frozen in olive oil otherwise they are out for me.

@CathyN welcome to this low carb thread are you testing to check impact of your meals to work out the level of carbs that suit your blood glucose levels and the type of food you can tolerate? Unfortunately I can't include oat base products apart from oat fibre.
Today's food black coffee until
1ish hm hummus stick of celery, two garden plum tomatoes and two radishes and kimchi with a bit of soft blue cheese then a few berries with yoghurt and two squares of 100% chocolate
5ish sea bass with garden green beans and cauliflower cheese with glass of dry white wine followed by a low carb brownie.

My kitchen faces north so stays cool most of the Summer. That said, I changed today's plans to avoid additional heat and humidity in the run-up to lunch.

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado plus a wedge of Gorwydd Caerphilly, seasoned with a grinding or two of black pepper.
Water to swallow tablets.
Espresso.

L: Salad using salmon fillets poached first thing with black peppercorns, salad onions and lemon juice, then refrigerated.
For lunch, combined with watercress, avocado, cherry toms, radishes and sweet cicely, dressed with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almonds.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns, mussels, lettuce, Romano peppers, Welsh onions, Kalamata olives and mustard cress, with a dollop of aioli for dipping, topped with toasted pumpkin seeds.
Water to swallow tablets.

Been away for an overnight Spa break with my daughter, late birthday treat, so I won’t list all the food there, they were very accommodating so I’ll just post pics.
Only ate half of the burger bun!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa.
Dinner: chicken Balti curry and cauliflower rice.

Welcome @jomar_uk. I agree with @shelley262. I had no idea what Ensure Plus is, but I see hospitals use it for building you up after illness. 22g sugars, and 48g carbs in one drink? As @shelley262 said, mashed potato would be a big contributing factor too. Was your jelly sugar free? I know that these 3 things would have had my BGs shooting up.

There are alternatives if you like them. Cauliflower and celeriac are very versatile. I've made mash from both. Celeriac, you can pretty much treat the same as potatoes, in that almost anything you can make with a potato you can also make with celeriac. They are a lot lower in carbs as well. Your morning reading was great BTW.

There are loads of low carb websites. Diet Doctor is a good one. There is a free section as well as the paying section.

9:00 1 cold sausage

11: 00 2 poached eggs, smoked salmon, 1 grilled tomato 1 small slice sourdough bread that was mostly air. Hollandaise sauce
Mid afternoon, a couple of sqs 85% choc.
18:00 2 bratwurst. Tenderstem broccoli and courgette finished by stirring through a large dollop of cream cheese and a teaspoon grain mustard.
