Just how big is your IP and/or how small was the turkey to make that physically possible? - genuine question. I can't actually visualise that (and yes I know it is only the carcass). Enjoy the stock though.

Thanks so much for your interest in the recipe, though tbh it is not really a recipe. Just something I've concocted based on the memory of a soup I had at a Thai restaurant in San Francisco more than 10 years ago.
This is what I put in the soup ...
For the base, use coconut milk, water, chicken broth, and maybe one to two tablespoons of peanut butter. Season with salt, Chinese five-spice, and maybe some erythritol, a bit of red curry paste, ginger or galangal, lemongrass (alternatively kafir lime leaves or a sprinkle of lime juice/oil).
After this, add vegetables left in the fridge and that somehow work with duck and Asian food. For me, this was celery stalks (cut in small pieces of course), bellpepper and a bit of carrot. I would also imagine that eggplant, snow peas, soy bean sprouts, green onions, fresh coriander will work well.
Then fry duck breast, cut in slices, put in an empty bowl and then pour the soup over the duck breast. (Not cooking the duck breast in the soup, keeps it tender.)

Makes sense now with the breaking up and not such a big turkey.It was a 5.6 Kg turkey and a 6l IP. We broke the carcass up quite a lot and pushed it down into the inner pot with a few bits of veg ( onion, celery carrot etc) shoved into the gaps. Excellent stock.
Despite staying with low carb, I have eaten larger portions, so need to get back to routine. Oh and move about outside a bit more.

Coming late to the party but want to echo all the sentiments about this thread. It truly is my favourite one on the forum and such a source of support, friendly chatter and inspiration. Glad to see that most had an enjoyable Christmas and hope the New Year will be a positive one.
@maglil55 your Christmas Day post really brought home the year you’ve had. So glad that there were some positives going in to 2019.

Back on to topic. Way too many meals to catch up fully. Suffice to say that although sticking to low carb (with the exception of a couple of sausages of unknown carb content on Christmas Day) vastly too much has been consumed in the form of nuts (lots of nuts), high percentage cocoa chocolate, Hotel Chocolat nutty Yule log, raspberry clafoutis and extra thick double cream (lots and lots of that) in addition to usual meat and fish fest. Oh and way more veg than normal.
Yesterday attempted an OMAD day. Didn’t quite get there - long walk home from shopping expedition (6.5 miles) meant dinner was a bit too late so had dessert of almond butter mixed with clotted cream (@DJC3 a whole jar of almond butter remained unopened over Christmas and returned home with me) and a piece of cheese. Main course was beef short rib.

I’m the same with the amount of food consumed over Christmas - I bought a huge bag of mixed nuts ( 1/2 price at H&B) and got into the habit of grabbing a handful whenever I went past, plus Lots of other lc between meal snacks which I’ve worked so hard to stop. Darn it.
I’m impressed about the unopened almond butter - how long will it last once open though???
Opening the almond butter is always dangerous - hesitated before doing so! Need to be very focused for a while.
@DJC3 mixed nuts have been a great part of this season for me too. We always keep a huge tin of local peanuts around for hubby to munch on. It was a Costco run a few weeks ago that did me in! I pretended I’m made of money, and bought tons of yummy lc stuff that had not at all been on the list. The nuts and the parmesan (and to be fair the green beans) have been repurchased. The nuts are so “harmless””!!! Ha!
Today off to coffee with old friends, then to mom to prepare her emotionally for seeing my sister, whom she hasn’t seen in 3 months. Dementia is so unpredictable!
