Not totally on topic but surely this weather is shorts, huge hunk of meat and Malbec/Cahor time? Will be interested in menus and bgs over this period - both mine and others. Crying our for a tester of low carb Eaton Mess but our strawberries aren't ready! I am learning plenty from this thread so thanks! One other thing, what are people's non-negotiables in terms of giving up and how they adapt lifestyle to accommodate?
Mine are tomatoes, cheese and meat but other people may have wider list and good offset so I can add some foods back to my diet. Thanks in anticipation.

I'm on the list for a mini, although I may tire waiting for that and have anothe 6ltr when they come in.

Now possibly isn't the time to mention the sous vide?
Son has the sous vide (as well as a dehydrator). In fact he has 2 of them and they are used a lot!! Can't get my head around cooking things for days though. X TREME slow cooking but can't deny its good.

You’ll have to have a go at the coffee and walnut one it’s delicious. I did the icing this time using inulin as icing sugar as the erythritol tastes a bit ‘cool’ I also added a few drops of stevia liquid to sweeten a bit more- it came out like a fudgy icing and was popular with a few friends and OH. I made full quantity this time but split into two loaf tins - one which I iced and the other is going to be used as the sponge part of a tiramisu that I’m taking to a birthday party tomorrow night.

Bed 6.9 FBG 6.4. Forgot to post yesterday.
Thursday
B. 1/2 Mattesons smoked sausage with 2 scrambled eggs and a Tassimo Americano grande with a dash of cream.
L. Slice Hovis lower carb seeded with Lurpack and pate pate the fruity one.
D. IP Bolognese with Oomi Noodles. Scoop of Halo Top and 2 strawberries.
Aqua yesterday and off swimming now.

Mine is still pretty new to me, and I haven't done any of the ultra timed things yet, but for prime cuts and fish, the timings can be way more forgiving than traditional methods and of course, the moisture retention is fantastic. I also love my vacuum sealer for marinading "stuff" - irrespective of the cooking method to be deployed. Boy, does that way drive the flavour in, and the fridge never smells of whatever is brewing in the bag.

First world issues. :)

Good evening all posting early as out at birthday party this evening.
What a frustrating day - my liver and kidney function have appeared on my record but not the ones I wanted to see - my cholesterol and hbaca1 and as it’s a bank holiday weekend doubt I’ll get them now. I’m starting to wonder if they need to redo the bloods and are waiting till my appt on Wednesday! A guess but after my vein collapsed there was little blood in the second test tube and most seems to be in my arm as a big bruise! Oh well que sera sera! Maybe I’ll get a matching bruise next week for my holiday......
Breakfast bacon, egg and mushrooms
Lunch advocado and prawn low carb sandwich
Tonight will be a curry night and I’ve done a tiramisu with two little ones for weekend puddings! I will be guessing best food to pick but will do my best.
@Goonergal hope your four day break from work and the promised sunshine helps you to get back on the level with your health. The m and s chocolate range sounds worth investigating.

@shelley262 sorry your surgery are making you wait

@ianpspurs my 2 non-negotiables for not giving up are onions - way too carby really, but I just love them. Small quantities not very often. The other is Diet Coke. Did go cold turkey on it for 3 months after diagnosis as was drinking vats of the stuff. It really is too sweet but I like it and since I don’t drink alcohol it’s a welcome change from water.

Thankfully most other things I enjoy are low carb/high fat.

Today’s menu was more controlled

Breakfast - none

Lunch - M&S Serrano ham and manchego rollitos

Dinner - fathead pizza with pepperoni and Polish sausage topping. Best one yet. Dessert was some extra thick Jersey cream with a tea spoon of almond butter and 4 broken up Hotel Chocolat 100% buttons.

B2: 2 x SD mug tea; 1 30 mls double cream; 1 Almond milk

MMS: ⅔ standard mug reheated French vanilla coffee and double cream

L: 3 very large eggs from our own chickens; Bacon; Chipolatas ( Waitrose 1% carb; 0.25 gms carb each according to label) Mushrooms; Tomatoes; Heinz reduced sugar tomato sauce 1.7 gms carb per my tbls

Dog walk 40 mins

MAS: 2 S mugs tea; 1 with homemade almond milk + 1 with double cream

52 mins lawn mowing

D: Starbucks mug coffee with double cream

Lawn mowing

MMS = mid morning snack; MAS = mid afternoon snack SD = Sports direct

@Goonergal Thanks for the non negotiable post. I too love onions so have resorted to spring onions - they are so simple to grow as well!

