Did a buffet for a small family birthday get together - my birthday is tomorrow but had to be weekend as youngest son busy at work on the day. Both my meals today were from the buffet - lunch is pictured but had similar just now for dinner but with additional home cooked ham and some cheese

Yes, now you come to mention it @DJC3, I'm fairly sure my recipe at #63,231 started life at Diet Doctor. You don't have to be a member to access this and scores of low carb recipe ideas.I didnt mix the cheese in with the egg, just sprinkled a handful or 2 into a non stick pan until it was melted and bubbling, then poured eggs on top.
