What have you eaten today? (Low carb forum)

Breakfast was the last of the meatballs, chopped into smaller pieces and simmered in their tomato gravy and then a couple of eggs broken into the liquid. Quite a lot there and it may have been sufficient for the day but I have prepped some cauliflower and will braise it underneath some chicken thighs and in some chicken stock. All in the tray, ready to go. I'll see how we go.

Had to take a correction dose of insulin this morning - BG rose to 15.9 so I thought I should take some action. Decided that it was safe to eat by 11.30 with BG at 6.9.
 
10ish a few spoons of kefir with my daily supplements and coffee with dash of cream
2ish one slice of Hilo low carb bread toasted and served with two eggs fried in butter followed by treat of one square of 90% lindt chocolate
5ish salmon in lemon butter with a spoon of peas and a couple of hm new potatoe chips. Also one small glass of dry white wine. About to have a DGF warmed low carb brownie served with some yoghurt.
Another busy day so fell back on easy favourites. Finished the kitchen but now about to tackle sorting our loft where we have stored so many things. when you deal with someone else's possessions after their death it can make you feel that you need to review your own stuff! As we have lots of stuff for charity now boxed up at the moment from our kitchen we thought we would also progress onto loft and then organise a pick up by a charity next week hopefully. That our weekend planned then!
 
@Riva_Roxaban I do hope the increased pain patches help. Cheers to Laphroaig, it’s Paul’s favourite too.
Black coffee all morning today.
L- pizza using one of the DGF wraps as a base. Cooked for just 10 mins. Very good and makes an excellent LoDough pizza base replacement. I know you were sorry to see them go @PenguinMum
D- H/m burger topped with Stilton with salad. Probably a DGF cookie with a cuppa later. IMG_1662.jpg

Noticed the wraps may be on sale again in the DGF Sunday evening restock so hoping to buy some to try they seem to be getting good reviews and very low carb. Love idea of a quick pizza replacement done quickly in air frier. I'm buying a new air fryer as took my old one over to autistic son a year ago as cook for him when caring for him . So looking forward to having an airfrier again at ours.

I completely agree about the air-fryer - between that and the Instant pot, I hardly use my oven at all now.
 
No breakfast and did about a 20 minutes session on the bike. Time flew as I watch Tim Spector on tou tube as talked about in another thread on here

Early lunch of hm veg soup, added camembert today. Pud of hm yoghurt with chopped walnuts and coffee chocolate, and stirred in the last of the brandy cream. I must not buy any more of that until next Christmas. Thank heaven its not available all year.

The coffee chocolate I've been enjoying in small amounts is this one. I prefer those made with a little real sugar to the awful ones made with sweetners. This one came back from the States with me, but with supplies running low I've found it here
I've not tried this supplier and has delivery costs but think it's available elsewhere. Other flavours too but watch the carbs in some of them
This expresso one is nicely strong so 1 square is enough at a time.

D: Spanish chicken with broccoli, cooked by hubby. 1 nut bar and a no alcohol lc beer as I try for dry January
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: LC pork pie, salad and coleslaw followed by DGF crimbo crumble and cream.

Small portions of baked beans on two slices of toast for breakfast.
Lamb forequater chops, mashed green vegies with a spalsh of mint sauce gravy for lunch
Four or five cold chicken wings, some cheese and pickled onions for supper at six.

Glass of single malt (back to my normal brand) before bed.

Pinched the mint for the sauce, out of the community garden we have here. ;)
 
Breakfast: 2 eggs scrambled, 1/2 tomato, 1 piece toast (dietician said I need carbs or I'd have left it out)
Lunch: Tinned salmon, chilli, red onion, lettuce, tomato, beetroot, grated carrot, feta cheese, balsamic vinegar
Dinner: Baked snapper (a white fish). Snapper, bok choy, chilli, onion, zucchini, lemon, pepper, garlic, ginger, fish sauce

*chilli for me is like a capsicum but hot. Like a pepper. Salt and pepper with all meals
 
Breakfast: made some little raspberry cream pots to put in the freezer and had about half of one from what was left in the bowl.

Chicken and vegetables in the pot with some chicken stock for soup later in the day.

Took some pain killers last night to try to ease this new pain in my foot. Still only slept for 3 hours but woke up with the foot feeling much better. We'll see how it goes. BG on the high side (between 10.4 FBG and 14.9 around 9 am but a little bit down after taking a correction dose).
 
