@Goonergal @Brunneria @Robbity many thanks for your kind thoughts re Tilly. Ive changed my avatar so you can all see what a gorgeous little pooch she is. ( love your new ones @Goonergal and @shelley262 you are both so trim)
Spent most of today driving to vet hospital in Northolt and picking her up to transport her to a specialist centre near Luton where they referred her. Still no nearer knowing what’s the matter, but she is deteriorating, its awful.
B: smoked salmon and scrambled egg
L: had the forsight to take pork scratchings and an Adonis bar with us to the vet today as I thought it’d probably be a long one.
MAS: coconut and macadamia bar when we got home, feeling v sad. Glad we still have a few of these left, they are the perfect indulgent snack and saved me from a high carb blow out.
D: kobi keema ( a dry mince and cabbage curry - it was a staple when I was a student as its so cheap, it later became a family favourite and it occurred to me recently that it is low carb. ) with cauli rice and DD garlic butter naan bread

Just having a late night snack of 5 brazil nuts and 3 HC buttons. I know I shouldn’t but never mind.

@ianpspurs I hope you feel better tomorrow - are you sure its not hayfever? My husband started it a few years ago having never suffered from it before and now gets it every year.

@shelley262 and @jayney27 I hope it all goes well for you tomorrow at your events and you manage to stay low carb.

@Rachox have fun at the wedding, I love your outfit - a jumpsuit! Bet you wouldn’t have worn that a year ago?
@DJC3 a hug coming your way poor you and really hope Tilly is okay it’s not at all easy. I’m amazed that you stuck to low carb regardless you may have had to eat more erratically but you didn’t resort to any old habits. Superstar but do take care of yourself over these difficult times

5.0 today. Happy with that. Yesterday was lunch in my local Sainsburys. Quiche salad but left the pastry and tomatoes. Would normally have eaten the tomatoes but as I wasn't sure exactly what was in the quiche mixture decided to leave them. Woofed down the coleslaw though! Tea was snacky. Nuts cheese salami one thin cracker. 2 glasses of red watching the match. I ordered a hotpot in and a chicken curry with rice as I usually do. First time ever for me not to indulge. It smelt **** good but all I could see in the hotpot was the potatoes dancing around! As loud as they were shouting 'eat me eat Me I just ignored them!

definitely a winner managing to avoid the potatoes. One of my fave things pre diagnosis was casseroles or curries with potatoes in it was the texture and flavour they took on. However this last weekend I put a few cubes of celeriac in a chicken curry and wow it was so good so I think a solution plus it thickens a bit too. I’m lucky as my bgs are fine with celeriac as long as don’t have huge amounts of course but t3nd to do small portions these days.

However this last weekend I put a few cubes of celeriac in a chicken curry and wow it was so good so I think a solution plus it thickens a bit too. I’m lucky as my bgs are fine with celeriac as long as don’t have huge amounts of course but t3nd to do small portions these days.
I've heard it mentioned a lot in here and keep meaning to buy it in.. and forgetting! Will try it thanjs @shelley262

I do celeriac chips (oven and fried and coated and uncoated, celeriac mash, parmentier celeriac (wee cubes oven roasted with herbs) and my latest favourite celeriac dauphinoise made with gryuere and cream. One issue it is an absolute swine of a vegetable to prep. I've found the best way to deal with it is cut thick slices then trim the ugly outsides as it is a nightmare to try to peel the thing (or I get hubby to do it).

Hi all lovely Father’s Day today afternoon tea with the boys which I really enjoyed.
Breakfast scrambled egg on one slice of low carb bread
Lunch three of my new low carb crispbreads - loving these A definite keeper of a recipe- with cheese and walnuts
Afternoon tea fresh out of oven low carb choc olive oil cake with three strawberries and double cream ( concerned about my pre dinner reading as don’t often eat between lunch and dinner but it stayed steady at 4.9 ! Despite the home grown strawberries)
Dinner steak, celeriac chips, mushrooms a few onions and olive oil mayo with big glass red wine planning a few strawberries later there are so many ripening and was pleased at my post one hour reading before dinner!
I seem to be managing to eat more with very stable bgs in the 4s long may it continue!
Hi can you please tell me what low carb crackers you are using...and could I ask for your recipe for low carb choc and olive oil cake ...you are keeping your levels low and I am trying low carb diet for my husband ...type 2 for 16years ...need all the help I can get lol ...thank you

I agree with all of that @maglil55 particularly how best to do the prep - except the hubby part as I don't have one! It also makes a really good celeriac and cheese pie with a mozzarella and cheddar mix. Those 2 seem to produce a better texture.

