What have you eaten today? (Low carb forum)

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Mushroom and spinach frittata made with grated Cheddar cheese, eggs, leeks, cream and oregano. Mixed green salad of lettuce, chicory, sweet cicely, celery and salad onions, dressed with an olive oil and balsamic vinaigrette, garlic and mint, topped with cashews roasted in butter.
Low carb pudding using milled flax seeds, home made granola, unsweetened almond milk and cream.
Water to drink.

D: Crab salad made with lettuce, fennel fronds, cherry tomatoes and salad onions dressed with olive oil and a touch of lemon juice, parsley and garlic, topped with toasted sunflower and pumpkin seeds.
 
Breakfast kefir with shelled hemp seeds
Lunch two boiled eggs with half a LC roll then a couple of garden strawberries with yoghurt and two squares of 100% chocolate
Mid pm my last LC ginger cookie
Dinner starter of ACV in water and a few nuts,then sea bream with lemon butter and dill, asparagus and a couple of hm, cooked from frozen , new potato 'chip's oven cooked in olive oil and glass of dry white wine. Just had decaffeinated coffee and LC cake.
 
First off @RosemaryJackson happy birthday. I hope you’ve had a lovely day, and I agree with @Annb you ‘sound’ much younger than 85!

BG has been all over the place recently. Went to bed on 8.1 for no reason I could figure. And it was still 6.9 by lunchtime today having only had black coffee and 1 cup of tea with a dash of milk. Bah!

Lunch- tin of tuna, 1/2 avocado, leaves, h/b egg and olives with ACV/EVOO dressing. DGF cake to follow.
Dinner should have been burgers but granddaughters said they’d rather have ‘those meatballs’ which means the DD Swedish meatball recipe. They love it, it is very tasty. I preceded mine with a bowl of salad all from the school polytunnel ( grated courgette, turnip, chard leaves and lettuce)

DGF order arrived this afternoon. The rolls do look rustic I agree @shelley262 - I’m looking forward to trying one tomorrow. I also bought the chilli chocolate. Boy it packs a punch! My mouth is still tingling a bit after trying a couple of squares. I love it, and I think the chilli will stop me eating the whole bar in one go ( unlike the nut one which I was powerless to resist)
 
Wednesday 21 June - bed 7.9 FBG 7.7. @DJC3 I'm coming to the conclusion that it is the humidity that is upsetting everything. I'm really enjoying different flavoured kebabs and REALLY enjoying these spicy halloumi things from Sainsbury's. I'll certainly be getting more of the Tandoori halloumi bites. I oiled the halloumi cubes, then coated with their Tandoori mix. Into a hot oven on a bit greaseproof on a baking sheet. It worked fine. I'll try it with the spicy halloumi chips next.

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. A bit of crustless quiche

D. Veal meatballs in tomato and chilli, garlic, mushrooms, spinach, and parmesan. 2 slices of SRSLY bread with spread to soak up the sauce. CC Little chocolate pot and raspberries.

The youngest was off school again. It's really knocked the stuffing out of him. He has at least started eating again. Not much, just a sandwich, but it's something. In the meantime, Hubby has gone down with the same lurgy - S&D! 6 times he was up during the night. I gave up at 6.30 am and got up. He's slept on and off all day, but at least he's drinking water and some lucazade. He's had a sandwich, so I hope He's over the worst. He's feeling a bit "unclean" as I've been putting on latex gloves and disinfecting the toilet, taps, etc, anytime he goes near. Told him I am just doing my best to avoid it. I think we're all cursed. What's the odds of one or more catching it before Saturday?20230621_185325.jpg
 
Staying with a friend who is trying to understand low carb. She's had gastric surgery and eats small amounts, but it seems to be small constant amounts of carbs. There are biscuits and chocolates everywhere!

Anyhow, I rustled up greek yoghurt blueberries and 6 walnuts for breakfast.

Dog walk to a lovely beach

Lettuce with pate, ham and very nice camzola cheese for lunch.

Mid afternoon nut bar

Dinner was mince bolognaise on cabbage followed by 4 sqs milk chocolate
Red wine
Dog walk about 40 minutes to another lovely beach.
 
Breakfast (shortly) will be a cheese omelette. BG is too high to risk anything more carby. Not that there is anything left in the house that is carby. Ran out of crumpets for Em yesterday so had to make pancakes, but made sure she took the extra ones home with her. Haven't even got any RyVita left.

2nd meal will be pork belly, baked in the little convection oven in the microwave. Probably some mushrooms and onions with it. Might have another go at cheese crisps as well.

Another group of visitors coming on Saturday so will have to put something together for them, although they will be coming after lunch and will be away by late afternoon, I imagine. My oatcakes went down well with a lady who believes her diabetes is helped by eating oats but not wheat. Not sure whether to make cakes for those who are not on special diets or just to make shortbread - which also goes down well.
 
Morning all. Thank you all for your good wishes. Yep, I had a lovely birthday, even a lemon drizzle birthday cake, very moreish! But I promise, I only had 1 piece lol. Yesterday I felt very pampered, loved and top of the world, if you know what I mean. @Annb and @DJC3, thank you!! I'm going to be 86 next time Ann, I'm proud to have got this far and still have a few marbles left! Back to basics, I had an all-day breakfast for lunch and I really don't think you need to know the rest of the day's eating! Today, a friend is taking me out to lunch and I'll let you know what I choose. (See what I mean? Pampered). I hope you all have as good a day as I had yesterday folks! :singing:
 
Neil bought me some Leeurdammer slices this morning. Of course I had to try it as soon as we got home (I was seeing a nurse about my legs - she put 3 layers of bandage on them to try to control the swelling). The cheese? Very mild flavour and kind of plasticky. Maybe it's just the way it's packed or maybe it will be better once it is melted but just now - not greatly impressed.

Yesterday FBG was 7 ( did drop to 5.9 after breakfast and a walk )
Breakfast was 2 poached eggs on wholemeal bread( crust ) ( butter ) and coffee ( 38 carbs )
Had 2 Ryvita didn't realise that they are 7 carbs each ! some cottage cheese and avocado and salad ( 30 carbs )
Mid afternoon strawberries double cream and a little dark 90% chocolate grated into the cream ...very yummy and only 10 carbs !
Evening meal ( quite late ) homemade chilli con carne with grated cheese mixed in ( 30 carbs roughly )
Total carbs for the day about 110
 
Today FBG was 7.2
Breakfast was 2 back rashers of bacon dab of brown fruity sauce two fried eggs ( in olive oil ) 2 wholemeal slices of bread and butter plus coffee.( 38 carbs )
Lunch was 2 ryvitas cottage cheese and some cheddar sliced tomato.( 18 carbs )
Mid afternoon strawberries cream and small amount of grated 90% dark chocolate ( 10 carbs )
Evening meal is going to be roast chicken ( too hot to cook really ) 2 small new potatoes green beans and butter or maybe a tad of gravy .( 25 / 30 carbs )
Total carbs just under a 100 .
I know many on the forum have far less carbs than me but at the moment this amount works for me ...when I stick to it :)

Ann I am full of admiration by how you persevere to eat well despite all the leg ache. I bet you make good shortbread..for your visitors of couse ;)
Today brekkie usual slice LC toast, butter, copious tea.
Lunch was a few leaves, 1 medium tomato, 2 inches cucumber, bit of bacon & cheese quiche.
Supper will be frozen cod fillet (couldn’t get chunky fngers again) and cauli cheese.
Attach g pic of flat reads I found in the Special Food aisle in Sainsbury, each 4g carbs which I might give a whirl with h/c Peking duck and salad.
