What have you eaten today? (Low carb forum)

I agree with @shelley262 maybe start with much smaller quantities, or just the liquid part and build up. It can be potent stuff. I noticed on the Zoe ferments study info they suggest a portion of sauerkraut is just 35g.
The chuckling Goat kefir I’ve been getting advise to start at 1 tablespoon a day for a week and gradually build up week by week to a daily dose of 170ml so I think all these fermented foods can take some adjusting to.
I hope you find a way through it, IBS is grim, I sympathise.
Many thanks for that @DJC3 & @shelley262 - I didn't build it up and just started of with my usual large portion sizes! and I wondered why after years and years of being ok my ibs symptoms have returned and they were really only the new foodstuffs I have tried recently and wondered if it was this ... looks like it was ... I may try again when everything settles down but I am a little wary tbh ...
 
How do you make the cookies? Sounds interesting, looks good too. :)
1. fry raw peanuts(100g) with the skin in a pan
2. grind them till the nuts leave oil. Also, put 2 spoons cocoa powder.
3. beat 1egg in a bowl. Add stevia sugar free tablets or liquid.
4. Finally add the peanut butter into the bowl and mix well.
5. If it is too liquidy, add coconut powder or shredded coconut. Make small balls and put them in a greased baking pan and bake it for 25 mins.
6. Don't remove the cookies till they are cool.

So back to yesterday.
Brekkie was usual slice LC toast good butter and copious tea.
Lunch was 2 boiled eggs in egg cups and ramekin of strawberries and raspberries. Small cup of tea.
Supper was a bit of a non event as we i expectedly had a 5 hour power cut so ham, cheese and salad from the fridge by candle light not as glamourous as it might have been 40 years ago!
Today same brekkie.
Early lunch of small piece crustless quiche with the remainder of the celeriac remoulade from Waitrose.
Then off for another eye injection but a vein got nicked so had a gruesome bleed which when I rendezvoused with Mr P sent him into a spin and I went back in to be cleaned up. It happens occasionally but this one was the worst and because I am numbed and have eye patch I didn’t realise!
Supper will be individual cottage pies mine with swede mash which will be easy.
@RosemaryJackson welcome back and you know sometimes life just gets in the way (some things more pressing than low carbs) but you will soon get back on the LC horse!
 
@PenguinMum I'm not keen on blood so my hug should also go to Mr P who had to see the scary bleed!
@RosemaryJackson you sound motivated and having a word with the cook at your regular pensioners lunch sounds like an excellent tactic well done you.
Busy day as one of my regular caring days so took black coffee and a cooked chicken leg out with me. Ate the chicken leg about 12 and a few squares of 90% chocolate at 3 ish
Main meal at 5 ish

Pulled pork - done in slow cooker so ready when home - with salad, kimchi, sauerkraut and a LC wrap, also glass of red wine. Just had LC brownie with decaffeinated coffee.
@DJC3 and @maglil55 like you guys my OH is in training for enjoying bake off I'm now really looking forward to Tuesday evenings.
 
B: ff greek with seeds and a little bit chopped watermelon
Dance class 1
L : a hard boiled egg, 1 slice hilo tosted with cheese on top. Quite a bit of cucumber found about to go soft. 1 chocolate pot.
Dance class 2
D: fish - basa baked with ginger, lemon and butter. Roasted cauliflower florets. Some of my cauliflower cheese savoury thingy. This time I made this from the leaf stalks as couldn't bring myself to waste them. Bit too moist but will do. And have 12 squares now in the freezer.
Have a vegetarian guest tomorrow, but won't be offering these as he can eat ordinary bread and carbs.

Contemplating a glass of wine with bake off...
 
Tuesday 3 October - @PenguinMum Yikes! Like Mr P, my Hubby would have freaked. He still freaks if you tell him what they actually do in the eye surgery. He freaked at his own bleeder in York. I was busy applying pressure and bothering that he was bleeding on the floor, in between trying to reassure him, it really wasn't as bad as it looked! Bed & FBG both 6.9.

B. TAG and my mix of salami, chorizo, scramoza, cheese triangle, 2 slices of SRSLY toast with Benecol spread. Benecol dairy free.

L. 2 Skinny Cracker company crackers with cream cheese.

D. A gin & soda with a dash of sugar-free strawberry syrup. To celebrate! The doctor had to admit I was right. She had been determined to increase my pill dosage, but I said no. I'd explained that my figures had risen due to inactivity following the eye surgery. As I said, once I was allowed to exercise & do things again, it would turn around. They did. Hba1c dropped from 59 to 48, and the cholesterol is back within acceptable limits. LDL is still higher than HDL, but I can make more minor adjustments. Still awaiting uric acid results.

A simple dinner of a SRSLY pizza base that I added tomato, cheese, salami, pesto to it. The obligatory CC little chocolate pot.

Today's menu:

B: Two poached eggs with a knob of butter, slices of avocado, seasoned with black pepper and a wedge of Gorwydd Caerphilly.
Water to swallow tablets
Espresso.

