Thanks @LivingLightly! Much appreciated. The frozen chicken comes with skin off and the dog also likes it but I'll probably buy a fresh one soon and do a proper roast. I can't stand cauliflower: I was permanently put off by cauliflower in school dinnersWelcome @Calderbloke to this thread for diabetic foodies.
From a diabetic point of view, there's no need to remove chicken skin; fats and oils will help fill you up and not affect your blood glucose levels.
OTOH, basmati rice is a carbohydrate with next to no nutritional value. Some low carbers miss rice, but cauliflower rice satisfies that longing. It's also a great way to increase the vegetable content and nutritional value of a meal and that benefits the whole family, whether diabetic or not.

I might give cauliflower rice another go with the onion ....because usually I find it very bland .For dinner tonight I had a defrosted, home made chicken curry, on a bed of cauliflower rice fried with finely-chopped mushrooms and a small diced onion. It was hot, but I don't mind that. And the diced onion elevated the cauliflower rice to a whole new level. I'll definitely have that again with something else.

For lunch I had sardines and Greek yoghurt (not together, though). Dinner was a kind of experiment. I chopped up some hispi cabbage, some Cavalo Nero, a few rashers of bacon, and fried them up with onions and garlic, and added a few splashes of Worcestershire sauce. It could do with a few tweaks, but it wasn't half bad.

Thank you. It could have been a bit crunchier, with a few more onions maybe, but it did work.I like the sound and look of this dish. I love it when an experimental meal works.
However, tinned sardines mixed with yoghurt, or better still cream cheese, can make a tasty dip.For lunch I had sardines and Greek yoghurt (not together, though).
Sounds like a very pleasant treatAn old friend was celebrating her birthday today; mine was last Sunday. In the past, we've taken it in turns to cook a joint celebration dinner somewhere between the two, but this year we decided on a slap-up lunch at a favourite eatery.
B: two poached eggs topped with a pat of butter, avocado and three crevettes with a good grinding of black pepper.
Water to swallow tablet.
Espresso.
L: Aperitif: gin on the rocks with a slice of lemon.
Scallops sautéed in butter with garlic and chopped, flat-leaf parsley, served with lamb's lettuce, rocket, cucumber, basil and tomato accompanied by a vinaigrette-style salad dressing.
Water to drink.
Roast pheasant served with steamed carrot batons, calabrese and French beans.
Spinach with garlic and butter plus deep fried zucchini matchsticks.
Affogato con espresso.
Espresso
Brandy on the house.
D: Seafood salad made with brown shrimps and kalamari, lettuce, baby plum tomatoes, celery, Romano peppers, mint and salad onions dressed with an olive oil, balsamic and garlic vinaigrette, topped with toasted almonds.
Water to wash down tablets.
Sadly, school meals have been responsible for putting a lot of children off vegetables @Calderbloke. The soggy, overcooked cabbage and cauliflower were often boiled to death, but they don't have to be. Cooked al dente, veg retains more flavour and nutrients.Thanks @LivingLightly! Much appreciated.
