What have you eaten today? (Low carb forum)

Breakfast kefir then two poached eggs on low carb toast
Lunch cheese and low carb seeded crackers followed by hm LC chocolate brownie
Dinner cooked salmon in oven with sumac, lemon and butter wrapped in parcel. Got a wonderful piece of salmon reduced - photo just before wrapping in baking parchment

Served my portion when cooked with a spoon of peas.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: low carb roll with smudge jalapeño jam and cream cheese with coleslaw.

Morning all. Beautiful day again. I love my 2 Heck sausages for bf. Easy to put 2 in the Airfryer, go for a shower and when I come out, bf is ready! This should be called 'Diary of a Lazy Cook!' I have some wild salmon for lunch today. I won't touch the farmed salmon so this is a monthly treat. Then I have some chicken drumsticks for snacks. I wish I could find some pork scratchings that are not too salty. Any hints? Have a lovely weekend everybody. :happy:

I’ve never tried it but what about making your own scratchings in the air fryer?

I cooked a pot of onion soup, enough for 3 days.
So I'll have the same tomorrow and the day after at work, it's easily reheated in the microwave on my bridge. :)

My onion soup comes with lots of grated cheese. :hungry:

Breakfast- Greek yoghurt with zm&S grain free granola.
Family Sunday lunch was chicken and mushroom pie with purple sprouting broccoli, green beans and cauli cheese. I made my pie crust using fat head dough in place of pastry.

Pensioner's Monday lunch so no ideas. But I'll make the best of it. I made an egg custard with full fat milk and cream yesterday, Unfortunately it curdled but it still tasted ok so that's my pud for today. I'm fed up with sugar-free jelly! I have some smoled troutm for later. Have as good a day as you can. :happy:

Dinner: 1/4 pound burger halved and split between two halves of a LC roll with cheese, salad and mayo.

Pensioner's Lunch. It was actually our Easter treat as we don't have lunch at Easter itself. Starter.. prawns in Marie Rose sauce with some salad. Main, 2 small roasties, pork steak, broccoli and carrot with apple sauce. My own pudding. We were all given a small Cadbury's Easter Egg which unfortunately I couldn't resist! I was given another one but I managed to give it away before I started on it! I haven't had ordinary milk chocolate for such a long time, I feel almost guilty of committing a crime!!
