What have you eaten today? (Low carb forum)

Coffee and cream x 2
Coffee and unsweetened almond milk
Feta cheese, tomato, 1/2 green pepper

Mini Meatballs, tomato, onion and a pile of green beans steamed.
 
A diabetic nurse that doesn't produce the dreaded plate! Congratulations on having a nurse who recommended low carb. Your weight loss will help you, as does exercise of any description. I'm not surprised a meter was not mentioned. Mostly, they're not keen to dish them out to T2s. A lot of us just self fund.
Your food looks fine. I couldn't eat a whole apple. About a slice is the most. Berries are the favoured fruits for low carbers.

Still a lot to learn but genrally I am adapting to the change of diet/lifestyle. Its definitely a bonus that my wife is cutting back carbs eating the same main meals as me.. She is not diabetic but still losing weight and definitely feeling better for reducing carbs.
 
10ish two boiled eggs with buttered keto roll also had one shred of Seville orange peel fished out from a jar of marmalade bought a few weeks ago for my OH at a local church WI sale. It was lovely and bitter sweet with a wonderful concentrated orange zing. Sometimes just a tiny bit of an intense flavour can help if it doesn't trigger you to have more.
1ish one slice of low carb fruit bread toasted then four berries from garden(they are definitely just about over) with yoghurt and two squares of 90% chocolate
5ish left over cold chicken with salad including some of few remaining garden tomatoes plus sauerkraut with turmeric and beetroot kimchi. @DJC3 I'm working on upping my ferments but realised that probably won't be able to complete the Zoe ferments study that starts next week as away on holiday right in middle week from 14th. We are half board in a Croatian island hotel and won't be able to increase fermented food unless it's offered I may start and then see! Pudding LC brownie

@RosemaryJackson good to see you back. Just remember that any LC change will help to bring your bgs lower. Any degree of lowering will be beneficial - it's not all or nothing. Hope Dr can help you to find a way to manage your health in a way that you are comfortable with . Thinking of you.

FBG was 6.5 after a month in mid 5s on carnivore. I’m trying to find this interesting rather than downright disappointing!
I forgot to say that daughter is continuing with carni - her psoriasis is markedly better after just 1 month, it’s quite incredible. I’d recommend anyone with an autoimmune condition to consider it.
First thing- chuckling Goat kefir
Breakfast 10ish was boiled eggs and Edam crackers.
Lunch 2ish - cold venison with sauerkraut and butter mayo mixed with hot sauce.
Dinner 6ish- cobbled together some kofta style meatballs ( added spices to hogget mince) and some salad veg. Followed by DGF cake and the last dollop of mascarpone. I have 2 cakes left and I’m not going to buy more when they’re gone!
@shelley262 it’s a shame you might not manage the 3rd week of the ferments study but your holiday to Croatia will be well worth it, and they say it won’t matter if you miss some.
@maglil55 thanks for your tips on your shedded sprout recipe. I’ve sautéed in butter often but adding the pancetta and pine nuts would make it appeal to even the sprout haters I think.
@derekhansen it’s great that your wife is also joining you in your low carb lifestyle, it’s always easier with 2.

elevensies - White chocolate salted peanut grenade bar (very addictive) another mug of earl grey

Dinner - Avocado with prawns in garlic, chilli & coriander. Salmon wrapped in a dgf low carb wrap with a smidge of nandos chilli jam. Kefir with mixed berries. Can of coke zero

@shelley262 & @DJC3 I tried kimchi & sauerkraut for way of good gut bacteria but it seems to have had the opposite effect on my tummy and I have got back ibs which hasn't bothered me in years! Have you found these have been fine on your tummies or have they upset them at all? I have been taking kefir for a while and that seems to be fine ...
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: bacon melts, Brussels and green beans.

Evening all

B: Two poached eggs topped with a knob of butter, slices of avocado and crevettes seasoned with black pepper.
Water to swallow tablets
Espresso.

L: Baked halloumi and sweet red peppers,
Hummus with Kalamata olives.
Salad using cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a touch of lemon juice and topped with toasted sesame seeds.
Water to drink.
Skipped pud.

D: Seafood salad made with tiger prawns, kalamari, lettuce, sweet cicely, vine tomatoes, celery, Romano peppers and salad onions dressed with olive oil and a squeeze of lemon juice, parsley and garlic, topped with toasted almonds.
Water to swallow tablets.

I do like nursery eggs!
 
