Looks lush .Today's lunch was an air-fried chicken breast, with green beans, carrots and a medium sautéed potato.

Thank you. I think I prefer the chicken fried, rather than air fried. But the beans and sautéed potatoes were lovely, the carrots (frozen) not so much. Fresh is best.Looks lush .
Yellow courgette sounds interesting. Only ever had green. Nice when someone else does the cooking.At my brothers still so pic of dinner only. Chicken cooked in a chicken gravy, I had minimal gravy with home grown baby yellow courgette and green beans.

Just have the courgettes next time without the pasta, it’s what I do, I spiralise mine but you can do ribbons with a peeler works just as well. They only needed tossed in the frying pan in butter for 1 minute - I don’t season as it draws out moisture, I season once on the plate. If I spiralise I don’t cook them I just toss them in the sauce for about a minute which works great for carbonaraI love yellow courgettes, and patty pans when I see them. Cocktail sausages with cheesy coleslaw.
Pasta carbonara with mushrooms and courgettes. Hubby agreed to use half the usual amount of pasta and add courgettes. Still got high FBG today so pasta remaining off menu as far as possible. Shame as the courgettes made it extra tasty.
