What have you eaten today? (Low carb forum)

Just how big is your IP and/or how small was the turkey to make that physically possible? - genuine question. I can't actually visualise that (and yes I know it is only the carcass). Enjoy the stock though.

It was a 5.6 Kg turkey and a 6l IP. We broke the carcass up quite a lot and pushed it down into the inner pot with a few bits of veg ( onion, celery carrot etc) shoved into the gaps. Excellent stock.

Thanks so much for your interest in the recipe, though tbh it is not really a recipe. Just something I've concocted based on the memory of a soup I had at a Thai restaurant in San Francisco more than 10 years ago.

This is what I put in the soup ...

For the base, use coconut milk, water, chicken broth, and maybe one to two tablespoons of peanut butter. Season with salt, Chinese five-spice, and maybe some erythritol, a bit of red curry paste, ginger or galangal, lemongrass (alternatively kafir lime leaves or a sprinkle of lime juice/oil).

After this, add vegetables left in the fridge and that somehow work with duck and Asian food. For me, this was celery stalks (cut in small pieces of course), bellpepper and a bit of carrot. I would also imagine that eggplant, snow peas, soy bean sprouts, green onions, fresh coriander will work well.

Then fry duck breast, cut in slices, put in an empty bowl and then pour the soup over the duck breast. (Not cooking the duck breast in the soup, keeps it tender.)

Hope you enjoy the soup if you decide to try it.
Thank you @ziggy_w . Sory if I put you on the spot. I do this sort of thing with food all the time, randomly concoct a dish from whatever is available, then can't always replicate it.
Will have a try with this one.
 
A slothful sort of day again. Up early, and off to shops for essential provisions.
Ginger tea and Greek yogurt for breakfast.
Coffee mid-morning
Slice of cold beef and coffee at lunchtime.
Bit of a snooze.
Dinner was tomato soup, red Leicester cheese on low carb muffin. End of low carb trifle that was looking sorry for itself in the fridge, mineral water.
Despite staying with low carb, I have eaten larger portions, so need to get back to routine. Oh and move about outside a bit more.
 
Sort of unexpected OMAD today, but hopefully it’ll help with the horribly high bgs I’ve had all day.

Ate at around 4:30 after a fairly fraught dog walk on the beach. Huxley the Dane pup is very friendly and boisterous like all pups but at over 11st already he can be a bit scary for other people when he barks and wants to play. He hasn’t learnt recall yet so can’t go off the lead in a public place.
Made a sort of Thai style soup in IP with some of the turkey stock - onion, 1/2 a tired cabbage, a courgette red curry paste, coconut milk and a few bits of turkey thrown in after cooking to warm through. Delicious, even the children liked it.
Didn’t mean to have a drink but the last bottle of champagne was opened and it seemed rude not to.
Once home I had an IP custard pot with sliced fresh strawberry.

Makes sense now with the breaking up and not such a big turkey.
 
a few cheese bits earlier.

Missus treated me to M&S beef and red wine casserole..(balanced for you range) came in at 29g carbs,
we shared that and had the remains of yesterdays attempt at butternut squash spaghetti..(more like mash..but liked)
Popped that in a pan tonight , little bit of olive oil and gave it the bubble & squeak treatment..Not bad.
also had 4 meatballs in sauce, also from last night (lloyd grossmans tomato and chilli..delish)
and we shared that as well.

was quite happy with my Late night treat of soft goats cheese with some celery, for the fibre.
but now you lot have made me want... Strawberries, raspberries, cream and now chocolate...aagghh.

Today i forgot breakfast, then got a bit wobbly on the way to the dog walk.
An emergency Maccies bunless cheeseburger fixed that.
Then I forgot lunch, got ravenous at 4pm, snaffled a goatsmilk yog,
and then forgot supper.

Think I might try to be a little more organised tomorrow. Haha!
 
@Brunneria how on EARTH can a person forget to eat?!?? (Never mind, I've been asking that question for 40+ years. I will never get it.) My stomach is an un-ignorable alarm clock. As in right now, so, off to feed cats and me!
Bfast: 1/2 avocado, +/- 4 oz leftover grilled salmon, coffee (it's 100% instead of 50% decaf these days-- even decaf revs me up, more so now than ever before) with soy milk and CREAM!
Lunch: hmmm what was it? 3 tall celery, a piece of my LC bread, and handful almonds.

and then....the time had come to bake that Ghirardelli (sp?) triple chocolate brownie mix that Santa finds in Costco in a six-pack (!) every Christmas. Potluck Fifth and Food at church Sunday. So, I got out the container of Lindt 78% chocolate with very little sugar indeed, and kept a sliver in my mouth the whole time I was mixing. It worked. Then I had another square, and I was suddenly buzzing. Sigh.....

