What have you eaten today? (Low carb forum)

Evening all

Today:

B: Two poached eggs and two scallops with flat-leaf parsley, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablets.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and sage, baked with sweet red peppers and aubergines, moistened with double cream and topped with grated, extra mature Cheddar cheese.
Steamed runner beans with a knob of butter.
Mixed green salad topped with roasted macadamia nuts.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

Mid-afternoon: coffee with dash of milk.

D: Seafood salad made with tiger prawns and mussels, rocket, avocado, cucumber, salad burnet, vine tomatoes, salad onions and Halkidiki olives with home-made aioli for dipping, topped with toasted almonds.
Water to wash down tablets.
 
Having some sort of tummy bug or so and feeling wiped out after a long night.
So happy to report that so far I managed a cube of cheese mid afternoon, a cube of cheese late afternoon (neither being particularly appealing but I wasn't revolted by it either), and just now I had one third of a slice of lowish carb bread with butter and marmite, which actually tasted good! :joyful:
Dosed for half a slice but neighbour bought me the wrong LC bread, hence having a little less.

No idea what else will be had today but anything low carb that takes my fancy goes, rules are different when having a fever. Possibly a fruity ice lolly (8 carbs), depending on BG.

Today I had breakfast of goat milk kefir, h/m yoghurt with blackberries picked on my early morning dog walk.
Lunch was a very mediocre salad at a garden centre. It was the only non carby option. Bacon and Brie salad. Too many grated carrots and raw onions and not enough leaves.
Dinner was beef shin slow cooked in a splash of red wine plus h/m beef stock, herbs from the garden and a few odd veg from the bottom of the fridge. Steamed cauli to serve. Meant to make cauli mash but was too lazy in the end. A glass of red wine. IMG_1724010365.038801.jpg

Sorry to hear you're poorly @Antje77. Anybody you know with similar symptoms?

The ice lolly will help you to stay hydrated, I don't suppose solid food will seem particularly appealing, but when ready to eat, I find fish baked en papillote is the best possible food for an upset stomach.
It's easily digested and diabetic friendly.

B: Two eggs scrambled in butter with a generous dollop of double cream, sauteed chestnut mushrooms and a tomato, garnished with flat-leaf parsley and seasoned with black pepper.
Water to swallow tablets
Espresso.

L: BBQ'd sesame tofu kebabs in a lettuce wrap, corn cobs with butter and Greek salad made with red, yellow and green sweet peppers, feta, vine tomatoes, lettuce, cucumber, Kalamata olives and oregano dressed with vinaigrette.
Water to drink.
Coffee with dash of milk.

D: Salad made with anchovy fillets, eggs, avocado, Padron chillies, Welsh onions, thyme and a touch of lemon juice, with a dollop of aioli for dipping, topped with walnut halves.

mmmm. Another yummy meal! Mine never look so tempting!
 
Morning all. Monday lunch club today but I bet we don't get meals like the above! (unfortunately). There are about 36 of us so we don't get salad. It takes such a lot of preparation and there are not many volunteers. We get a 3 course meal and a cup of tea or coffee for £4, so we are all grateful for the meal and the company. At Christmastime, we get a 3 course meal plus a mince pie with the tea and an After Eight. We have crackers and we all get a present and that is free. :joyful:
 
Photo today of Breakfast as opened one of my birthday present packs of Welsh air dried bacon and had a slice fried along with an egg. I also cooked some garden tomatoes in olive oil and served on one slice of low carb bread toasted. Really enjoyed the whole meal.

Lunch had a couple of celery sticks with hummus and a few garden berries with spoon of yoghurt
Dinner organic pork mince Bolognese with low carb pasta followed by low carb lemon and blueberry blondie.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and another carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgettes.

A splendid breakfast @shelley262. Breakfast is my favourite meal of the day.

Wow! That lunch is definitely my kind of food @DJC3 and yes, I reckon your do-it-yourself chicken wings were far superior to their KFCs.

L: Whole sea bass baked en papillote, belly stuffed with sprigs of tarragon and garlic, drizzled with extra virgin olive oil.
A medley of baked calabrese, cauliflower, onions, leeks and sweet red peppers.
Garlic mushrooms.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, sweet cicely, apple peel, celery, vine tomatoes and mustard cress with a dollop of home-made aioli for dipping, sprinkled with chopped, flat-leaf parsley and toasted almonds.
Water to wash down tablets.
 
Hi all, For breakfast this morning I had blue and raspberries with cream sprinkled with chia seeds and for lunch I had 3 rashers of bacon with a diddy bit of ketchup. Trying to give ketchup up....honest.
Homemade ketchup is the absolute best! Passata, tomato puree and apple cider vinegar with a little seasoning of your choice. Simmer for half an hour and it's really delicious with no carbs
