What have you eaten today? (Low carb forum)

Very early request for clarification please. Carbs in Portabello mushrooms. Waitrose website says 0.4% everywhere else gives about 10x that level. Thanks

Evening everyone on this most fabulous of days. Got the all clear on my scan today so I’m feeling on top of the world. Don’t need to worry about it ( my consultant called it ‘scanxiety’ the worry that accompanies the regular scans) for another 6 months. Yipee!

Had a v early breakfast
Scrambled egg, smoked salmon and avocado. Then off we went.
Arrived way too early ( about 1.5hrs early) so had a cup of tea in a cafe.

L: scan complete we had 3 hrs to kill until consultant appt. had a nice mooch round Kensington and peered into the gorgeous houses. Found a Byron burger place and had Chicken club salad. Forgot to ask for dressing on the side but didn’t raise bg too much. ( yes! I remembered to take my bg monitor - to be honest it distracted me so was pleased)

Lots of water to get rid of the dye during the afternoon. We thought of staying in town for dinner but just wanted to get home and relax really.
Picked up a bottle of Champagne on the way and had it while cooking
2 Nakd sausages, fried egg and 2 large mushrooms

Nibbled some olives and celery a bit later when daughter came home with a couple of friends.

Think I’ll sleep better tonight than last night. Consultant said that at 3 yrs I can have a small party, and at 5 yrs I should have a big party! ( I’m 1 yr 3 months at the mo and feeling better than Ever)
Night all and thank you so much for your good wishes.
I am so happy for you x. I know well the tension you were feeling since all my siblings live/were living with cancer. Nothing beats that feeling of relief when the news is good.

Thank you Maglil55 you’re right, nothing can beat that feeling.

I think the anxiety is just as bad for loved ones, my husband was a nervous wreck and I had many frantic texts from daughters when they hadn’t heard from me - it was because the appointment was late, but they feared the worst.

I hope your surviving siblings are in good health and good spirits now, sending a hug your way as I can imagine the worry you are living with too.

Nutracheck check and Tesco Website say 0.4 and 0.3 respectively.

Hope you had a good time and I bet you are glowing after all the compliments, it’s a great boost to your morale isn’t it? X

I had a fantastic time thanks @jayney27 , I took the chicken Caesar salad so I knew I’d have something to eat, but had some cheese, sausages (3x small cocktail ones) and a handful of peanuts, reading 5.9 after two hours so all good :)

Wow! So much to go through on this thread. Now at JFK waiting for my flight home having just polished off eggs and bacon in the lounge - used the residual points from my previous job to purchase business class tickets for this trip. All gone now!

Way too much catching up to do on the eating front, so I’ll summarise by saying that I’ve well and truly joined in what seems to be a US craze for high cocoa percentage chocolate and delicious cheese snacks. Particularly excited that one brand of chocolate declared itself ‘Keto friendly’ (although that wasn’t the nicest one). Photos attached - and suitcase suitably full of samples.

Editing to say so glad to hear you got the all clear @DJC3 and hope your son is still doing better @shelley262

A lot of catching up to do as I've had a frantic few days.
Wednesday
Bed 7 FBG 6.1
Grandson free but still a busy day.
B. Yet another lo dough toastie with ham and cheese. Tassimo Americano grande with a dash of cream.
Headed off for a bit of peace at Aqua.
L. Was rather hungry when I got back from Aqua so had some lettuce , couple of Santini tomatoas, fresh anchovies, spoonful of prawns and a couple of Tesco's smoked salmon canapes.
Loads of deliveries today for niece so had to fit shopping around it. Then sister ended up back in hospital but thankfully just one night due to low potassium levels.
D. Eventually remains of a chicken breast with air fried green beans, asparagus and Tesco's cauliflower buffalo bites.
Succumbed to a scoop of Halo Top
Thursday
Bed 7.2 FBG 6.9
Got the boys today and can't take them out as Hubby leaving early for a football match and yet more deliveries expected. Trying to entertain them at home is a nightmare!
B. Before I collected them - slice black pudding, fried egg , rasher of bacon and a bit Mattesons smoked sausage. Tassimo Americano grande with a dash of cream.
L. A Grenade fudge brownie bar - most of the time was spent informing No 2 I was not running a restaurant and if he didn't want any of what was on offer for lunch then no, he could not have sweets/lolly/crisps! That news was sufficient to encourage the consumption of real food.
D. Made sausage casserole for the boys but by the time I got back having deposited them at home I couldn't be bothered with it so made a pizza out of lo dough with passata, salami and mozzarella with a sprinkling of oregano.
Treated myself to a diet coke.
Friday
Bed 6.8 FBG 6.7
Grandson free again as No 1 decided he wanted to play with his friends. Handy as we were going out at night.
B. Made a quick trip to the recycling point with a pile of stuff from niece's house then back to another lo dough toastie with ham and cheese. Tassimo Americano grande with a dash of cream.
L. Hoovered the car after the trip to recycling and refilling the car as I was almost running on empty.
D. Got out! Took the bus up town with Hubby to go to the theatre. Had a very nice meal beforehand.
Baked goats cheese with rocket, balsamic and a grilled fig.
Bunless and chipless chicken topped with mozzarella, pineapple and avocado and they substituted a mixed salad for the removal of the bun and chips.
2 large white wine spritzers with soda.
I gave into the poached pear - poached in red wine, cinnamon and vanilla.
Still don't know how I talked hubby into this show - The Band. It's the musical Gary Barlow had the show on BBC for last year to find actor/singers for The Band in the story. All the music of Take That. I enjoyed it. Hubby thought he was in an alternate reality surrounded by ladies wanting to relive their teenage years (which was the story running through the musical).
Back to normal today!