Supper here now: greens wilted in olive oil, balsamic vinegar, and roasted garlic powder, finished with a little skyr and a sprinkle of shredded Costco Parmesan cheese. Fake Caesar dressing! With none of the salt. Generous handful cherry tomatoes in all colors, and a chunk of swiss cheese.
Bedtime med snack will be a few tbsp skyr as usual.

My after-dinner walks have gotten a little longer, but I haven't seen any effect yet on morning BG. Maybe this dawn phenomenon is going on, but I really do have to have something to eat before bed, for other reasons.

I just was reading about the Newcastle Diet, which would kill me!, but if 15 kilos (what they are saying is necessary) is about 30 lbs, I've lost 29 lbs in the past 7 months, I realized on looking at my weight tracking app. I am not really missing any food except unlimited chocolate (turns out it's the chocolate I crave, not its sweetness), but my digestion is sure missing all those fiber-licious cooked carrots and the oatmeal, and also the butternut squash, sweet potatoes (eat various colorful vegetables, they said; don't eat white carbs, they said...LOLOL), and I will always miss fruit. Always. Some days I crave a whole glass of orange juice, which would give me a magnificent allergy attack (you don't want TMI about what my sinuses would do in response) but it would be worth it for that crisp, clean, sweet-tart coldness. Ah well...
 
Morning all. Trying to catch up after a few days absence - partly busy due to Christmas but also taking some much needed ‘me’ time after recent work stresses. Finally getting back on track with eating and exercise patterns and feeling better for it.

Coming late to the party but want to echo all the sentiments about this thread. It truly is my favourite one on the forum and such a source of support, friendly chatter and inspiration. Glad to see that most had an enjoyable Christmas and hope the New Year will be a positive one.

@maglil55 your Christmas Day post really brought home the year you’ve had. So glad that there were some positives going in to 2019.

@Brunneria glad you’re feeling better and congrats on the weight loss.

@shelley262 hope the party went well despite the boiler issues - thinking of you!

Back on to topic. Way too many meals to catch up fully. Suffice to say that although sticking to low carb (with the exception of a couple of sausages of unknown carb content on Christmas Day) vastly too much has been consumed in the form of nuts (lots of nuts), high percentage cocoa chocolate, Hotel Chocolat nutty Yule log, raspberry clafoutis and extra thick double cream (lots and lots of that) in addition to usual meat and fish fest. Oh and way more veg than normal.

Yesterday attempted an OMAD day. Didn’t quite get there - long walk home from shopping expedition (6.5 miles) meant dinner was a bit too late so had dessert of almond butter mixed with clotted cream (@DJC3 a whole jar of almond butter remained unopened over Christmas and returned home with me) and a piece of cheese. Main course was beef short rib.
 
Morning, realised I forgot to post yesterday’s food, so here it is:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: 3 x cheese thins with paté, cauliflower and broccoli salad and pork scratchings followed by a LC Bounty.
Mid afternoon: 2 x LC lemon shortbread biscuits with a black coffee.
Dinner: cold ham and turkey with pickled onions, 2 x cherry tomatoes, celery and cucumber followed by LC carrot cake and cream.

Fantastic to find you back and really glad you found that elusive me time - could that become a trend in 2019 as the lifestyle mags say it will be the next "big thing"?:angelic:

Thanks. I’m usually quite good at it and feel very out of sorts when it doesn’t happen. Didn’t have you down as a lifestyle mags kind of guy ;)

Didn't have you down as likely to believe that either - I do dip into Telegraph lifestyle section as some useful health/exercise articles. Most of the rest explains Victor Orban perfectly.:angelic:

I’m the same with the amount of food consumed over Christmas - I bought a huge bag of mixed nuts ( 1/2 price at H&B) and got into the habit of grabbing a handful whenever I went past, plus Lots of other lc between meal snacks which I’ve worked so hard to stop. Darn it.
I’m impressed about the unopened almond butter - how long will it last once open though???

Opening the almond butter is always dangerous - hesitated before doing so! Need to be very focused for a while.
 
@DJC3 mixed nuts have been a great part of this season for me too. We always keep a huge tin of local peanuts around for hubby to munch on. It was a Costco run a few weeks ago that did me in! I pretended I’m made of money, and bought tons of yummy lc stuff that had not at all been on the list. The nuts and the parmesan (and to be fair the green beans) have been repurchased. The nuts are so “harmless””!!! Ha!
Today off to coffee with old friends, then to mom to prepare her emotionally for seeing my sister, whom she hasn’t seen in 3 months. Dementia is so unpredictable!
