Baked a low carb upside down rhubarb and ginger cake this morning first photo as it looked coming out of oven and second turned upside down to portion ready for freezing

Breakfast kefir then mushrooms cooked in olive oil served with poached egg and low carb toast
Lunch cheese and celery followed by a piece of my just baked low carb rhubarb and ginger cake - I'd also added some mixed spice this time and it was a lovely spicy flavour
Dinner wild salmon and asparagus followed by hm LC coffee and walnut cake and decaffeinated coffee.
Your food always looks so lush .Breakfast kefir then cooked a few tomatoes with olive oil served with a poached egg on low carb toast
Lunch hummus with celery followed by a few strawberries with yoghurt
Dinner cooked tandoori chicken and onion on a griddle served with hm LC pitta bread, coleslaw, hummus and olives

Thank you very muchThey are all Panda Pantry recipe s using Panda Flour. I've adapted them to the size of tin I use to make a biggish tray bake so can cut and freeze portions. I've also made some other adaptations to suit us - such as using less of the sweeteners. I started by using their sample packs with small amounts to see if we liked them - as not too much to pay until happy that worked and enjoyed the taste see

If after trying you'd like one of my adapted recipes I'm happy to type it up - at the moment they are all on bits of paper and use quite a lot of ingredients as larger cakes -so my advice would be to try a smaller bake. For me neitherwhat's better: skipping breakfast or lunch?
I've never been a breakfast eater so it's an easy decision for me to not eat before 2pm.For me neither

This afternoon I made a couple of salad items which I'm storing in the fridge in Kilner jars - I charred some peppers then skinned them, removed seeds and sliced them adding some of my basil leaves and a good quality olive oil.Will be using them this week.

Dinner chicken curry served with chopped coriander leaves and a hm LC mini naan followed by a few strawberries with yoghurt.

I've also just put 20g of dried barberries to soak overnight in tea and a dash of brandy - I'm planning on trying to make a low carb fruit loaf tomorrow and hoping these barberries ( never tried before!) Will work instead of usual dried fruit. They seem interesting as the berries are the source of Berberine and high fibre plus this pack has no added sugar - will let you know!
