Hi there - Is beef thin rib the same as flat rib? I've never seen thin rib in my local butcher's, but I do have flat ribs in the freezer (another Instant Pot stunner!).
I think they are the same, but sometimes I think butchers make names up interchangeably.

My thin ribs are thin flat pieces of beef rib about 4 inches long with a 2 inch thick piece of meat attached to each. When cooked, the bone virtually falls out and each one makes a big individual portion of melting deliciousness.

B: 3 egg omelette with spinach and mushroom

L: spiced chicken breast with avacado salad and mayo with chili flakes in it

D: plaice with herb salad and asparagus stir fry

Snacks:
3 Salted wheat crackers l
1 Cup of Greek yogurt with lemon
Like idea of putting chilli flakes in the mayo I’ve put turmeric in which I love the flavour of will try this thanks

Yes, I agree.

Those are flat ribs in my part of the world. They're fabulous in the IP.

@Goonergal - took my own advice this morning. Blood sugars a bit higher first thing but hadn’t eaten for a while as very early tea yesterday so checked my ketones mid am and they were 4.9! They had settled just under 2 on a regular basis so maybe I’m not eating quite enough as not enough body fat to make up Difference who knows! It’s a bit of a balance to get right! So had early lunch with some carb usually have very little carb at lunch so:

Breakfast coffee and cream
Early lunch one slice of low carb buttered toast served with scrambled eggs mixed with cream and cooked in butter. Followed by one piece of 90%choc
Dinner chicken stir fry with bean noodles followed by slice of low carb choc cake with cream

@shelley262 - that’s high! It is a difficult balancing act but sure we’ll get there in the end.

Yesterday’s tactics seem to have worked - despite eating a lot, FBG was much better at 4.9 and th morning rise was just 0.1 mmol, so up to 5. Carried on with eating lunch today - and will also do so tomorrow.

Lunch - was at an all day meeting at which the breakfast/pre-lunch snacks consisted of crisps, mini flapjacks, satsumas or bananas; lunch was sandwiches with more crisps, flapjacks and chocolate things, so was very glad of my packed lunch of a few slices of salami and smoked cheese, 25g almonds and 5 Hotel Chocolat 100% buttons.

Dinner - 2 Waitrose free range pork sausages, 2 rashers bacon and a Birds Eye burger followed by 75ml Oppo chocolate and hazelnut ice cream with cream.

7pm ox cheek pressure cooked with some guinness. O my. Will do this again. I am about to go back for a second portion.

I have to find a source of ox cheeks. These 2 were a gift from my mother.

D. not very hungry today so just a little roast beef with the juices.

I love how this woe relieves me of the hunger I used to battle with, just discovered I have severe anaemia....Dr suggested eating more red meat! Have to take tablets while they investigate but could be contributing factors to alot of my aches and pains....at least she was pleased with my diet and my low cholesterol!

Just been looking online in the UK and found several organic butchers who sell ox cheeks and lambs liver.....I feel an order coming on.......never had ox cheek but looks and sound delicious

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a white coffee.
Lunch: @Brunneria ’s cheesy corned beef and eggs, very nice! I had it plain today to see what it’s like, tomorrow I’m going to add some seasoning, maybe some garlic and herbs? I followed this with Greek yoghurt and blueberries.
Mid afternoon: coconut Adonis bar with a black coffee.
Dinner: chicken curry, cauli rice and a couple of bites of hubby’s naan bread followed by strawberries and cream and three squares of ginger Green & Blacks.

I restocked my cheek stash this weekend, although I prefer pig to ox for day-today stuff.

In the spirit of it all, I spatchcocked a chicken today, then couldn't face cooking it all. I mean, we still have cooked turkey in the freezer from that well known festive period. Soooooo, butchered it further by halving it, and putting 2 quarters in the freezer, then marinading the other half in Jerk spices and oven cooking it. Nom, nom, nom.

Just be ready to cook them very very slowly... til they melt. :D

D: pork chop rubbed with jerk seasoning and a dollop of cream cheese on top. Few celeriac chips and buttery garlicky cabbage

Haha! It is absurdly simple!

Just open a tin of corned beef and lob some of it in a pan. Chop it up and stir it around til hot. Make some space in the middle and crack eggs into the hollows. Sprinkle with grated cheese and pop a lid on till the eggs are cooked to your liking.

Herbs, spices and seasonings all optional.

I usually put a pinch of onion powder, a smidge of tomato purée, a smear of crushed garlic and a splash of Worcestershire sauce into the beef. But really you could use anything, from chillis to added veg...

I find a quarter of a tin of beef and 2 eggs makes a generous portion for one.

It’s simply corned beef crumbled into a frying pain, drop two eggs on top, then some grated cheese and heat til eggs are cooked.
Brunneria has been adding herbs and spices and I think tomato purée to it as well.