L: Salmon fillets baked with broccoli, chestnut mushrooms, double cream and lemon verbena
Steamed runner beans smothered with butter.
Salad made with sweet cicely, chicory, celery, green peppers, salad onions and flat-leaf parsley, dressed with olive oil, garlic and a touch of lemon juice, topped with roasted macadamia nuts.
Skipped pud.
Water to drink.

D Seafood salad using king prawns, mussels, lettuce, baby plum tomatoes, chervil, Romano peppers, Kalamata olives and Welsh onions, with a dollop of aioli for dipping, topped with toasted pine nuts.
Water to swallow tablets.
 
Evening all

Today's HbA1c result 35 mmol/mol, (down from 44 in September 2022). I'm so pleased.
Logging my food intake here, it must be said, helps to keep me motivated, especially when readings drift upwards due factors beyond our control like infection.
That's absolutely amazing, congratulations!

I had a couple of days of shawarma, first night fried with onion and mushroom and served on a low carb wrap with endive for lettuce and a spicy garlic sauce, second night the same but without the wrap.
Had half a grapefruit on both nights as well. :hungry:
My grapefruit experiment (4 days of a half grapefruit for dessert) went well for 3 days, but not so much on the last day which was one of those persistant high bg/more insulin days. Still have two grapefruits left but they'll have to wait until I find the courage again, stubborn BG isn't very good for my mood.

After that, I still had enough shawarma meat left for two more days but wanted something else for dinner.
So I made an experimental mushroom soup (onion, garlic, mushrooms, stock cube, cream mainly) with shawarma meat, very tasty and filling. :)
Had that yesterday, will have the rest in a moment.

My friend found a (possibly dodgy) website where we can watch from the Netherlands so I've just watched this season's first episode. :joyful:
Let's see when the second one becomes available.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: tonight was the last night of my 12 week ’lifestyle course’ which I actually enjoyed in the end. It was a deal I did with my diabetes nurse in the spring. The Eatwell plate reared its head but even non low carbers thought the amount of carbs was way too high!
We all brought in food. There was plenty of salad, someone had cooked a potato free frittata. Someone else made some sugar free chocolate truffles then there was my low carb carrot cake, so I ate well!

I’d forgotten it was Tuesday, thank goodness I was reading this thread and spotted all the bake off comments, nearly missed it!
B- kefir then black coffee the rest of the morning
L- Cold venison, sauerkraut, feta, slice of garden apple.
D- 3 courses! Started with avocado vinaigrette ( I used to think I was so sophisticated ordering this in a restaurant in the 70s). Then sea bass, forgot yet again to score the skin before cooking @maglil55 . It was crispy but still room for improvement. ( btw congrats on standing your ground with the dr and bringing your HbA1c back down on your own terms) Finally a DGF cake topped with a spoonful of cream cheese.
@PenguinMum what a horrid experience after your eye injection (and what a shock for Mr P). Does it hurt now the anaesthetic has worn off?
@RosemaryJackson you most definitely seem to be taking the reins again, well done!

Morning all, gosh these dark mornings have crept up suddenly. Where has this year gone? Scary stuff!

Yesterday at around 11o/c had breakfast, 3 very thin back bacon rashers, one egg, and mushrooms sauteed.
Coffee with cream
2ish had a G&T
5 o/c had an early dinner of 2 smoked and peppered mackerel fillets. Salad of lettuce, celery and half a small chopped apple, with a mixture of mayo and salad cream to coat.
90% chocolate (4 squares) - eating window closed at 6.
 
Morning all. Kept to under 20g of carbs yesterday so happy with that. Today I'm having an air fried pork steak with veg for lunch thats all ready to cook now. Trying the omad route. I have an Art class on Wednesday mornings that I really enjoy and in the afternoon a Good Companions club where we play bingo, dominoes etc. so I'll be too busy to think too much about food! Hope you all have a good day.
 
Yesterday - brunch of lumpy soup - chicken broth base, leftover chicken meat and some keto-friendly veg..

Dinner was stir-fry, and I added a couple of green tomatoes to the usual mix. Very good, a little more diabetic-friendly than ripe ones, and I'll do that again.
 
Just had breakfast of some kind of soup. I took it out of the freezer but couldn't identify it. Having had a small bowlfull, I still can't identify it. There was a lot of turmeric in it; I think it was a chicken stock; there were various herbs; I found bits of mushroom and I think there were tiny bits of other veg plus there may have been a few lentils there. We'll see what it does to the BG.

2nd meal is going to be some pork sausages also out of the freezer last night with a mixture of swede and celeriac - I have a small chunk of each in the fridge, needing to be used.

There's not much else in except what's in the freezer - Neil is still feeling under the weather and not feeling like going shopping. Hope he's better by tomorrow - I have an appointment with the nurse to get my legs rebandaged.

I kept carbs low yesterday, having only a small amount of cabbage with any carb in it, but BG still stayed up in the teens. Still in the teens now, but I've taken a fair bit of insulin before the odd soup and we'll see how it goes.
