What have you eaten today? (Low carb forum)

Hi all missed all your chat and will try and catch up over next few days but a lot of posts to read!
I’ve been mainly in yorks yet again helping mum to say goodbye to her boyfriend, who sadly died a couple of weeks ago, and to deal with the consequences of her bathroom fall last week. Barnsley MBC did an excellent assessment and assistive technology put in place and my younger brother, who lives 2 miles from her, agreed to be more involved so big steps forward. Storm just made things more complex! Can’t remember what I ate this past week but lots of lc bits mixed with fasting when out and about and nothing low carb on offer - so will just list today’s food.
Breakfast bacon and egg
Lunch half avocado, tin mackerel in olive oil and four lc seeded crackers plus 30g mixed nuts
Dinner beef short rib, cauliflower cheese followed by lc lemon and lime mousse with yoghurt followed by decaf coffee and one square 95% choc.
Hopefully will be able to post regularly again from now! You’ve all been missed x

We’ve missed you too! Glad things are calming down a bit.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: meatzza left overs with LC cheesy bread followed by Greek yoghurt and raspberries.
Mid afternoon: coffee chia pudding and black coffee.
Dinner: mushroom and cheese omelette with cauliflower and broccoli salad followed by SF jelly, cream and LC chocolate granola.
 
@PenguinMum It sounds like it's been a really tough time for you, sending hugs your way.

Things were still unsettled here unfortunately , as Mr B's vision is not back to normal yet. He goes through periods of panic, but will then see some stability and feel calmer. He normally bounces back in a day or two, so 3-4 days is unusual. We have the option to go back to the hospital to get him checked out (and possibly get more heavy duty drops), but he isn't keen. It's difficult, as his vision is not dreadful, just not 100% back to normal. I had another chat with one of the Macular nurses today and they were really reassuring. I think it's just a case of waiting for the eyes to heal.

Anyway, despite all this, we still ate reasonably well:

Breakfast: Almond Chia Pudding with raspberries, blueberries and almonds. Black coffee.
Mid morning: Almond milk cappuccino with a splash of cream
Lunch: Provolone, emmental, salami, cherry toms, radicchio, EVO, Apple cider vinegar. One square of 80% choc.
Dinner: A variation on this frittata , served with salad, which was delicious. https://www.theguardian.com/lifeandstyle/2007/feb/17/foodanddrink.recipes
I didn't have chives, so used thyme and I used roasted courgette instead of cauliflower. I also baked it in the oven all the way and didn't start it on the hob. Worth getting hold of smoked mozzarella for it, but you could use other smoked cheese I imagine.

Afterwards, a square of Green and Black's Roasted Almond and decaf coffee.

Lunch yesterday: Ham and avocado (shepard) sandwiches, yoghurt and some diced up pitaya.

Dinner: Steak and veggies, reheated mashed spudlites.
Breakfast: Usual cheese and mushroom omelette, bacon, tomato, and a reheated spudlite.

Coffee, and water during the day I think one of my heartstarter black coffees was a triple bypass job. :D

Sorry things are still not quite right for Mr B, it must be so worrying for you both but glad the nurse was able to reassure you somewhat.

I don’t think Ive ever seen smoked mozzarella.
 
feeling tired and lazy today so no exercises
Breakfast. the same two types of granola, am trying to use them up.
Succumed to temptation at mums had bowl of raspberries, about 15.
lunch: had mushroom and leek soup, 4 sices of roast beef. At 152 calories a pack priced at £1.50p, not sure that is good value, but at least no carbs. Still nowhere near enough calories for the day, getting sick of this so had handful of brazil nuts, then Finished the packet off. Probably around 60g. Maybe not a good idea in retrospect.
dinner: Got sausages and red cabbage casserole out of the freezer to defrost - but sausages turned out to be spring rolls.
had two, and the red cabbage, but not together. Binned the remaining spring roll.
Supper: yoghurt and berries, my comfort food. bored and lonely rather than hungry.
 
Evening all. Ended up being a day of snacks as not had time for a meal
B : peanut & chocolate protein bar with coffee
No lunch as work was crazy so 3 coffees throughout the day
A handful of dry roasted peanuts when home from work - don’t like to eat a full meal when going swimming
Just got back so snacking on two babybel as really is late to eat properly. Feel the need to go make a cuppa too :)

@maglil55 -- Thanks for the welcome back. Also remember having a whole pheasant when I was a kid. My parents gave us girls the feet and we had fun pulling the tendons and observing the feet move.
@PenguinMum -- My absolute and utter admiration for sticking to low-carb in the most stressful of times.
@Brunneria -- Now you've gone and done it. I miss a snickers bars too. I wonder if I cut in 10 pieces and have one piece a day? Tempting but probably not.

Almost fasting today, but not quite. Woke up to higher than usual fbgs, thought about this and concluded that it was probably too much protein at night.

Breakfast: Two double decaffeinated espressos with cream and erythritol, a small piece of cheese.

Lunch: nothing.

Dinner: One and half glasses of wine. A very small serving of konjac noodles with eggplant, chicken, Thai basil in coconut milk and green curry.

Blood sugars down to 4.2 now.

@ziggy_w that same protein thing happened to me once recently, but I thought it was just too much food too late. It happened to be all cheese!

I wonder if one could self smoke it. We do some smoked stuff on the BBQ, and I have fired it up before now to use as a smoker, so might give that a go when at home.

Obviously a biscuit tin sized smoking chamber would likely be more practical, but in our hacienda, it tends to be "Go big or go home". :)
 
A lot of liquid today.

Lunch; beef bone broth with two thinly sliced mushrooms stirred in and the residue of of my Thai chili paste washed out from the pestle and mortar.

Dinner; Tom Yum Gai - hot and sour chicken soup.

Some seconds left if I get peckish a bit later on.

Well, last night's dinner for me was a fabulous Som Tum (papaya salad), with lots of nuts through it. It was the first time for it from this establishment, and unlike others, there was no obvious protein element, so for ease, I added Khai Jiao (a Thai omelette). All delicious, although the waitress's face was a picture when she noticed on her "everything ok?" visit to the table that I had added a great dollop of mayo to my plate.

The mayo didn't do anything for the culinary experience, but as I've dropped almost 2kg, I needed a bit more fat on there to try to stem the slippage. (I did spice up the mayo from the omnipresent sambals, so it wasn't too bad.)

@DKUKMod I have used similar bags these with success smoking fish on the barbeque. Thy probabley be ok for doing that cheesey stuff as well.

Ha ha, mayo, if it’s available, why not. - my daughter in law and my granddaughter would have mixed sambaI with tomato ketchup. I do like Thai omelettes. Seems that there is much diversity in what goes into one as long as the eggs are beaten until they surrender and then almost deep fried. I do mine in a saucepan.
 
Just seen avocado fries - Swoon Sisters Pablo's chicken coating - good to go for Sunday for my first trial. Unless anyone else has tried them with dire consequences as in dire of the rear or hospitalisation. Very little else could deter me from trying that idea.