Late breakfast of 2 rashers back bacon, one egg scrambled with cream, half large tomato sliced and sauteed. Followed by coffee with cream.

G&T

Early dinner of slow cooked beef stew, topped with a mix of steamed swede and sauteed cauli rice, then baked like a shepherds pie.

2 squares 90% chocolate.

Carbs 23.9g

BG has taken a tumble this week for some reason, before dinner it was 4.4, one hour after dinner 4.9, 2 hours later and after chocolate it was 5 BG. Feels a bit weird.

're kimchi and sauerkraut think it can cause problems for some but luckily I've built up my gut bacteria over several months - just a very small amount to start out and building it up. It may be that you need to build it very very slowly. Are you okay with cabbage and cruciferous veggies that are non cultured? If not you could just start by having a small amount of the juice from the cultured veggies before introducing small bits of the vegetables if it's the type of vegetables used. We all have different reactions to many things but my gut has definitely healed over the past 6 years via LC eating and now introducing ferments. You need to do what's right for your body.
 
Monday 3 October - bed 7.3 FBG 7. Escorted Hubby to the doctor for his follow-up. Everything is going along nicely, but he's back next week for bloods again. They want a fasting sample. I'm busy with maths revision with grandson, too, as he has his first assessment for this year next week.

B. TAG and LC granola with sugar-free coconut milk and raspberries.

L. That mix of salami, chorizo, scramoza, cheese triangle, and a slice of SRSLY toast with spread. Benecol dairy free.

D. Leftover fish pie but with more samphire, cauli, and salmon added. CC little salted caramel pot and a raspberry!

@DJC3 I'm busily arranging things around Bake Off and Strictly too. Hubby has surrendered and now watches Strictly. He even comments on it now.
 
TMAD today.
11:30 1 hard boiled egg, cold chicken, mayo. Olives.
Hard cleaning again. Son has finally become a home owner but its in a state. 2 hours solely in the one tiny bathroom. Half a bottle of bleach.

4pm suddenly remembered the half a watermelon left from last Wednesday. Pushed most it through a sieve to make ice lollies. It's supposed to be quite low carb but I did eat about 100g and libre shows me I went up from 6 to 9 for just over an hour. Will restrict quantity in future

Was one of those buys where I needed about 150g weight for a recipe, but that would have cost £2.50 ready cubed, but a whole melon was £2.30 and has given a good 10-15 portions. I hope the lollies turn out OK, was juice only nothing else.

D: bacon, tinned tomatoes and a very small portion spaghetti, cheese. Bg only went up a point!
2 sqs hm lc chocolate chia brownies.

Drinking turmeric tea with added ginger.

Just heard of 4th friend to succumb to covid within the last week.
 
Re Brussel sprout recipes
I used to do a Delia that was cooked sprouts blitzed in a blender with an insane amount of cream and butter to make a very pretty green mash. Haven't made it for years since I went low fat. Must try it again now :)

I agree with @shelley262 maybe start with much smaller quantities, or just the liquid part and build up. It can be potent stuff. I noticed on the Zoe ferments study info they suggest a portion of sauerkraut is just 35g.
The chuckling Goat kefir I’ve been getting advise to start at 1 tablespoon a day for a week and gradually build up week by week to a daily dose of 170ml so I think all these fermented foods can take some adjusting to.
I hope you find a way through it, IBS is grim, I sympathise.
 
Morning all. @Annb and @shelley262, it's good to be back. It took me over 2 hours to read all the posts yesterday to catch up! But it was worth it. Just cwc this morning and lunch is liver, bacon, onions and above ground veg. If I need something at teatime, I can boil a couple of eggs (and not take my eye off them, they tend to explode when I do that!) I wrote everything down yesterday and my total carbs was 75. Unfortunately, it was Pensioners lunch day. I've talked to the lady who cooks and she is going to give me more veg and no potatoes and the filling out of the meat pie and less gravy. I take my own sweet now so I seem to be taking the reins again. I am not going to let the doctor put me on any tablets yet, I have the bit between my teeth and really want to do it by eating healthily.
 
Breakfast: eggs scrambled in butter and with cream, chopped up crispy bacon.

2nd meal: will be spiced lamb with braised cabbage.

Will try very hard not to snack at all today and so keep carbs to an absolute minimum. I am a bit short on snacky things at present and Neil is not feeling very well today, so isn't going to go shopping for me.
