What have you eaten today? (Low carb forum)

Breakfast kefir then fried some mushrooms in olive oil served on low carb toast with a fried egg
Early afternoon a few nuts and two squares of 90% chocolate
Dinner Sea bream with cauliflower cheese followed by DGF low carb chrimbo crumble..

I’ve managed to forget to post for a couple of days somehow. Back in the routine, breakfast of scrambled eggs topped with feta, avocado and fermented red cabbage.
Lunch-Leftover turkey and salad. DGF crumble to follow. ( I cooked a turkey breast yesterday, a bit previous I know but it was filling up space in my freezer and we have the Christmas turkey arriving in less than 3 weeks. I think this one will last til then - it’s huge and I’m already fed up with turkey!)!
Dinner- Turkey ham and mushroom pie ( fat head dough for top pie crust) served with cabbage cooked in butter. Few squares Montezuma’s AB

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: omelette night! Filled with cheese, tomatoes and mushrooms.

Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: creamy garlic prawns with sliced sautéed courgette.

Just my usual morning kefir before heading out (I always add a teaspoon of wild fish oil and two spoons of organic extra virgin olive oil to my daily kefir)
Lunch two egg mushroom and cheese omelette served with kimchi

Early dinner, before heading out to meet friends for a drink, pork casserole with cauliflower cheese. One large red wine while out and now home having a decaffeinated coffee.

Lunch handful of nuts, some cheese and low carb seeded crackers.
there are some lovely big cauliflowers for sale at the moment so I'm freezing a few, broken into florets - as I use a few frozen florets then add a splash of double cream and grated cheese to make an easy but delicious cauliflower cheese. Photo of cauliflower cheese ready to pop in oven and cauliflower florets ready for open freezing - once frozen stored in bag in freezer.

Thank you. I feel much better today but I look worse with a black eye caused when I conked out and face planted the bathroom floor!
Re your frozen cauli cheese do you put the raw florets cream and cheese together in the freezer then just pop it in the oven still frozen?

Dinner: avocado and prawns in Marie Rose sauce with coleslaw. Bad planning, prawns two nights in a row!

No I pop frozen florets ( from my bag of frozen florets) into oven dish and add cream and cheese before popping it into oven.
Gosh your faint sounds dramatic thinking of you take care.

Thanks, I’ll try this. Like you, I have taken advantage of the plentiful local cauliflowers available at the moment, but it’s hard for the two of us to get through a whole one while it’s still fresh.

I pop one into a food processor to make "rice" and freeze in portions. Or make and cook the cauliflower cheese, then freeze it
