What have you eaten today? (Low carb forum)

Breakfast kefir then bacon and egg
Lunch low carb crackers with a few spoons of hummus then a few garden berries and hm
Yoghurt
Dinner lowcarb pizza base topped with hm passata plus some chicken, mushrooms and Serrano ham topped with grated vintage cheese served with salads.

Made sugar free jelly for pudding not had for ages and really enjoyed - enough for a few days.

Morning all. Monday lunch at the village hall today (comes round quickly!). No idea what it will be, I'll let you know tomorrow. Yesterday I stuck with boiled eggs and a couple of tomatoes. Drank lots of water. Have a good week everyone. :)
Well, as a rule, you can't go wrong with boiled eggs @RosemaryJackson. Hope today's mystery lunch at the village hall is diabetic-friendly and settles all right.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and three crevettes all seasoned with a good grindings of black pepper.
Water to swallow tablets.
Espresso.

L: Baked halloumi and sweet red peppers.
Hummus with Kalamata olives.
Salad using cucumber, salad burnet, rocket, salad onions, raspberries, strawberry halves and mint, dressed with olive oil, garlic, a touch of lemon juice and topped with toasted sesame seeds.
Water to drink.
Skipped pud.

D Seafood salad made with brown shrimps and mussels, lettuce, vine tomatoes, celery, salad onions and mustard cress, with a dollop of aioli for dipping, topped with flat-leaf parsley and pistachios.
Water to wash down tablets.
 
B poached egg on mashed avocado on a slice of toasted Nordic bread.
L- leftover tuna muffin and a spicy coated chicken strip from yesterday’s picnic. Sort of cheesecake to follow ( strawberries mashed with cream cheese and a bit of sour cream)
D beef curry with cauli rice cooked in coconut oil and cumin seeds. The curry sauce was made using this recipe, it’s delicious and very easy - I try to keep a batch in the freezer so I can just add cooked meat/veg/prawns etc if I need a meal in a hurry https://ketodietapp.com/Blog/search?q=Curry simmer sauceIMG_1721684979.530552.jpg
 
Yesterdays menu at lunch club. Tomato soup to start; Main course; 2 scoops of mashed potato, carrots, cabbage and a pork steak; I took my own sugar-free jelly for afters because they always have sponge and custard or something like that. Today I have a chicken breast which I'm going to stuff with a babybel and airfry, plus salad. Hopefully the sun will stay out so enjoy. :happy:
 
Usual visit to M&S this morning after school run, picked up a lot of yellow sticker fish today so freezer is comfortably full and todays meals sorted. I also remembered to get the grain free granola @Rachox mentioned so that was breakfast with a dollop of Greek yoghurt. The granola is excellent.
L- smoked salmon and avocado
D- poached salmon fillet with salad topped with pumpkin seeds. Finished with what the greatly missed Goonergal called Lazy Mousse ( melted 100% chocolate stirred into extra thick cream)

Unfortunately, potatoes contain too much starch for some of us @RosemaryJackson. I cannot handle spuds in any form, so take the easy route and avoid them altogether.
 
@DJC3 I’m glad the M&S granola was good. Does it have a long expiry? I might buy a box for any occasion I won’t have coconut ‘porridge’. Does such an occasion exist?! :joyful:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgette.

Evening all

Today:

Water to swallow tablet.
Espresso.

L: Ceviche using haddock fillets cured with lime juice, zest and salad onions, then combined with vine tomatoes, Padrón chillies, cucumber, Kalamata olives, chopped coriander and olive oil.
Salad made with watercress, lettuce, cherry tomatoes, radishes, Romano peppers, Welsh onions and Halkidiki olives, topped with toasted almonds and dressed with an olive oil, oregano, garlic and balsamic vinaigrette.
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, rocket, vine tomatoes, celery, red and yellow bell peppers, Halkidiki olives and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted pistachio nuts.
Water to wash down tablets.
 
Finally a day of cooking again, after 5 days of eating with neighbours. The last 3 of those 5 days were low carb: two days of barbecue and salad, and only a small bite for taste of the more carby dishes like birthday cake, German kartoffelsalat made by the 80 years old mum of our host (not something to refuse), and a very small piece of bread. Last day was a Moroccan tajine dish with meat, veggies, tomatoes and potatoes, but it was very easy to avoid the potatoes and no-one minds, they know my eating habits. :joyful:
Best not to talk about the first two days in this section of the forum though.

Today was something easy and experimental: An onion, pointed cabbage, garlic, shawarma, cream cheese, and some spices and tomato paste, very tasty. :hungry:

Mid afternoon: coffee shop coconut cappuccino and another carb killa bar.
Dinner: cheese and mushroom omelette (a bit scuffy this one!)
