What have you eaten today? (Low carb forum)

Out and about all morning so just 2 black coffees and 2 glasses of water until 13:30
L- a no prep lunch I learned on my short foray into carnivore woe: Pork puffs ( lighter and easier to eat than scratchings) used to scoop up cream cheese. It’s very satisfying. Some almonds, toasted coconut chips and Greek yoghurt to follow.
D- beef stroganoff/goulash ( made up recipe) with green beans. 1 small glass red wine with a small piece of cheddar. IMG_1722289552.350004.jpg
 
It's made in Sussex and available from Sainsbury's and Waitrose @IanBish.
P.S. Perhaps it's an acquired taste @IanBish, but quickly grew on me. Once I'd tried it, nothing else would do. It's rich and intense, so a little goes a long way.

There's no added sugar, no gluten, soya free and made without dairy ingredients. Ideal if you follow a keto or low carb lifestyle, also perfect for those with food intolerances, I imagine.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla Carbonara made with chestnut mushrooms, eggs, double cream, Parmesan, nutmeg, butter and spiralised courgettes, topped with extra Parmesan and parsley.
Steamed French beans and mangetout smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad made with crab, mussels, lettuce, finely shredded red cabbage, apple peel, celery, baby plum tomatoes, salad onions, kalamata olives and mint, with a dollop of home-made aioli for dipping, topped with toasted pistachios.
Water to wash down tablets.
 
Thank you to @Rachox for spottting the grain free low carb granola from M and S and to @DJC3 for trying it and reporting back favourably. I got some and had for my brekkie today with some hm kefir and yoghurt and a few garden berries.

I limited my portion to 10g as trying for first time - it is 8.2 grams per 100g so 10grams is less than one gram of carb I think ! Obviously had some more carbs in hm kefir and yoghurt and my three berries - but no impact on my bgs so I've found ideal breakfast for hot days like today. Made a change from my usual eggs and it tasted delicious.
no lunch as out all day - although I took a keto collective cookie with me to try. They are only 1.5g of carb each and no artificial sweetners just chicory fibre for sweetness and one went well with coffee.
dinner - busy and hot so went for a quick cheese omelette with salads including some of my first garden tomatoes

Evening all

Today:

My husband listened to the radio bulletin and decided we would have 'gazpacho' weather today. (My better half seems to enjoy preparing gazpacho as long as I don't press him to make it too often.) With English tomatoes at their best now, this sounded an excellent plan. With another scorcher in prospect here in London, I made ceviche to avoid unwanted heat in my kitchen.

L: Appetiser: gazpacho
Ceviche
made with lemon sole fillets cured with lemon juice, zest and Welsh onions, then combined with tomatoes, Padron chillies, cucumber, Kalamata and Halkidiki olives, chopped coriander and olive oil.
Salad made with lettuce, home grown toms, radishes, Romano peppers and Welsh onions, dressed with an olive oil, mint, garlic and balsamic vinaigrette and topped with toasted almonds.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns, mussels, lettuce, sweet cicely, cherry tomatoes, celery and salad onions dressed with home-made aioli topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.
 
Glad you enjoyed the m&S granola too @shelley262 , I also have less than the recommended portion size of 45g and find it excellent as a crunchy yoghurt topper.
Today I had a brunch of air fried beef trimmings.
Late lunch of a mixed salad topped with seeds and dukkah.
Dinner was fish pie topped with just grated cheese, no mash. Served with steamed broccoli. 1 glass dry white wine.
There was enough fish pie left for my lunch tomorrow but I forgot to shut the kitchen door and visiting dog could reach the counter and sampled it! IMG_1722375089.971211.jpg
 
Morning all. I had the tuna and vinaigrette for my tea yesterday and scrambled eggs with spring onions and tomatoes for lunch. No carbs. Today I am eating out and will have an omelette with salad. No idea yet what I will have for my tea. @shelley262, did you make the Keto cookies yourself? I miss something sweet to finish a meal and you can have too much sf jelly!

Hiya no not homemade they are made by keto collective

But I found them a bit cheaper on Amazon

I used to make a lot of low carb sweet treats myself but found that ingredients expensive and made too many so ate too many! These are individually wrapped and relatively simple list of ingredients plus no artificial sweetners just chicory fibre for sweetness.
 
Couple of black coffees this morning and a long shady woodland dog walk before it got too hot.
Elevenses- DGF cake and tea.
Lunch- slice of beef and cheese with salad
D- M&S Greek style pork kebabs with a large mixed salad. Lazy blueberry cheesecake to follow ( spoonful of cream cheese mixed with same of yoghurt and topped with blueberries) IMG_1722454518.054968.jpg
