What have you eaten today? (Low carb forum)

Shelley I'm having a couple of friends around for dinner Thursday and might just attempt this cake. Can you give me the recipe or share the link if you get time please? Thanks

No worries it is below. Main thing we do differently is swap the sugar for erythritol on a gram for gram basis. In addition @fter a tip off from @maglil55 every low carb cake I do I alter method slightly by seperating the eggs - whisking egg whites to soft peaks and putting them to one side. Adding egg yolks when it says add the eggs and folding in egg whites at end it lightens them all. It works out at 18g carb per whole cake but it’s a big one and you don’t need much it’s very rich. Needs serving with double cream we feel and I often serve strawberries and raspberries with it too. If it’s for a dinner party I also grind some erythritol to make it look like icing sugar powder and sprinkle on the top they will never know it’s low carb!
When doing for us at home I tend to divide mix into two small loaf tins and freeze one of them. Itworks well and as often cut into about 10 slices slightly less than 1g per small slice.......

I can vouch for the choc cake, it is delicious, I served a slice to my manager who is a real carb fiend, it disappeared in 2 bites and he asked for the recipe, he is planning on getting his wife to make it.

Daughter wanted Maccy D’s :rolleyes: I got a black coffee from Maccy D’s and was going to cobble together lunch from my stash in the car when I spotted Fresh Food Café, here’s my lunch :hungry::)

Thank you so much. Apart from kiddy stuff when mine were little I've never baked in my life but there's a first for everything!

Good luck but it’s an easy recipe to follow main thing is to get everything weighed out and ready while oven heating up. Preparation makes this one easy I think. If you are trying to weigh stuff as you go on it’s flustering. Worth getting mixer out for this one. I use a hand held electric simple whisk I’ve got a big mixer but hand held is easier I find for this and if you beat egg whites first you can then use the whisk to beat the rest.
 
D: Waitrose lamb kleftico. @Goonergal I thought of you when I saw this in Waitrose. I know you have it regularly and I can see why, it’s delicious- so tender..
I was intrigued by the lamb kleftico so had a look at Ocado, and was put off the price as it's too much just for me. I Googled actual recipes and they all differ slightly! However, my next online order includes a pack of half price diced lamb, and I have most of the other ingredients to hand, so I'll be trying some sort of variation of it this weekend. :hungry:

Our poor dog is still very poorly in hospital. Her liver seems to be failing and they dont know why. She is only 7, a terrier of unknown parentage ( a rescue dog) so should be tough as old boots. Can’t believe this is happening really, we thought she’d just eaten something dodgy.
I hope your little dog will pull through - it's so awful when you can't do anything to help them, but she's in good hands. Give her a big cuddle from me if you can, and a big kiss too if she's a little kissy girl!

@Robbity the lamb kleftico is quite often on offer at about 40% off, so keep an eye out.

@Debandez another vote for the chocolate olive oil cake. Like you I’m not a baker and hadn’t attempted a cake since school, but got this one right first time. Agree with @shelley262 on the preparation.

Another OMAD day - on a roll. Dinner tonight was a quick one so I can digest it and get to Pilates on time. Plate of a selection of cold cuts - smoked salmon, smoked cheese and salami plus some of the nice M&S whipped cream cheese. Dessert was the lazy extra thick double cream mixed with almond butter and a couple of Hotel Chocolat 100% buttons.
 
Not a day I have enjoyed greatly. Started poorly due to waking early and being unable to go back to sleep. Went downhill with last night's puffy sinus being more puffy and making me drowsy. Dr prescribed antibiotic cream and all I have wanted to do all day is drink. Let's hope the cream works. I sincerely hope everyone else has had a better day and more pleasing menu than I have. The only good news is despite 2 factors which often raise my bg level they are reasonable.

B: 4 pints tea with h/m almond milk
MMS Mug French vanilla coffee with double cream
L: Bone broth with acv;
MAS: 3 mugs tea with homemade almond milk
D: Tassimo Americano Grande with cream - probably mugs of tea later

We are on hol this week, so food routines are all disrupted.

Yesterday
Morning coffeesub with cream
Lunch of pork ribs and half portion of chips and a tablespoon of coleslaw.
Evening was a homemade chicken curry korma, thanks to the Magic Cauldron (aka Instant Pot electronic pressure cooker). It is absolutely indispensible for our self catering hols. Min effort, max deliciousness, min hassle and cleaningup. The hol cottage kitchen looks unused, and I don’t have to learn to handle their hob, pans and utensils. Win. Win. Win!

Bg was fine throughout. Guts were not - after that coleslaw. Going to have to just give up on trying veg this week while we are out and in unknown territory. Got caught short in middle of exploring Chester Cathedral. Dicey! Found loos just in time, near gift shop, in case anyone else finds themselves in similarly dire straights.

Lunch of 3 award winning bangers (each one different) and mash. Astonishingly, bg stayed in range. Must have been a heck of a lot of butter in the potato! :D Left the gravy, and scraped it off the bangers and mash.
Supper will be chick curry again.

Breakfast one slice low carb bread and boiled egg and coffee with inulin
Lunch tin of tuna mixed with extra virgin olive oil and apple cider vinegar with three low carb seed crispbreads ( would highly recommend these and I’m taking some to conference tomorrow) a few nuts
Two pots of green tea with mint
Dinner celeriac chips cooked in macadamia nut oil, chicken and green salad followed by sugar free jelly three strawberries and a bit of double cream meal served with a small glass of red wine.
Macadamian nut oil is a good find - it’s a bit pricey but cooks really well - it’s got quite a mild flavour useful I think for things that get a bit overwhelmed by some of the other cold pressed oils.
Away next two days will be interesting I’m packing low carb snacks as well as my conference clothes so have something to back up if needed. Will post if opportunity otherwise will be when get back.

Hope the conference goes well and that food choices aren’t too hampered. I’m at a work event tomorrow so will be winging it too, I plan on having a filling breakfast and then hopefully I will remain full enough to not need to eat just in case it’s all really carb laden.

Evening everyone, mixed day work wise and weather wise but good BG in the 5’s all day
Breakfast was livlife toast with almond butter
Lunch was chicken salad
Snack of small pack pork scratchings
Dinner Waitrose chicken burgers, salad and some strawberries and cream
