What have you eaten today? (Low carb forum)

Baked a low carb upside down rhubarb and ginger cake this morning first photo as it looked coming out of oven and second turned upside down to portion ready for freezing

Breakfast kefir then mushrooms cooked in olive oil served with poached egg and low carb toast
Lunch cheese and celery followed by a piece of my just baked low carb rhubarb and ginger cake - I'd also added some mixed spice this time and it was a lovely spicy flavour
Dinner wild salmon and asparagus followed by hm LC coffee and walnut cake and decaffeinated coffee.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
I haven’t notice any change in taste of my strawberries and blood sugar haven’t risen after my breakfast.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: LC cheese, tomato and mushroom pizza with coleslaw.

Your rhubarb and ginger cake looks delicious, I wish we could post aromas too!

Lunch hummus with celery followed by a few strawberries with yoghurt
Dinner cooked tandoori chicken and onion on a griddle served with hm LC pitta bread, coleslaw, hummus and olives

Followed by hm LC ginger and rhubarb cake and decaffeinated coffee with splash of cream.
Your food always looks so lush .
 
They are all Panda Pantry recipe s using Panda Flour. I've adapted them to the size of tin I use to make a biggish tray bake so can cut and freeze portions. I've also made some other adaptations to suit us - such as using less of the sweeteners. I started by using their sample packs with small amounts to see if we liked them - as not too much to pay until happy that worked and enjoyed the taste see

If after trying you'd like one of my adapted recipes I'm happy to type it up - at the moment they are all on bits of paper and use quite a lot of ingredients as larger cakes -so my advice would be to try a smaller bake. There are also lots of helpful videos of Mark from Panda Pantry demonstrating.

Today is back on the low carb wagon (almost) after hubby accidentally on purpose brought home a load of reduced pies (at 30p each I can hardly blame him) and passed an exam, which resulted in a celebratory takeaway curry.

Tiny sliver of "BBQ" pork pie.

Coronation chicken sandwich filler & bag of "pondweed" (spinach/ watercress/ rocket)

Tonight it's rump steak (also reduced, but sadly not to 30p) with mushrooms and tenderstem broccoli, probably followed by a cheese selection as the fridge is now bursting.

This afternoon I made a couple of salad items which I'm storing in the fridge in Kilner jars - I charred some peppers then skinned them, removed seeds and sliced them adding some of my basil leaves and a good quality olive oil.Will be using them this week.

I also used a tin of drained black olives adding basil and olive oil

Dinner chicken curry served with chopped coriander leaves and a hm LC mini naan followed by a few strawberries with yoghurt.

I've also just put 20g of dried barberries to soak overnight in tea and a dash of brandy - I'm planning on trying to make a low carb fruit loaf tomorrow and hoping these barberries ( never tried before!) Will work instead of usual dried fruit. They seem interesting as the berries are the source of Berberine and high fibre plus this pack has no added sugar - will let you know!

What fabulously vibrant and delicious looking food!
Must admit I’ve never heard of barberries, where did you get them? I’ll be interested in your cake.
 
I did Parkrun this morning - I walked it but still felt virtuous! Had brunch when I got in of 2 fried eggs in L/c toast followed by raspberries and extra thick cream.
Dinner was a gammon steak topped with another egg, avocado, mushrooms and chilli sauerkraut. More raspberries, plus blueberries and cream. IMG_7044.jpg

Dinner: Chinese takeaway with our son for Father’s Day, I had crispy duck with all the trimmings, reduced portions of the carby bits (tried and tested amounts for me and my blood sugars).

Successful low carb tea loaf using Barberries (@DJC3 got my dried barberries from Amazon) Soaked 20g of dried barberries in 150g of cold tea and generous splash of brandy overnight with mixed spice (25g)and lemon zest.
1750006819317.jpg This morning strained barberries and mixed 150g of the soaking juices with 5 eggs - using handheld electric mixer. Then added to mix a few spoons at a time a mix of 100g of panda flour, 120g of eyrithritol, 25 g of baking powder plus towards end of mixing 65g of melted butter. Then folded in the strained barberries.

Put into lined two pound loaf tin and baked at 160 fan for 45 mins.

Sliced when cold and frozen apart from a taster had today and some left in fridge for tomorrow. A definite success - thought soaked barberries tasted a bit like currants.

Can be served with butter but it's lovely and moist so didn't need it I felt after tasting. I managed to cut 18 slices most of which I froze in a plastic bag with small pieces of kitchen towel between slices so can take out of freezer as needed.

Out at lunchtime so took a slice of my hm LC tea loaf out with me to have for lunch with coffee
Dinner roast chicken with a range of salads and raised a glass of delicious Welsh dry white wine with OH who had the bottle as a father's day present. Our youngest son has recently moved to Abergavenny area and wine was from the Sugarloaf vineyards - a Calon Lan 2024.
