What have you eaten today? (Low carb forum)

The beans are an essential part of cassoulet though, how would you substitute them? If you just put swede or celeriac in, it’d simply be a casserole. Let me know if you figure it out.

I can imagine you as the new Peter Mayle, but you’re right, wild horses won’t drag Mrs P away now. I’d be the same.
The supermarket starting with W did do celeriac couscous - smallish pellets - which would have done if you squinted. Re the Rolling Stones song and France, I might change in a heartbeat if there is a boy P in Southampton
 
I need someone to find an LC cassoulet recipe perhaps using rutabaga (swede) or celeriac in some way and, off topic, I definitely feel deep inside I missed a trick not upping sticks to Aquitaine. Not likely now as Mrs P seems to have an irrational attachment to those gals:arghh::arghh:

I made a great cassoulet about a year ago. The problem wasn't the carbs, it was the indecently large portions that Mr B and I ate that raised bg too high.

My method was (as usual) to take a standard recipe and just low carb it.
From memory, I used very high quality low carb sausages, duck and chicken, plenty of pork, and then halved the bean input, while adding a few low carb veg.

I would give you the recipe, but it was never written down.
This link probably gives a good starting point, although I have NO idea why she/he/it is blathering on about adding breadcrumbs for a crunchy topping. What nonsense.

Can’t get celeriac here at all now. We have a Tesco, Sainsburys and M&S all within walking distance but none of them stock it atm. I’m starting to suffer withdrawal symptoms.

Re grandaughters - Mr C also tries his hardest to play the part of old curmudgeon but they are onto him and will have none of it - the grumpier he gets the more they laugh and climb all over him. Cheers everyone up ( apart from him but he can’t even stomp off with a little girl attached, limpet like to each foot)

@DJC3 I have not seen the celeriac pellets for a long time. Surely a cattle prod or taser would solve Mr Cs problem? I fully intend to use stories where they are essential to the plot :angelic:
@Brunneria, surely the whole point of cassoulet is not to exercise portion control in a kind of ah, f it manner?

What I would do would be to take a recipe, and park the beans awhile, but add some swede/celeriac/cauli or whatever you use to "thicken" your wet dishes, then near the end, throw in a modest amount of beans. Doing it that way, gives the appearance and mouth feel of the beans, but they don't disintegrate (and "hide" their carbiness) and you can see them when dishing up. This is fairly well what I do if/when I'm chef and chilli is on the cards (although I have been known to genuinely forget to add the beans on occasion.

Recipes? To a very large extent, I'm with my OH on this in that a recipe is just a sketchy suggestion of the ingredients in play. The exception for me really would be baking when a few grammes here or there can make a big difference to the output.
 
Bed on Sunday 6.6 FBG 7.2 - OK I gave into the Tia Maria again but just 1 this time. Nice and stable again and didn't do too much damage.
B. Fried egg and 3 rashers streaky bacon. Tassimo Americano grande with a dash of cream.
L. Nothing. Was going with No 1 to the doctors before getting No 2 from School. Got a little bit of home time before going off to sit with boys for a couple of hours.
D. Phase 1 very early before boy sitting 1 lo dough pizza.
Phase 2 - much later on return home avocado and prawn cocktail

It's pretty gusty here today. I had an early night last night I was shattered and that was despite falling asleep when I got home. Feeling loads better today though.

@Goonergal I’m glad you got some good CCBs finally. I must try the monkfuit. CCBs must be one of the most controversial and talked about foods on here!

I had a great day today - an old friend came round and we went to watch polo at the Guards Club in Windsor Great Park, such a lovely sunny day, and a great atmosphere.

Brunch was a bacon and egg sandwich using the 90 sec microwave bread toasted.

Couple of glasses of the champagne my friend had thoughtfully brought with her to the polo. Then a couple of coffees with cream and later a gin and soda in the members bar ( neither of us are members but she is good at blagging her way into places)

D: Back at home - Chicken pot pie ( DD recipe using fat head pizza dough as pastry) with broccoli and cavolo nero followed by cheese and biscuits ( without the biscuits) and a glass of red.

Later I had a chocolate nut square and realised I’ve forgotten to take metformin again today.

This is the cheapest I've found Monk Fruit. Their shipping is £3.95 so I bought a few bags. The one I use most is the golden classic. I must have a go at the CCBs.
 
Today we ate very early, because we were both hungry. As I was head chef today, I chose, and chose this, which I had never done before: https://twosleevers.com/instant-pot-chicken-adobo/

It was so simple, and very quick to make, although I had started it before going out for any appointment at 14:15. The cauldron and it's Keep Warm function comes into its own again.

