What have you eaten today? (Low carb forum)

Small kefir with supplements before heading out.
Late lunch kimchi with cheese and LC seeded crackers followed by a few squares of 100% chocolate
Dinner made a frittata and served with salad - photos of the dinner before sharing plus served. Two pieces now stacked in fridge for tomorrow lunchtime it's delicious cold as well as hot

Thursday 1 February - bed 7.4 FBG 7.7. Last of the furniture delivery today. I was at a morning meeting to assist with the grandson's subject choices. It was quite interesting as he is adamant he does not want a "fun" subject in there. He says it serves no useful purpose. I was astonished to see that beekeeping was an option. I didn't even know there were hives at the school.

B. TAG and after the school meeting, 2 slices of SRSLY toast with brisket & coleslaw. Benecol dairy free.

L. 1/2 a fulfil bar

D. A rehash of the chicken dish I made last week. Thighs & drumsticks. Cauliflower fried rice and added peas, sliced peppers, and mushrooms. Sauce was honey & mustard (Skinny Food Co Honey). CC little chocolate pot.
Gin and soda x 2!
Your grandson has a point but there are also times as an adult that I wish I had taken advantage of some of the non academic but useful life skills that were available in school but as an adult can be costly to learn.
 
My son chose cooking as his 'fun' option. Still serves him much better than most of his academic subjects 15 years later :)

Breakfast of full fat (10%) yoghurt with seeds and 8 frozen blackberries

Exercise class followed by tea with friends.

L: 1 slice yesterday leftover pork belly. Mushroom omelette with cheese

Feeling miserable and low, hit the Christmas cupboard and devoured 5 Large full sugar chocolates

D: cold chicken breast with hashed veg left from yesterday, cabbage, mushrooms, green beans , swede.
Small coffee ice cream.

Evening @shelley262. Yes, frittatas are so versatile . Made with whatever low carb vegetables you have in the fridge, they're equally nice served hot with cooked veggies or cold with salad; handy for packed lunches too.

You're obviously a kimchi enthusiast. Can I make kimchi with pointed cabbage, please or does chinese cabbage work better?
 
Same components as the last two days, different meal. :)

I added the mixed veggies (green beans, onion, bell pepper, Chinese cabbage) to the pot of peanut sauce, and added water, some Indonesian hot sauce and half a stock cube to make a peanut and veggie soup. :hungry:
I also fried a little cubed cucumber with soy sauce to add, no egg today because I ate the last egg yesterday.

With more of the posrk belly pieces marinated in garlic and black bean sauce, didn't burn them. :joyful:

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: salmon fillets with peppercorn sauce, broccoli, cauliflower and Brussel.

@Thornliebank , regarding protein bars, my favourites are Grenade Carb Killas and Smart PHD bars, Holland and Barrett and Aldi do some cheaper ones that are nice too.

Hi you can make kimchi with any veggies doesn't even have to have cabbage in but if you like cabbage go for one you like.
Prof Tim Spector says you can just put different veggies in a jar together
And this is often what I do just a few leftovers but I always flavour with things like tumeric, ginger root and garlic. I love beetroot in kimchi.

I make a quick version of porridge from the Freshwell site. 1tbsp coconut flour, 1tbsp flaxseeds,1tbsp chia seeds, no sugar almond milk to the consistency you like. 2mins in microwave, stir halfway through. I usually add cinnamon, berries, sometimes a blob of greek yoghurt.

Yesterday
B Yog,blueberries,flaked coconut
L Cottage cheese,avocado salad
D Salmon, celeriac mash,broccoli

Thanks for this. I’ve had the Freshwell App for ages but I’ve never thought of looking at recipes on it.
 
Evening all

Miraculously, my oregano has started to sprout (never known that to happen in February), and decided to make use of the leaves in today's lunch. Once cooked, it didn't have the same intensity of flavour as oregano in season, although it tasted fine in salad this evening.

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Espinacas con garbanzos using spinach, kale, chick peas, Padrón chillies, almonds, macadamias, full fat Greek yoghurt, tomato purée, garlic, paprika, cumin seeds, olive oil and touch of red wine vinegar.(omitting the traditional toasted bread cubes from mine).
Marinated carrots cut on the diagonal with garlic, ground cumin, paprika, oregano and apple cider vinegar
Steamed French beans and mangetout smothered with butter.
Skipped pud
Water to drink

D: Seafood salad made with brown shrimps, mussels, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes and oregano with a dollop of aioli for dipping, topped with toasted pistachios.
Water to swallow tablets.
 
No much again today (though I shan't waste away with the belly on me)

Few tiny tomatoes so didn't have an empty stomach taking pills.

Just had blitzed up cauliflower, fried with tinned mackerel, 3 tiny tomatoes, 4 sprouts, bunch of spices.

Fancied another coffee though but just looked at the time. Probably for the best I don't.
 
Morning.Yesterday was an up and down emotional day for me which, just like the "old days" left me craving sweet things all day.
Yesterday's food-
Breakfast was FF greek and peanut butter granola
Lunch was a half bag of cauliflour rice and a chicken thigh with a little red leicester followed by an atkins peanut butter cup
Random Nick's peanut and fudge bar at 3pm with tea
Dinner was a gammon steak with cauliflour cheese followed by a slice of ketorama almond cake with a splash of cream.

That's the first time I've been over 20 carbs since I started but I'm not beating myself up as I count 21.
 
Hi All surprised I haven’t been disqualified for my random postings. No excuse other than distraction and poor time management. I have been online sorting out our holiday in June and researching for our new bathroom happening next month.
So back on topic..
Sunday usual brekkie of slice LC toast, copious tea.
Lunch was a quickly pulled together prawn cocktail as was concentrating on 9 week old grandson who is now smiling and babbling. Magic!
Supper was roast chicken, broccoli and cauli cheese. Small spoon of Mr P’s baked beans.
Yesterday same brekkie. Then used chicken carcass to make stock and then leek & broccoli broth (no thickener) but lovely to drink from a mug so had two mugs for lunch.
Supper was leftovers cold chicken, mixed veg.
I have a gin & soda when I feel like it these days. Wine doesn’t agree with me anymore except in summer I do like a glass of very cold Provence rose.
 
Morning all. I think I'll forget all about yesterday's food! I had a really bad day. So today I am having diced beef in a casserole with veg. And I'm having salmon with mayo for tea and a chia pudding. Then I shall pray that I can stick to it! After such a wonderful weekend, I've come down with a thump. See you tomorrow and hopefully with better news. A big, big hug for anyone who need one. :)
