What have you eaten today? (Low carb forum)

Great news about the mag interview, is it a local one or will we be able to get a copy? How exciting.

Yes I love your seedy crackers - I’ve had to portion them up into 1g carb amounts in ziplock bags though, orherwise I’d just keep going - so moreish!
It’s a national one called healthy food guide magazine not seen in local newsagents though! Will find out when it will appear and then let you know. @Rachox and @Debandez have also got mag features so you never know!
Because crackers only 0.2g of carbs on my measurements I’d have to eat a lot to get anywhere near doing carb damage and they fill me up think six has been largest number eaten at one sitting which is 1.2 g compared to 3.8 or more in small slice of lc bread.
 
@maglil55 glad you’re feeling better now, thanks for the monkfruit link. Is it a powder and can you use it weight for weight in baking?

Talking of restraint well done @Goonergal - that was a massive feat of willpower to resist the Montezuma shop,

The Monk Fruit is granulated. Looks like brown sugar the golden classic. So far I've followed recipes mostly. Odd ones where I'm converting I've used slightly less and tasted it. I'm quite sensitive to "sweet" now.

I found Montezuma in Morrison's at the weekend. Absolute Black 100% with orange and cocoa nibs - can't eat too much of that!
 
I think it is Montezuma who do a Black Forest choc bar (in Union Jack packaging, for some bizarre reason). Delicious - and nil effect on my blood glucose until I eat more than half the bar. Cough.

Re food:
yesterday was pork rib for lunch and naked burgers for dinner
today has been crustless quiche for lunch and lo-dough pizzar (pepperoni and ham and moz) for dinner. Plus a small portion of Halo peanut butter icecream at 4pm. Don't think I will bother with that flavour again. My bloodhound senses detect souless peanut powder in it, rather than PROPER peanut butter.

I’ve had that chocolate bar too, it’s very nice, they do some lovely flavour combinations

Breakfast: Two double decaffeinated espressos with cream and erythritol

Lunch: Three scrambled eggs with okra and cheese. Cauli-coconut rice with a bit of fish. Two tablespoons of oppos vanilla with erythritol-sweetened cream and ten blackberries.

Snack: Half a DD keto roll (fresh from the oven) with melted butter.

Dinner: The other half of the DD keto roll with butter, aged gouda and beef salami. Soup with merguez, mushrroms, tomatoes, bellpepper and melted cheese.

I succumbed to buying a bar of Montezumas absolute black found in Sainsburys yesterday - promised myself I wouldn’t buy any more chocolate as I have that 2.5k bag of Callebaut to go back to in Cornwall on Thurs.
I never would have believed a year ago that I’d enjoy such dark bitter chocolate

I managed to get 6 crackers for 1g carb this time, you’re right in that you’d have to scoff a lot to do any real carb damage though. Girls like them too so they have been known to pinch a bag to take for work lunches.
They were brilliant with the crab - I was just about to feel glum at the lack of bread when I remembered them - they were the perfect accompaniment.

I like the sound of cauli coconut rice - do you just add desiccated coconut or do you cook it in coconut milk?

Actually both. I blitz the cauliflour and fry it with coconut oil and onions, add coconut milk, lime zest, green curry paste, ginger, desiccated coconut, about one teaspoon of erythritol, salt, 5-spice powder and coriander leaves.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: ham, cauliflower and broccoli salad with mayo followed by Greek yoghurt and raspberries.
Mid afternoon: peanut phd and black coffee.
Dinner: chicken chasseur with mixed veg and small portion of carrot and swede mash followed by SF jelly with cream and LC chocolate granola.

B: scrambled egg smoked salmon and avocado. Then Docs appt for diabetic review - a new doc, she was lovely and thoroughly approved of my diet, said I could come off metformin completely (but I don’t really want to because of the cancer protective side effects)but was happy for me to reduce to 1 a day which I’m happy with, she also agreed with the decision I’d made a few months back to stop statins. No trying to persuade me otherwise. When she asked how I’d gor my diabetes under control and I said this place she smiled knowingly. I’ll definitely ask to see her next time.
L: Had an excursion to Waitrose for celeriac and ended up spending a small fortune on lovely stuff - real decadence for lunch - a dressed crab. Had it with some of @shelley262 s seedy crackers and a leafy salad.