I like Two Sleevers recipes, but the other Adobo recipes I looked at contained onions and they were considered an important ingredient, so I threw some in.

It was delicious.
Reverse sear was a new one on me particularly with an air fryer.

My airfryer journey is still very new Maglil. I pretty well followed this recipe yesterday, so did the final bit in the grill for the aesthetics.

Breakfast - Hi-lo toast with butter
Lunch - Homemade celeriac soup and flax bread roll (more butter)
Dinner - Pate, olives, rollitos, salad, lc crispbread (eating everything up). Strawberries and double cream,
Snacks - pork scratchings and 90% Lindt (not together):D
Loads of cups of tea now I've come off the de-caff stuff

 
Hi all.

A more restrained day today.

Lunch - on the go during all day work meeting, M&S Serrano ham and manchego cheese rollitos and a bag of M&S pork crackling. Work meeting was near the Montezuma shop in Shoreditch. Managed to dissuade myself from going in.

Dinner - 3 chicken wings with Parmesan and pork crunch topping followed by 1 piece lemon zucchini cake with clotted cream and 2 chocolate almond squares.

@maglil55 thanks for the link to the Monkfruit - much cheaper than Amazon.

In brum for big work meeting today but a bit of a grey day and swerved on lunch as not LC friendly! Said not hungry but was starving by time home...
Breakfast one slice of bacon and egg
Dinner chicken curry with celeriac cooked in the sauce - a personal fave as reminds me of my old favourite curry with aloo! With five lc seeded crispbreads followed by one raspberry clafoutis with cream and yoghurt and one of my birthday Hotel choc chocolates with my coffee - now feeling full!

Hope everyone had a good day. Dull, wet, stygian gloom and rediculous waking up time soured my enjoyment of the day. Not making much progress getting back to proper exercise seem to be stuck in a kind of Groundhog Day. Menu:
Wakey Wakey: 3 pints tea with almond milk - standard fayre
Beakfast: CCB - trial before swimming for incompetent old duffers - off piste really and certainly needs to go at breakfast
Mid morning snack: 3 pints tea after trying to swim
Lunch: Avocado and tin of mackerel in olive oil mashed in Portabello mushrooms; 2 tsps h/m mayo
Afternoon snack: 2 pints Tea
Evening meal : 3 x hard boiled eggs and salad topped with plenty of chia seeds - acv and psyllium husk powder in the dressing.

@maglil55 glad you’re feeling better now, thanks for the monkfruit link. Is it a powder and can you use it weight for weight in baking?
Well done on Tia Maria restraint.
Talking of restraint well done @Goonergal - that was a massive feat of willpower to resist the Montezuma shop, I didn’t know they had a shop.

B: scrambled egg smoked salmon and avocado. Then Docs appt for diabetic review - a new doc, she was lovely and thoroughly approved of my diet, said I could come off metformin completely (but I don’t really want to because of the cancer protective side effects)but was happy for me to reduce to 1 a day which I’m happy with, she also agreed with the decision I’d made a few months back to stop statins. No trying to persuade me otherwise. When she asked how I’d gor my diabetes under control and I said this place she smiled knowingly. I’ll definitely ask to see her next time.
L: Had an excursion to Waitrose for celeriac and ended up spending a small fortune on lovely stuff - real decadence for lunch - a dressed crab. Had it with some of @shelley262 s seedy crackers and a leafy salad.

MAS went to the cinema and took a pepsi max and a Carb Killer bar ( jaffa cake variety) with me.

D: chicken breast stuffed with pesto and mozzarella with the trusty pork scratching/ almond flour crust. Celeriac chips and garlicky spring greens.
Garden raspberries and cream with a spoonful of @Rachox ‘s choc granola on top

Lunch was at a lovely village pub, bosses treat, our colleague is getting married and today was her last working day before the wedding, I opted for the cauliflower cheese with a side salad, donated the massive hunk of bread to my boss

Love dressed crab great treat to celebrate a wonderful review. Pleased too you like the crackers/crispbreads I find them fiddly but eat some every day now prefer to the lc breads I like the crunch and that ingredients are so simple they must be good for us!
Btw I’ve got an interview with a journalist tomorrow from a mag who want to feature my story - very exciting...,,,

Yes I love your seedy crackers - I’ve had to portion them up into 1g carb amounts in ziplock bags though, orherwise I’d just keep going - so moreish!
