What have you eaten today? (Low carb forum)

I had a fairly carby day today. I didn't have time to do food for work, so had to have a tuna sandwich for lunch. So for dinner this evening I made a chicken and mushroom vindaloo, with a small portion of wild rice (which isn't actually rice, apparently). I used chicken thighs, which I like, but not in a curry necessarily. That notwithstanding it was quite nice, but not quite as hot as I was expecting.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Walnut and mushroom roast made with onions, eggs and flax 'egg', (customry breadcrumbs omitted) garlic, vegetable stock and rosemary.
Vegetarian gravy
Steamed purple sprouting broccoli smothered with butter.
Carrots cut on the diagonal, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad made with mussels and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, fennel fronds and salad onions, with a dollop of home-made aioli for dipping, topped with roasted macadamia nuts..
Water to wash down tablets.
 
Bought a lovely piece of wild salmon on a reduced offer today cooked it in a baking parchment parcel in the oven

Sprinkled with Dill and cooked with lemon and butter. Served with local asparagus delicious.
I love to bake salmon en papillotte @Shelley62. France's answer to cooking in a Romertopf perhaps?

Haven't tried baking wild salmon this way. I bet it was mouth-wateringly delicious and it's definitely on my to-do list. I find fennel fronds work well. (Can never remember to sow dill).

Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast.
Celery sticks and baby plum tomatoes with chicory boats for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds, hazelnuts and brazils.
Water to drink.

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions, Halkidiki olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with pecan halves.
Water to wash down tablets.
 
Talking and drinking with neighbour at a fire, and we both forgot to eat.
I had some pork scratchings with aioli at around 1 am, he had coated peanuts.

We'll do better today, I bought a large bag of asparagus! :hungry:
Yup, we did much, much better today!

Dinner for two:
- One Indian runner duck who ran into fate yesterday evening. We had too many males so the females were having a hard time, and this one simply presented itself to be caught while we were enjoying a fire in the garden, so...
- 750 grams of asparagus.
- 6 or 7 small chicken eggs, mashed with butter and salt and pepper, served in something my neighbour stole when he was in hospital last year.

No individual dishes so very little washing up to do: One plate, one spoon, one fork, and one ridiculous bowl, we simply ate from opposite sides of the table.

I'm very happy with a neighbour who feels that a meal without potatoes is a perfectly fine meal, it's so easy to share meals with him!

Another good way with wild salmon is to grill it on a plank of cedar that has been pre soaked in water. A few slices of lemon and either a bit of butter or olive drizzled on top as it cooks. My daughters also love a local recipe that glazes the planked salmon with a reduction of maple syrup and soy sauce as it grills. I used to love it……

Thank you for that suggestion @MommaE. I suppose your local recipe using reduced maple syrup and soy sauce is off the menu now, but that still leaves us with some delicious low carb options.
