I keep focusing on the fact it was the thinnest crust on a pizza I have even seen!!I feel for you and know that feeling well, you don’t want to be a party pooper but panic at the thought of high carb food. I think you did really well though, sometimes it’s just better to go with the flow and its probably just as well you forgot to test at 2hrs.

Mine made a sweet one with jam. Speaking of jam I also remember bakers trays full of all kinds of individual cakes that my Mum and Grandma would bake for the church Sale of Work. Any pastry scraps they would put a blob of jam in and bake for me. We children were not allowed to touch the Sale of Work cakes!My mum used to make a fabulous sweet one, with bananas fried in butter and a very potent rum sauce. They were the days!
@ianpspurs you can’t beat classic egg and cheese combo reminds me of salads in the summer at my nans house when I was littleAnother fine, hot, dry day here hope you all enjoyed the weather even if you were at work. I woke early but nothing to o with the weather just happened that way. Tried 3 meals today along with weighing/measuring everything and analysing diet. The final figures look ok Daily Calorie Composition: 4% from carbs, 80% from fat and 16% from protein but obviously the values may be wrong - did take them from labels/supermarket websites. Menu beow:~
6.25 - 2 pints Lemon Green tea
9.00 to 10.00 2 pints tea with almond milk
10.15 170 gms Fage 0%; 3 tbls mixed flaxseed and inulin; 2.5 desert spoons h/m strawberry coulis (attempted jelly but v tasty coulis)
13.40: Waitrose coffee with 30 mls double cream
14.30: 30 gms chia seeds with 1 tsp psyllium husk powder; 1 avocado; 40 gms watercress; 90 gms mackerel in 25 gms olive oil; acv 2 dessert spoons ACV; 2 pints Mango and Lychee green tea
16.00: Nothing
18.30: 150 gms grated Cheddar and 3 hard boiled eggs; salad ( egg and cheese salad is a family favourite from way back); acv, olive oil and dijon dressing with psyllium husk powder; water probably 3-4 pints during evening
Edit: I didn't set out with target percentages in mind but to me they seem ok. I think that was about 30 gms carb and nicely over 30 gms fibre. If my carb count seems way too low please let me know.
@jayney27 your nan's salads sound just the ticket for summer. We get 9 eggs a day so using them is sometimes a problem even giving the dogs 2 each every day. You can’t beat fresh eggs either, you are lucky having your own chicks. When my girls were small we had 2 ducks, as pets, they produced beautiful eggs. My ex mother in law used to keep chickens too, so we used to get eggs from her, they were extremely pampered and very tame as were my ducks, I’m sure they rewarded us with extra delicious eggs@jayney27 your nan's salads sound just the ticket for summer. Hi @DJC3 good news on your sugars and sure losing the statins will help with that too - as I gather a side effect is raising your sugars! Not sure about the weight it could just be things settling think you were quite a low weight? Difficult to drop your fats too much if you don’t have much fat on your body. I’ve reduced cream but still eat plenty of med type fats. Could it be muscle build up - are you doing significantly more exercise? Have you checked your waist measurements as if they are the same as before don’t think it’s anything to fret over it is putting weight on on your middle that’s the issue and it’s less likely if your bgs coming down I think. This is all just my conjecture of course but my overall opinion is that you’re getting healthier especially after your cancer recovery and your body is settling down. Check your waist to height ratio bet it’s still healthy.B: scrambled egg on marmite toast made from a DD keto bread roll halved. Coffee and cream.

Late home after yoga and too hot to cook so just nibbling now....
D: cheese ( gorganzola, feta and emmental) olives and 3 of the sesame crackers with a glass of red. Lovely
@shelley262 I am trying to follow your lead with a more Mediterranean style as my last lipid screen wasn’t as good as the previous one. Ive also found in the last couple of weeks my HbA1c average is dropping quite quickly according to MySugr but I have put on 1-2kg, my weight has been stable for at least the past 6 months so I ‘m quite confused by all this.
I’m going to try to cut down on cream and see what happens, however I did stop taking statins a few weeks back, I wonder if that’s relevant? There are so many things that have an effect it gets v confusing.

Dinner: cheese and mushroom omelette with cauliflower, broccoli and yellow tomato salad followed by strawberries and phd bar.

I can’t do black coffee either I just water down double cream and then froth it much more palatable and love black tea so have less coffee and more tea! Can see that hernia type lump would make measurements difficult hug coming your way and I’m certain all is good.Thank you, I think I have a bit more muscle - certainly my legs aren’t as scrawney so that could be it I guess.
I think the Med style of eating suits me. I tried a black coffee today but only managed half, I will persevere or try your whipped cream/ water combo again. I think Ive just been getting a bit gung- ho with the cream pot!
Waist measurement is hard as I have a big hernia type lump on one side where a kidney was yanked out, it could be that which is getting bigger too I suppose.
