What have you eaten today? (Low carb forum)

B- mozzarella and cherry tomato omelette with avocado.
L- H/m mushroom soup followed by a DGF Crimbo Crumble.
D-Haddock with creamy, cheesy pepper and tomato sauce, tenderstem broccoli.

After a busy and quite stressful day at work, I didn't feel like cooking. So I bought a small special fried rice and fried up some mushrooms and frankfurters to mix in, along with some peas. It felt a bit like cooking. I tested my blood glucose just before eating (5.1) and will test it again later.

EDIT: it was 6.5 two hours later, so not too bad.

Breakfast kefir then cooked a couple of tomatoes in olive oil served on low carb toast with a fried egg.
Lunch cheese with a few nuts and low carb crackers followed by two squares of 90% chocolate
Dinner Sea bream served with peas and glass of dry white wine followed by DGF low carb chrimbo crumble
 
B- 2 boiled eggs with microwave cheese ‘crackers’
L- L/c roll filled with beef and sauerkraut. DGF Crimbo crumble and cream.
Dinner was terrible! I ordered some low carb flour from the low Carb Food Co. I decided I’d try to make pastry with it as I really fancied a sausage roll. It turns out there’s a reason they don’t have any pies or pastry dishes in their recipe index. I think the flour is best for bread or cakes. The pastry was rock hard - we had to hack it off the sausages.
I made some little cheese and onion tartlets with the leftover pastry they weren’t quite so bad as the pastry was thinner. I shan’t make it again though.

I read of good results from this company who have developed their own lc flour
Haven't tried it myself yet , but they have a good following and active lc community on facebook

Heard good stuff about their roti and wrap mixes (panda) I'm going to try in January once I run out of DGF wraps as DGF are stopping making wraps and rotis.

Thank you, is this the same panda flour the keto fitness club use I wonder?
I’m pleased to see they have pastry recipes and interestingly they use equal weights of flour and fat rather than 1/2 fat to flour ratio I use for normal pastry. This could have affected my results with the LC flour I used. I’m not about to try again with it though.

Yesterday I had a sourdough roast beef sandwich, and my blood sugar went up to 8.3 two hours later. Maybe it was too much bread, or maybe it was because I was a bit stressed and tired. So today I had scrambled eggs for lunch, and for dinner I had a spicy beef bolognese on a bed of fried cauliflower rice, onions and mushrooms. It may look like a curry, but it isn't.