Hi, just home from the conference I attended and managed to cope with the buffet lunch.
As I expected it was lots of sandwiches which looked scrumptious but I resisted, instead I opted for filled wraps and then as nicely as I could, unwrapped them and just ate the filling, prawn salad in one, ham and salami with salad in the other, avoided the amazing sponge cakes that were on offer and nibbled on my Adonis brownie. BGs were 5.8 before and 6.1 at the 2hrs after mark so acceptable considering all morning I had been sat about listening to speakers, not a lot of moving around opportunities.
Not decided on evening meal yet, I am tempted to do something with the celeriac I bought and make the coffee cake we have been discussing.

Good evening everyone. Annual review time so bloods taken and weight and bp added to records. Both were best so far and bmi lower by 1 since December 19 - IF and fasting work on that at least! In theory today I had a free hit to eat whatever I wanted with no guilt. My choices today should show how much I am or aren't on board with LC. Menu below and I feel pretty stuffed but it is my birthday so whatevs;) No testing tonight and no scales tomorrow morning for once. Wait for full results and set targets for next 6 months. :nurse:

B: 1 pint tea with h/m almond milk
MMS 2 slices corned beef and beef from 1 of the bones used for bone broth earlier in week - First food for 64 hrs and after swimming and bloods - I was very hungry; 2 pints tea with h/m almond milk
L: Waitrose Americano with double cream
MAS: 2 slices mortadella (5 slices reduced to 89p so rude not to); Slice of Bishop Cropwell (also reduced so just being public spirited and saving waste); Mixed olives, sliced marinated garlic, mushrooms, chilies, feta cheese
D: Belly pork (slow cooked in sous vide overnight then crackling crisped on griddle) butternut squash chips, coleslaw; Red wine; strawberries and clotted cream later and maybe a G and T
For those on slightly higher carb regimes I found out Waitrose Cornish dairy vanilla ice cream is 12 gms carb per 100 mmls so I will test the spike or not later this month.

Thanks @jayney27 . Interesting point about what results I long for. My average a1c over 3 years is 5.6 or 38 so that or a little better will be fine. The real longing is for that to be at least as good and cholesterol, weight and bp to all be in good to perfect range as well. Do I give the impression I am striving for targets? :angelic:

I’ve decided to treat myself after abstaining from the cakes available today, I am having sausage, egg and chips. Before you all think I’ve fallen off the low carb wagon from a great height, the chips are made from celeriac and the sausages are Heck chicken variety :joyful:
Some of my favourites in there although I have to admit these buffalo and mozzarella sausages from my local farm are pushing Heck chicken down the running order.

Nothing wrong with having targets, that is what keeps us motivated. My recent test and DN visit ticked all the boxes for me, BG now in the normal range, my target is to keep it there or see it a little bit lower, cholesterol thankfully wasn’t a problem before and is still good, weight loss has been good so far, it is continuing in the right direction, albeit a little slower but I’m ok with that and blood pressure, again not an issue before but is lower than it was and is the lowest I’ve been aware of for as long as I can remember.
Although I would prefer not to have received my diagnosis last year I really do see the silver lining, I am sure I wouldn’t lighter, healthy or fitter than I am now if that hadn’t happened so I’m thankful for the opportunity I got to make changes, some people aren’t so lucky.

Just one meal today.

Stunning pub mixed grill, including lamb chop, pork chop, liver, 2 great quality sausages, gammon, a piece of steak and an egg.
I left the veg and the black pudding (gluten). Will have a bash at uploading a pic from my phone later. It is worth seeing!

Then I saw that there was a gf bakewell tart on the menu. With cream.
Mr B was angling for a dessert, so I had to keep him company, didn’t I?
And since we are really close to Bakewell, where they make REAL bakewell tarts, which are really egg custardy, I took a risk. Which paid off magnificently. It wasn’t a REAL one, but it was made with almond flour (I think).
My Libre says the entire meal didn’t take me above 7.5, which is stellar in the circs, and most of that was almost certainly due to the massive protein hit.
Very happy.

hi janey27..i agree with your comments re.silver lining etc. i call it the big wake up call! lightest and fittest for ten or more years i await my results in about a week