@Goonergal Thanks for the non negotiable post. I too love onions so have resorted to spring onions - they are so simple to grow as well!
I use spring onions too as a replacement hadn’t thought of growing them - a great idea thank you will look into this I’m thinking through which low carb veg to put in my beds

Had some weird blood sugar spikes today despite not eating many carbs (17g total all day). Not sure what's happening. Hope it settles down tomorrow.

L: Low carb bagel with salami, emmental, pastrami and spinach
D: Chicken and chorizo kebabs, pepperoni crisps, egg mayo, brie, lettuce, cucumber.
Snacks: Adonis brownie
And a mug of chamomile, vanilla and honey tea before bed.
Could you have a bug coming on? I find my BGs start to rise a couple of days before any lurgy appears.

Hi all. Been a bit absent this week - out of sorts feeling unwell and struggling with hunger/eating a bit too much all week. Extra day off on Tuesday so 4 days to sort myself out.

Yesterday’s menu was

Breakfast - none

Lunch - M&S Serrano ham and manchego rollitos, 25g mixed nuts and a few squares of M&S 100% chocolate. M&S seem to have introduced a whole new range of high cocoa content choices.

Dinner - chicken wings coated in Parmesan with buttered cabbage followed by a bit more of the M&S chocolate.

Not keen on the M&S 100%. Will take effort to get used to it.

It’s not as nice as the Montezuma’s ones with almonds or orange and cocoa nibs or the Hotel Chocolat buttons.
Trouble is I could eat a bar of 90% now so I feel the need to persevere as currently I can only stand 1 square of that. It is seriously bitter.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: 2 x boiled eggs with Marmite soldiers made from one slice of HiLo followed by Greek yoghurt and raspberries.
Mid-afternoon: Hartleys 10 cal jelly and a black coffee.
Dinner: 1/2 pack of Tesco prawn cocktail with salad of raw cauli, broccoli and radish with coleslaw and pork scratchings followed by warm low carb lemon drizzle cake and extra thick double cream.

Don't you think your tastes change? I used to hate dark chocolate.

Mine have absolutely, three things I didn’t used to like at all are coconut, sweet peppers and high % chocolate, I love them all now. I still draw the line at olives though! :hungover::yuck::depressed:

@Goonergal hope the 4 days off gives you the rest you need to bring things back under your normal immaculate control.
I’m really annoyed at myself as I went to M& S this aft but forgot to look out for the chocolate. It’ll be a lot more convenient than Hotel Chocolate for me

@shelley262 how frustrating that you only have 1/2 your results. And on a bank holiday weekend too!

I’ve been quite active again today, which has made me hungrier.

B: scrambled eggs with cream, 1/2 avocado.

L: several slices of salami grabbed in a hurry. Choc chia pud a bit later.

D: my family’s fave lchf meal - meatza made with a rolled out M&S Aberdeen Angus burger as the base topped with sour cream instead of tom puree ( simply because I prefer it) mozzarella, chorizo, olives, chilli spinach and goat cheese washed down with a glass of red. A few strawberries and cream soon too.

@ianpspurs I agree with tomatoes as a non negotiable, I don’t have many but would miss them too much to avoid completely, wine is another ( in moderation obvs) and a slice of cake now and again.
I think a cup of tea and slice of cake is one of life’s simplest and greatest pleasures and I was really quite sad at the thought of giving up forever so I am indebted forever to the good people here who have shown me with various low carb recipes that it is still possible. Utter joy.

Oh yes, completely. Chocolate was Cadbury’s dairy milk for me. I think it would taste so sickly sweet now though that I’m not even tempted.

L. Nothing - was going to go to the cafe at the club with No 1 grandson but it closed at 2pm.
D. An adapted version of the DD Keto tuna plate. I reduced the amount of tuna and added a tablespoon of prawns. Substituted lettuce for the spinach and instead of 2 eggs I had 1 duck egg. Also added 2 walnuts and 4 Santini tomatoes. Very enjoyable.

Persuaded No 1 grandson to come with me straight from school to the new club (1/2 day at school on Fridays). Thankfully he loves the new place as he has been complaining all week about the gym closing. 2 hrs swimming! So that's Wednesday, Thursday and Friday I've been but no gym today - just swimming. Feeling quite refreshed.
