What have you eaten today? (Low carb forum)

Evening everyone,
Very quiet and restful day at home today. Just took a nice stroll through the woods at home, energy to expend and not feeling particularly hungry.
B - poached eggs on LivLife buttered toast and cappuccino
L - eaten later than normal, peppers, cucumber, tomato, sliced roast chicken and blue cheese dressing, small packet of pork scratching
No evening meal as yet
Updated as I did eat dinner, asparagus drizzled with butter, pork and chorizo burger with a dollop of blue cheese dressing and some jelly and cream, stuffed now

Hi all. Another OMAD day today. Third in a row and strangely not resulting in any weight loss so far. BG is improving from last week’s raised levels, though.

Dinner tonight was short rib of beef followed by chocolate and hazelnut Oppo ice cream with cream and 2 Hotel Chocolat 100% buttons.
 
Thank you, Ian, I will wait with some excitement as I have some food grade soap moulds in my garage, so should be able to get some made as soon as you post some more details. I have ordered some Inulin and have all the other ingredients - what % chocolate do you use? I have just tried 100% chocolate from M&S and couldn't eat it as it was far too high. I think I need to look at 85% to make it edible.
Welcome to this thread on the site @AllieRainbow good to see you here. Re the chocolate yes you do need to build up to 100% choc for eating but good to use for cooking as if you are using sweetners in the recipe it’s a way of having the flavour with fewer carbs! You can also melt the higher % stuff add something like stevia drops and then mix with something like nuts or coconut and reset on greasproof paper or truffle cases and voila lower carb but sweeter choc. I now enjoy 100% but there are real differences between them too. I love the 100% buttons from Hotel Chocolat they are 0.2 carbs each and delicious I find. Work up to them from 85% and meanwhile cook with 100% or melt and make into sweeter chocs,

Thank you @shelley262 - I will try the melting method and sweeten it up a little myself. I am not too fussed about not having chocolate, but it would be nice as an occasional treat, and my husband is doing the diet with me and likes sweet things so it would be good for him sometimes.
 
Hi all lovely Father’s Day today afternoon tea with the boys which I really enjoyed.
Breakfast scrambled egg on one slice of low carb bread
Lunch three of my new low carb crispbreads - loving these A definite keeper of a recipe- with cheese and walnuts
Afternoon tea fresh out of oven low carb choc olive oil cake with three strawberries and double cream ( concerned about my pre dinner reading as don’t often eat between lunch and dinner but it stayed steady at 4.9 ! Despite the home grown strawberries)
Dinner steak, celeriac chips, mushrooms a few onions and olive oil mayo with big glass red wine planning a few strawberries later there are so many ripening and was pleased at my post one hour reading before dinner!
I seem to be managing to eat more with very stable bgs in the 4s long may it continue!
 
Love the reference to Macbeth’s witches, I often get looks from people that makes me think I’ve sprouted horns and a tail when I talk about some of the concoctions I eat now, however once they try it they tend to be converted, most recent example was my olive oil chocolate cake, took some for my manager to try, admittedly I added temptation with some clotted cream, herb devoured it in 2 bites, I rest my my case :joyful:
Think that the choc olive cake has to be the fave with non diabetics and diabetics alike and once you mention it’s a Nigella recipe it gets even more accolades. I did it for a dinner party and just said it was a Nigella recipe and the others were just astounded I could eat it and all plates were cleared and lots of compliments given. As you say the double cream helps they usually serve low fat creme fraiche with puds!

L. Crispbreads, humous, green pesto, pine nuts, 4 cherry tomatoes, olives stuffed with almonds.
Snack. Half a granola slice, black tea
D. Hot salad of halloumi, courgettes from the garden with lemon zest, garlic and fresh mint. Caesar salad of romaine lettuce, shaved parmesan and salad dressing (no croutons).
Fresh raspberries and Greek yoghurt.

Well, a failed cooking day as dispite spending a small fortune in town I didn’t have all the ingredients I needed in the end. Luckily I still have some of the coconut and macadamia bars left from earlier in the week so not desperate for cake yet.

Coconut macadamia bar and coffee with cream.

D: Waitrose lamb kleftico. @Goonergal I thought of you when I saw this in Waitrose. I know you have it regularly and I can see why, it’s delicious- so tender.
We had it with cauli cheese and a portobello mushroom topped with spinach, Roquefort and walnuts.
Greek yoghurt and strawberries to follow.

Our poor dog is still very poorly in hospital. Her liver seems to be failing and they dont know why. She is only 7, a terrier of unknown parentage ( a rescue dog) so should be tough as old boots. Can’t believe this is happening really, we thought she’d just eaten something dodgy.

@DJC3 The cyber hug for the not so good dog news. The menu sounds very good and if both yourself and @Goonergal champion it I shall seek out the Lamb Kleftico.

Bless you @DJC3 I hope Tilly gets better soon, we have a Jack Russell and yes terrier breeds tend to be quite robust, hope your little girl finds her terrier tenacity and improves soon.
On a happier note your menu today sounds wonderful, I meant to look for the kleftico as I shopped at Waitrose yesterday but forgot, probably too distracted by that naughty cake. Plan to make the low carb version this week.

Had more this evening but still on bg target maybe they are less sugar packed than supermarket ones I try to eat the least ripe ones! Would be a shame not to eat my harvest! I’m growing some purple tomatoes this year in the hope they may have less sugar! But they won’t be ready till late August!

Lunch: mini mixed grill at Wetherspoons steak, gammon, lamb steak and sausage with salad in place of chips with my son as I had to give him a lift back to Uni.
Mid afternoon: Adonis bar eaten in the car to stave off the boredom of the M25 car park!
Dinner: buffet tea at ILs, of cold meats, cheese and salad plus one Jaffa cake.
Off to Cornwall tomorrow ready for a family wedding on Tuesday. There’s going to be a lot of winging it for the food for the next few days! Yikes! I have a bag of low carb goodies to take with me to dive into if I can’t find stuff suitable to eat.

Have a lovely time in Cornwall, I go down fairly often to visit my daughters and the drive is a drag I agree. I learnt las time not to eat pork scratchings when driving - instigated a coughing fit!

Yes I have a new outfit, it looks like a dress on the hanger, but it’s infact a jumpsuit! The cardy has a lovely lacey back :happy:
