What have you eaten today? (Low carb forum)

I've been wondering about 'stuffing' for ages, as I've seen it mentioned as a christmassy thing, but in my Dutch mind you can stuff a bird with just about anything. And I did notice it was sometimes mentioned without adding what animal exactly was stuffed with this mysterious stuffing!

So 'stuffing' turns out to be basically the stuff you use to make meatballs, but either put in a bird or baked as it is, makes perfect sense to me. o_O :hilarious:

And speaking of turkeys, I had a nagging feeling I was forgetting something to do with my neighbour, and now I remember, too late.
One of the turkeys was attacked by a bird of prey a couple of days ago, so neighbour put it out of its misery. Yesterday he mentioned that what was salvable was currently sitting in two pots on the stove, so I planned a strategic visit today, and forgot all about it. :facepalm:
He'll be off for work for 4 days again at 5AM, not a chance of me having a taste of the poor bird.

Today was fish fillet a lá bordelaise (Aldi), and whatever veggies were still in my kitchen mixed with cream cheese. A small leek, a small onion and some bell pepper, not bad at all!

Just to add to the mix you may see stuffing referred to as dressing in North America
 
It's the small things which make us remember with bittersweet feelings.
@jessj , you're completely right, my meatballs are good, but never as good as those of my father, even though his were slightly different every time he made them.
@AndBreathe , all those veggies still don't look like they belong on this particular plate. Using it is a conscious choice every time, celebrating a loved colleague/friend, just like I sometimes choose my fathers mug for my morning coffee, or the one I associate with my old dog. Both father and dog passed away on dec 19 in different years. It's a time of year for remembering for me, and the plate fits in.

I just love it that she is "still here" in small ways, not really obvious, or in the faces to those who never knew her, or of her.

We'll be heading off to foreign climes early new year and I know that will be a bit bitter sweet. Last year I spent my time walking and photo spamming certain parts of south London with images beautiful and bizarre.

I'll still do my 10km a day as I really enjoyed checking in on my foreign "friends" en route, and it keeps the circulation going. I feel certain the little old lady cleaning fish will still think me insane for not wearing a hat. She gives up telling me off after about a month. :)

Stubborn, moi? Oh yeah!

Scrambled egg (3 large) and Mackerel
Hot no added sugar Ribena
Pork belly slices, broccoli and sugar snap peas, celeriac chips, tomato Polpa, 2 slices of buttered H/M Pannetone (made in new air fryer using normal almond flour and in a cake tin just to try but we have now bought a Pannetone tin and will buy the defatted superfine almond flour: recipe here - definitely omitted chocolate) , water, multi vitamin #Hungry

I didn't know there is defatted almond flour. I checked on amazon.in, found they sell defatted almond flour in my country too.
Want to try this since am doing low carb, low fat diet (for my high ldl).
 
Evening everyone,

Had a mug of cocoa with added cream first thing.

Late breakfast of 2 rashers of back bacon, one fried egg, and about half a dozen mushrooms sauteed in butter.

Mid afternoon had another cocoa with cream and a handful of walnuts

Early dinner of roast pork loin, steamed swede and celeriac mashed together with butter (think I'm now preferring this to any potato dish), white cabbage and broccoli.

May have 2 squares of 90% Lindt chocolate later.

Carbs so far 18g.
 
Breakfast was 3 scrambled eggs with the 2 year old smoked salmon
Walk with a friend
Coffee (tea for me) with more friends
L: 2 slice cheese on livlife bread

D: will be a lc chicken casserole cooked in the slow cooker yesterday, celery, onion, red wine, carrots added. Might do a packet rice for hubby with his.

Still feeling physically grotty, not sure if its stress or illness

Snap 're your breakfast but one rasher of bacon for me with my egg and cooked my mushrooms in olive oil as like the taste.
Then out all day - regular, but extra busy, caring day - places like Drs and pharmacy etc being closed much of next week means planning ahead to make sure enough meds etc to cover for next couple of weeks. Some complex planning and consults needed to get him through an upcoming holiday period.
Dinner when back ( had put slow cooker on before leaving home) slow cooker beef casserole served on bed of sweetheart cabbage - broke my usual no wine early in week as felt the need plus one week today it's Christmas so raised a small glass of red then pudding of low carb chocolate brownie and decaffeinated coffee.

Stress can be very impactful especially if affecting your sleep. I lost sleep just one night last night stressing about if certain vital meds would be there for our eldest and felt under weather especially first thing. You take care and try to put your feet up a bit if possible we can only be stretched so far!

@Antje77 I love it when ‘that’ plate makes an appearance. At this time of year in particular, everyday objects which have an association with good times and good people are a poignant reminder. Like you I make a conscious decision to use things that remind me of people, and take time for reflection.
Today was a day of leftovers.
Black coffee all morning.
Lunch- leftover roast chicken, chopped and mixed with h/m mayo and kimchi ( a bit like Coronation chicken) salami crisps to scoop. Last of the KC raspberry crumble with cream.
Dinner - same as yesterday: leftover roast pork, cauli cheese, green beans and chard. I seem incapable of cooking a Sunday roast for fewer than 8 people. There were only 2 of us yesterday!
2 glasses white wine &soda.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Clams with king prawns in garlicky white wine sauce with sun-dried tomatoes, spinach, onion, double cream, rosemary, butter and parmesan cheese.
Steamed French beans and mangetout with toasted pine nuts.
Garlic chestnut mushrooms.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, brown shrimps, lettuce, apple peel, celery and baby plum tomatoes with a dollop of home-made aioli for dipping, topped with parsley and toasted almonds.
Water to swallow tablets.

That was yesterday, so today I obviously had the other half of my fish fillet a lá bordelaise.
The veggies in cream cheese weren't enough for a full portion, so I added a lot of raw onion, some cream cheese, the leftovers of last weeks mayo based sauces which still smelled and tasted good, a can of tuna, and an egg, and put the mixture in a large halved bell pepper to bake.

One half of bell pepper was more than enough so I have the other half left for tomorrow. Sometimes this using up leftovers seems a neverending story. I also have enough of the mixture left to fill yet a second bell pepper, I am really bad at gauging portions when cooking...

Please tell me about instant mash - I vaguely remember some chat in here about it a while ago. I’ve never had it, is it just dried potato and do you think that turns it into resistant starch? Or is it the addition of lots of butter that stops BG spike do you think?

Regarding the instant mash I think it is a mix of factors. Possibly I am able to metabolise a small amount efficiently now. Also one can weigh out a set amount of flakes/powder rather than having say one potato. Thirdly, the butter must help - I would never normally put butter in mashed potatoes. I think like most things the effect is highly individual. Thanks for the good wishes for the gels.