MAS went to the cinema and took a pepsi max and a Carb Killer bar ( jaffa cake variety) with me.

D: chicken breast stuffed with pesto and mozzarella with the trusty pork scratching/ almond flour crust. Celeriac chips and garlicky spring greens.
Garden raspberries and cream with a spoonful of @Rachox ‘s choc granola on top

What a great review @DJC3 glad it went so well. Really does help to have GP on side.
 
The latest in my personal series of 'DIY Nutella' - this is the fastest version (I am 'low-carbing' in order to prevent my pre-diabetes ever becoming diabetes)

All I did was add 2 tsp (2g carb per tsp) of 'sweet freedom' chocolate spread to my customary peanut butter and give it a brisk stir. Simples! Not Nutella (obviously) but I'm keeping an eye on sugar and carbs and it'll do for me!20180912_091400%20(1).jpg
 
Good evening - which is now the best part of the day. There was a plan for today but as that great philosopher Mike Tyson said "everyone has a plan until they get punched in the mouth" No major derail and September has been a series of blows to the old mooey. Hope you all had good days and stayed on track
Wakey Wakey: 4 pints tea with h/m almond milk - (Thought it best not to row/cycle till my body completely stops the no deal schtick)
Brunch: Avocado smashed onto 2 x flaxseed flatbread: Coffee with 3 tsps inulin and hobbit sized portion of cream (each flatbread approx 30 gms flaxseed and water; the crispbreads are much better IMHO and about 15 gms flaxseed each)
Mid morning snack: Hopefully being subsumed into brunch - watch this space; 1 hr ish gentle walk
Lunch: Tin of mackerel in olive oil; acv; 2 flaxseed flatbreads - (they won’t eat themselves;) 1.5 pint mug of tea
Afternoon snack: None
Evening meal : Halloumi, courgette, mushroom,tomato. pepper stir fry- used to be my breakfast with chorizo instead of halloumi and often 2 poached eggs; drizzled with vinaigrette

Lovely day once sun came out hope all had a good day
Breakfast one slice of bacon and egg
Lunch one tin mackerel with olive oil and acv dressing with celery and 5 lc crispbreads
Dinner two welsh lamb chops on bed of buttered cabbage and glass of red wine followed by 2 scoops of Lc ice cream one choc hazelnut and one vanilla and a dash of double cream.
 
Hi all. Wet most of the day here.

Started day with first trip to the gym in over 3 months. Pleasantly surprised at how much I could achieve.

Lunch - ravenous after all morning meeting. Picked up M&S Serrano ham and manchego cheese rollitos and a bag of pork crackling on the way back to the office. Still hungry a while after so had a small slice of what was left of the lemon zucchini cake I took to work.

Dinner - planned steak but a detour on the way home took me past a newly opened small restaurant serving home made burgers. Decided to give it a go. Very nice burger, which contained only mince, salt and pepper, topped with cheese, turkey rashers, lettuce, tomato and onion - and mayo. They were more than happy to do a lettuce wrap instead of a bun. Dessert at home was half a CCB and 5 of the chocolate almond squares (they are so moorish) with a blob of clotted cream.

B 90 second microwave bread toasted with peanut butter topping, again everyone in the kitchen at work while it was toasting wanted to know what it was that smelt so enticing
L baby leaf salad, tomato, cucumber with sliced roast beef and mayo
Snack of pepperoni crisps and whipped cream cheese
Yoga session straight from work so later evening meal
Omelette and bacon, cream with home made chocolate granola and a glass of red

Blood sugars were a bit higher upon waking up, so went a bit easy on the food today.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Nothing.

Snack: About 10g of 85% chocolate.

Dinner: A DD keto roll with butter, aged gouda and beef salami. Lamb's lettuce with Caesar's dressing and parmesan. About 10 very small strawberries with erythritol-sweetened cream.
