What have you eaten today? (Low carb forum)

Successfully resisted pizza yesterday but had a glass of orange juice instead - diluted 50:50 with sparkling water, drunk soon enough after meal that stomach was still full of salmon, no dramatic BG rise (in fact today I got my lowest reading of the month so far!)

Today's food is likely to be

Prawn salad, remains of salmon, cucumber, cherry tomatoes

Brie with a few grapes as we have a glut - hubby bought a punnet then my mum gave him another when he collected my dad from hospital. Strawberries and clotted cream.

Pork belly in mojo rojo sauce. Guacamole.

As many slices of cold pizza as I can tolerate BG wise.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bacon and Brie on a low carb roll with coleslaw.
I’m off to stay with my brother in Cornwall tomorrow for a couple of days. I have keto granola in my suitcase plus low carb snacks, he’s promised not to feed me potatoes or pasta!

Breakfast kefir then a couple of chipolata sausages and scrambled eggs
Lunch hummus and celery followed by a few berries and spoon of yoghurt
Dinner steak with mushrooms, onions and a few tomatoes followed by LC hm lemon cake.
 
Breakfast kefir then two poached eggs on low carb toast
Picnic lunch while out - low carb roll with Parma ham followed by a slice of hm LC tea loaf
Dinner roast chicken with salad followed by a few berries with yoghurt.
 
Yellow courgette sounds interesting. Only ever had green. Nice when someone else does the cooking.
I love yellow courgettes, and patty pans when I see them. I think it's just a love of novelty as the green ones taste just as good or even better.

Yesterday I had

A scotch egg.

Cocktail sausages with cheesy coleslaw.

Pasta carbonara with mushrooms and courgettes. Hubby agreed to use half the usual amount of pasta and add courgettes. Still got high FBG today so pasta remaining off menu as far as possible. Shame as the courgettes made it extra tasty.
 
I love yellow courgettes, and patty pans when I see them. I think it's just a love of novelty as the green ones taste just as good or even better.

Just have the courgettes next time without the pasta, it’s what I do, I spiralise mine but you can do ribbons with a peeler works just as well. They only needed tossed in the frying pan in butter for 1 minute - I don’t season as it draws out moisture, I season once on the plate. If I spiralise I don’t cook them I just toss them in the sauce for about a minute which works great for carbonara

I had a delivery of low carb bread and rolls from Seriously low carb today so thought I'd try their high protein wraps this time - warmed one for Dinner served with home made guacamole and tandoori chicken and side of coleslaw. Really liked the wrap - which is a relief as I bought a couple of packs of them. Low carb bread, rolls and wraps all now split up into portions and stashed in the freezer.

Back from my brother’s this evening.
Breakfast: Hana chocolate keto granola with coconut milk.
Late morning: coffee shop cappuccino and a Carb Killa bar.
Skipped lunch.
Mid afternoon on the train Pepsi Max and another Carb Killa bar.
Dinner: low carb pizza with cheese, tomato and mushrooms saved in the freezer, with salad and mayo.

I bought a spiraliser last year and it's one of the most used kitchen gadgets ever bought.
