The NLC pasta is one of the better ones I have to say. I prefer it as a carbonara, and I like that you can get it in 100g bags. I still think the best ever was Oomi noodles as a substitute, but they went capute during lockdown. Lidl did their version of the oomi noodles, but, like their LC rolls (remember the triangular one), they vanished never to be seen again!

Oh I miss those huge Lidl rolls. I remember @ziggy_w coming over from Germany for a DCUK meet up with a suitcase full of them for us as they were still available there!

Can I join the what you ate team? I read the thread every day and have had lots of inspiration but have never posted because it often (to me) seems a bit "fancy" (pre-diagnosis my family had their main from one drawer in the freezer and their side from another)
This morning I was thinking one, what I'm eating is improving and two, what I'm eating might let another newbie see you can achieve good numbers without being an ace cook. (it also means people can let me know if they spot glaring errors)
So plain fayre and dirty keto soft drinks it is.

Yesterday- breakfast was 2 rashers of streaky bacon and an egg fried in olive oil with a slice of heylo bread. (fried bread yum)
lunch was 4 rollitos, a hard boiled egg and a baby bel.
dinner was some seasoned beef cubes in the air fryer with half a bag of cauliflour rice mixed in mayo followed by a wee chunk of stilton.

There will be another meal today. It will be a chicken thigh with Brussels sprouts.

Feeling a bit frazzled and headachey today - must be the antibiotics. Very difficult to stay awake but I have yet another pile of paperwork to sort out. Dumped quite a lot but there's lots that should have been filed away from years back. At least I found my lost birth and marriage certificates - in a letter claiming my merchant navy pension as Tom's widow - that was over 6 years ago. That's how long this particular basket of paper has been waiting to get sorted.

must be tough sorting through so much paperwork but how lovely finding some lost vital documentation - makes it worth while. Particularly tough when you're not feeling good.

Don't usually put on photos of my breakfast but I'd said to @IanBish that I'd put on photos of my roll from the low carb company. I slice them so can cut them into soilders!

I tend to have this for breakfast about twice a week.I keep my rolls in freezer and then take one out to thaw overnight.
Lunch had a few leftover some ham and chicken with kimchi
Dinner hm chicken curry with coriander and mint raita I'm also sipping a gin with soda water.

I realised I had gradually fallen into the habit of having an alcoholic drink every evening.
Last I had this week was Sunday. Am going to go dry until this Sunday, just to prove I can.
If you see me creeping up towards daily again, please nudge me. It seems too easy a habit to fall into. Thank you!

I’m with you @MrsA2 it’s a very easy habit to slip into. I am constantly having to pull myself up about it. Most of the time it’s just a glass of wine with dinner but it so easily slips into a daily occurrence.

Welcome @Margarett it’s lovely to have you here. Please don’t worry about not having ‘fancy’ enough food. I find that cooking from scratch gives me more control over the carb count but meat/fish/eggs and a bit of veg can be as plain and simple as you like. I think for most people it’s a gradual learning curve. Seeing what works for each of us in terms of BG response, affordability and time available. It’s also really helpful when someone spots a new low carb food and post about it here.
Todays food-
B- scrambled eggs on Schneiderbrot protein bread
L/D- Slow roast shoulder of lamb, celeriac dauphinoise, sprouts with bacon, garlic& lemon green beans and steamed broccoli. Couple of glasses of wine.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, hard boiled eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.

They look great on the plate. And in the egg. Lots of butter too.

Myself, for tea, I had chicken tikka masala, with cauliflower rice fried in butter and garlic.

You don't need to ask - just dive in, I did!

My pictures are hardly fancy, and often pretty much plain. I haven't yet reached the heights of @LivingLightly's recipes (I wish I could see the pictures).

Plain fayre is fine.

Couple of black coffees to start the day, goat milk kefir mid morning.
L- cold chicken breast with spinach, red pepper and kimchi. Warm DGF Crimbo Crumble with clotted cream ( heavenly)
D- leftover chicken stroganoff, supposed to be with cauli rice but I’m lazy and just chopped it up a bit rather than ricing it. Sauteed with red onions and some of the outer cauli leaves. Red wine. View attachment 65890
Stroganoff is one of these "even better second day" dishes.

Brunch - 3 cheesey scrambled eggs, washed down with a mug of earl grey tea and half of a fudged up grenade bar

Dinner - 2 small avocados (morrisons savers, not very good so I will give a miss next time), chili salmon roasted in the air fryer with brussel sprouts with lots of butter, broccoli and a little carrot. Kefir with chia and flaxseeds mixed thru, topped with raspberries and blueberries. 2 squares of lindtt 90%

How do yous make cauliflower rice tasty?
I vary how I do cauliflower rice. Sometimes I start it off in melted butter, always with sliced spring onion, and chopped parsley. From there it depends what I'm having it with. With chicken, I'd add some peas and some chicken stock. A Chinese dish, I add peas and a little tamari soy. I've also added exotic mushrooms, parmesan, cooked in a mushroom or chicken stock, and some mozzarella at the end.

I made a ragu and had it with roast cauliflower this evening. Trouble is it was a bit watery and I obviously can’t thicken it with flour like I used to. I don’t want to use xantham gum as it always turns a bit jelly-fied. Any suggestions please?
I've never thickened it. I just let it reduce and thicken naturally.

Todays breakfast was bacon and egg on a delicious treat of a soft white roll. Lunch was grilled chicken thigh with Greek salad. Dinner will be another leftover Once upon a Chef salmon cake made without the Panko breadcrumbs, with some homemade tartar sauce. I’m on the lookout for low carb recipes, other than pesto, to use up a large bunch of fresh basil…anyone have suggestions please?

Wow! Thanks for the compliment. I'm always on the lookout for mouthwatering low carb recipes and this thread provides heaps of inspiration. Afraid I'm no photographer though. When I do pick up a camera, it's usually to capture a shot of an insect or other little beasty I can't identify.