No breakfast as back to PT in the park after about a month off. It was horrible and I know I’ll struggle to walk tomorrow!
Lunch- one of the new DGF wraps which arrived today. I really liked it. Texture just like an ordinary flour tortilla, taste was good - There was a hint of coconut as coconut flour is an ingredient, I know this won’t suit all tastes but it suited me. Filled it with chicken ( fried in coconut oil) chilli mayo and salad. 1.3 carbs each so this will definitely be a staple for me. Going to try it as a pizza base tomorrow.
D- beef short ribs ( recipe from kicking-carbs.com and on my CMT) we are doing dry January so I chucked a leftover 1/2 bottle of red in. Roast cauli and a baked mushroom with it. View attachment 58568
I see that Seriously Low Carb have introduced Low Carb Wraps as well.
 
A bit behind again.

Like @shelley262 and @DJC3 I rarely use my oven now, although the hob gets plenty of use alongside the air fryer and instant pot.

Have gravitated towards an earlier eating window - lunch/dinner has become breakfast/lunch. Not sure why but seems to be working well. Might be a coincidence but I’ve started sleeping better the past 10 days or so. Appetite also seems to have shrunk a bit.

Yesterday started with air fried pork belly pieces and ended with a cheese and pickle sandwich on LivLife bread.

Been trying a couple of breads out and that one has the second best carb content I’ve found (10.2g/100g, which is about 5g/100g less than hi-lo). The best carb wise is Schneider Brot protein bread (7.8g/100g) but that’s proved difficult to find recently and has a very different consistency.

Pickle was Asda own brand, which is so close to Branston in ingredients that I’d wager it’s made by Branston. It’s the one with the green label; they have another in the yellow label ‘value’ range but the first listed ingredient in that is sugar, so that wasn’t happening. Nor was the Lidl Branston rip-off which while similar in carbs to Branston, has a couple of ingredients I can’t bear in any quantity (ginger and cinnamon).

Today was smoked salmon and cream cheese with 2 fried eggs. Couldn’t finish the salmon so some went back into the fridge. Meal 2 was leftover lamb shoulder chopped into small pieces and fried with onions and courgette with a bit of grated cheese melted in. Delicious. In between was 2 squares Lidl 85% chocolate. Must be a record, that bar lasted 3 days :hilarious:.

5 January - bed 6.7 FBG 6.8 What I find very peculiar with this bug, is that my BGs are being quite well behaved. 2nd day back at school and I'm still worn out. Effects of the bug is lessening but I am still far from full recovery.

B. TAG

L. 4 rashers streaky bacon, 2 scrambled eggs and 2 slices of HiLo toasted. At least I'm hungry again.

D. Kept it easy, I got little dishes of scallop & prawns from Sainsbury's (I make it better myself but just didn't have the energy) The tiny pastry things on top are from GF pastry I had for grandson. Jus Roll GF puff pastry sheets It's the best GF pastry I've tasted. Still high in carbs but the little bits I had were fine.

I see that Seriously Low Carb have introduced Low Carb Wraps as well.

Yes, I saw they had. Similar price per wrap but the DGF ones are much lower carb (1.3 compared to 5 for SRSLY - I think thats how they style themselves now!) I really like the DGF ones so I’ll stick with them I think, but do post if you try the others.
 
@Goonergal I can still get Schneiderbrot in Asda here. Hope yours starts restocking soon. There’s very little else I like in Asda though so don’t go very often.

Today was Paul’s birthday so all the family went out for brunch at an American style diner. I had the vegetarian option ( Halloumi, mushrooms, eggs and tomato) with a side of bacon!
Toasted Not-cross bun and butter mid aft.
D- IP mince keema them some cheese and a few of my last remaining pack of M&S seedy crackers
 
@Goonergal I can still get Schneiderbrot in Asda here. Hope yours starts restocking soon. There’s very little else I like in Asda though so don’t go very often.
It’s often sold out here - went to a few branches before Xmas and left empty handed, but found some when I got back just before the new year. The LivLife is good too and has frozen well - slices separate easily. That came from Waitrose. The two are very different.

My other staples in Asda are pork belly strips and their extra thick double cream, which is very thick!
 
B: ff greek with seeds and nuts and a bit of grated chocolate
Yoga class
L: cheese and chorizo omelette, a cc choclate pot
Mid afternoon 20g weight of espresso dark chocolate, and 3 proper biscuits (I knew my good hba1c result would go to my head! Must rein it in soon)
D: 2 cauliflower soufflés with some of last nights tomato and chorizo sauce poured over. A cc chocolate pot

An hour later and thinking that was too many carbs in one go, swimmy head, racing pulse, feeling shivery. Either that or I'm sickening for something else
