What have you eaten today? (Low carb forum)

Great news on your fast @Outlier, congrats! I must get some fasting done, I've been slacking off on that a bit.

Scoffy day today, I had the leftover chicken/cauli cheese/mashed swede for breakfast, then a packet of pork puffs with a little bit of cream cheese, cooked some lamb leg steaks for the freezer so had to eat one of course, and just had some harissa pork mince with a greek salad.

I think I might have some more pork puffs with cream cheese, and possibly a few nuts and montezuma 100% buttons later. Very much not a fasting day of any description!

Edit: At least low carb! I find thoughts of carbs creeping in when I am losing weight, but managed to push them away today.
Well done on pushing those high carb thoughts away.

Busy day today so boiled two eggs to take out and also put a Bolognese in slow cooker before heading out.
Lunchtime while out two boiled eggs followed by hm LC lemon bun
Dinner Bolognese with some LC pasta and small glass of red wine. Just had hm LC chocolate bun with decaffeinated coffee.
I'm going to nip into my gps practice tomorrow to hopefully find out about all the odd notes that have appeared on my online medical records since my annual review bloods and foot check on Monday. I have a healthy low blood pressure of 118/70 and there is a query amongst other things as to why it's below target! Nine years ago when hba1c was 97 on diagnosis and I had a bmi of 31 i did have hypertension and meds to treat but a side effect of tackling my diabetes and major weight loss was that my bp lowered dramatically and dizziness meant had to come off the meds and my bp has since remained low. It's almost like they can't understand it and seem to want to find out why I don't have a plan! Do I need one? They've made a face to face admin appointment next Wednesday early morning to discuss my hypertension plan so I'd like to find out why. I also have a phone review booked with DN next Friday - this seemed to disappear from my records yesterday and then just popped back up again. I'm checking my records for my online results btw I don't usually check my file as not usually any activity! I just like reviewing my blood tests as they appear rather than waiting for the DN feedback appointment.

Coffee and cream
Decided to do something differently today, just to see what happened.....
I really like smashed avocado on sour dough. Haven't had any for a long time.
So went to my normal cafe. Had poached egg on smashed avocado on Sourdough. With a few cherry tomatoes. Blood sugar early 6.7. After the Toast etc 8.7. two hours later.
Then by Dinner 4.1.
Dinner ham cheese and 1 tomato.
As lovely as it was think the jump to 8.7 too high for me to be repeated too often.
Coffee and cream
Thoughts please......

I feel that an occasional rise of 2 from sourdough bread isn't bad. Issue is more probably feeling you could do it often as your insulin clearly clicked in to bring you down to 4.1.it's often issue with bg raising carbs that you need your insulin to click on and manage it and that would include the insulin putting the excess sugars into your fat cells. I believe that if I upped my carbs my insulin would rise to deal with it and my weight would slowly rise. I love bread though so manage my bread cravings by eating low carb bread. low carb bread for me doesn't raise my bgs and so doesn't trigger a big insulin response.
I also feel that if this helps deal with your bread craving and doesn't cause you to trigger over eating it it is fine as an occasional treat.

@Outlier I am reeeejoicing with you - Great fasting achievement!
I only managed to fast until 12:30 ( and even that’s a struggle).
My lunch was the rest of M&S smoked salmon &cream cheese in lettuce boats. Plus a DGF roll filled with egg mayo and sprouted cress
Dinner - low carb co pizza topped with sour cream ( instead of tomato sauce ) olives, red pepper, mozzarella, mushrooms and smoked bacon. Couple of glasses of the 0 sugar dry white wine ( this was a Pinot Grigio, I ordered a mixed case) from today’s delivery from Drink Well. Chocolate chia pud to follow.
@shelley262 good luck tomorrow at your GP surgery. The fact your results are so good obviously means something is wrong! IMG_1710357668.136949.jpg

Breakfast: 2nd half of the frittata that I made yesterday.

2nd meal will be somethig out of the lucky dip that I call a freezer. Open door, close eyes and grab something. Or I did want to try something that I saw somewhere which was cashews with green beans, red pepper and dressing. The only problem with that is that Neil could only get me broad beans which may not be so good unless I can get them cut into really thin strips and steam them.
It was the bean and cashew dish that I made. Very tasty but not very filling and today is a hungry day, so not the best meal for today. I may follow up with a hard boiled egg or even two.

Evening @magli55

A much-loved neighbour, who hails from Scotland, locks herself in a cupboard at the first sign of a thunderstorm brewing. Is this a Scottish thing or simply coincidence?

Interestingly, a Siamese cat of ours responded to thunder and lightning by marshalling her 3 kittens under the stairs in our hall; that being the furthest point that they could retreat from the windows. Perhaps there's something primeval or instinctive going on.
It was quite common. Certainly, the unplugging appeared to be related to the danger of power surges through the wiring.

Reeeeejoice with me - yesterday I managed a 23-hour fast - only been able to do that a handful of times, so delighted. Evening meal preceded by my usual little helping of mixed nuts, then steak, cauliflower, cabbage and tenderstem broccoli.

Today I will shortly have brunch of lumpy soup. Evening meal will be nuts followed by pork chop, sprouts, cabbage and cauli.
Congratulations @Outlier on completing a marathon fast. A splendid accomplishment!.
No wonder you're delighted.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L:Melanzane alla parmigiana, using aubergine without breading or flour, passata, mozzarella, parmesan, olive oil, oregano, garlic and basil. (Omitted topping from mine and finished with extra parmesan).
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, flat-leaf parsley and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with pistachios.
Water to swallow tablets.

A sensible precaution @ravensmitten. If thunderstorms occur more frequently in future due climate change, it may be wise to invest in a lightning rod.

Uninterruptable power supply also is a good one for the computer, thankfully although its always raining here thunder and lightning is a rare occurrence, so never invested in one.

Maybe not so sensible yesterday though. Didn't eat in the daytime at all, had a tooth out and ended up grabbing a take out because I was totally wiped out and hungry in evening. It was mostly all meat but I did eat the pide bread it came with, BG rose to 9 for 1.5 hours then luckily back down pretty quickly after that - but yeah probably will skip the bread part if ever do decide to eat that again - It is what it is, a one off. Returned to 5 this morning though, so lucky enough not to have carried through.

Today, skipping breakfast as I tend to, lunch will probably be egg and cheese salad.

Morning all, hope all having a good week
Yesterday
B Yog, blueberries, seeds
L Smoked salmon,avocado salad
D Beef casserole, green beans with a Freshwell cheese biscuit/ “dumpling” not quite the same as a real dumpling but ok.
will look up the Freshwell cheese biscuit Ive never done any of the Freshwell recipes always up for new ideas. Sharing the link as their low carb manual is really good

Good afternoon. Late again! Bg down a bit so on right road. Fasting for as long as possible today. Have an upset tummy so hopefully that will help. Scrambled eggs at the end of the fast.
well done - good to take advantage of your tummy issue but sorry to hear you are suffering. Gave you a winner for doing well but wanted to send you a hug for your upset tum.

Breakfast: Bacon and eggs. I was intending to make it an OMAD day but Neil could only get salmon for me that is right on its use-by date so might have to make a 2nd meal of that with some spinach.

I was very hungry all day yesterday but was determined not to have more than 2 meals, then once I did eat, I just kept on picking at bits and pieces. A better, more sustaining breakfast today, so hoping to make up for yesterday with the one meal.n I could just cook the salmon and keep it for tomorrow.