Yesterday:
B. Slice of HiLo toast with seeded peanut butter, black tea, black coffee
L. Boiled egg and avocado with mayo, salad of fresh leaves and watercress with baby plum tomatoes and baby sweet peppers, four crackers and cream cheese, water
Hot walk down Regent's Street in London with thousands of other people then went mad and had a Gin and Slim followed by 2 glasses of cava.
D. Nuts, 2 small courgette fritters made with chickpea flour, leftover roast cauliflower and chickpea salad. Yoghurt and 2 tinned apricots, half an Aldi salted caramel, chocolate and nut bar.
And I wonder why I don't lose weight!

Thanks. Really good time. Did manage to watch the quarter and semi-finals but very little of the rest of the tournament.
Hope you had an appropriate waistcoat

Welcome home @Goonergal hope you had a great holiday, nice to know you are back safe and sound and suitably stocked up with supplies. I will be stateside in October so will look out for the chocolate and cheese snacks and if found I will do the same.

Enjoy last leg of flights goonergal - you’ve been missed.
Son fine now it was youngest causing the anxiety this time - he’s normally fit and well these days now - he had suspected meningitis on Tuesday / Wednesday but ‘just’ turned out to be a bad case of a flu virus! He’s still not fully recovered but it was more the concern about what it was, as he was so ill and he is improving each day now thank you for asking. Our eldest unfortunately is rarely well and he’s the one I mainly care for.

Today worked very well as I was able to finally wander down the garden and pull lettuce, radish and spring onions , cucumber with tomatoes nearly ready. The food I ate was mostly in season and the routine was right back to 3 years ago at the start of this journey. For now that can be repeated just need to think through/remember what I do/did other seasons. Menu below:

6. 20 - 8.10- 2 pints tea with H/M almond milk to rehydrate
8.40 2 Portabello mushrooms; scrambled egg (2) reduced salt and sugar tomato ketchup ; vente filter coffee with 2 tsps inulin and splash h/m almond milk ( that combo is not a keeper) 20 mins steady ex bike afterwards;
11..20 Vente Filter coffee (mix of 2 types) and sweetener (no inulin); Arla lactofree (not soya ) single cream; ½ h/m High fibre choc toffee bar
14.00 Mackerel salad ( cucumber, spring onions, radish, lettuce, watercress, rocket, spinach, tomato) 1 tsp PHP ; 30 gms chia seeds; 20 mins steady ex bike
15.20 Water flavoured with lime (new water bottle lets me put lime in a grill inside)
16.40 ½ h/m high fibre choc coffee; Tea with h/m almond milk
18 : 50: Goats in blankets; pea shoots and flowers; cherry tomatoes; cucumber; spring onions; lettuce; vinaigrette with PHP; 20 mins steady ex bike
PHP = Psyllium Husk Powder

Breakfast - 2egg omelette and large chunk of smoked salmon.
Dinner - beef tongue, cold turkey breast, cold runner beans and cabbage (leftovers!)
2 glasses of red wine.
Tend to only like carb snacks so have not had a snack since diagnosis. Such is life.

Another gorgeous day here, very relaxing too
Black coffee this morning, again didn’t feel hungry so skipped breakfast, however, this doesn’t seem to lower my BG. I woke to a round 6.0 and after 7 hrs, no food just the coffee I was 6.1
I did then eat, pepperoni and mozzarella slight rise from the 6.1 to 6.4
This afternoon I relaxed in the sunshine and around 3pm had coffee with cream, choc olive oil cake with a little bit of cream after 2 hrs down too 5.8
Dropped again to 5.4 when I had a small salad, chicken and chorizo kebabs, homemade, a couple of hot dog sausages wrapped in bacon and mayo
It seems fasting has the opposite effect for me, I get lower numbers later in the day and after I’ve been eating?
Strange beast this diabetes :sour:

Evening everyone.
Good to see you back on here @Goonergal I like the look of those cheese crisps. Thanks for the good wishes.

@Rachox your reunion sounds fab, it’s lovely to see genuine surprise on people’s faces when they haven’t seen you for a while.

I’ve had a relaxing day today, not quite sure where it’s gone to be honest.
B: Oopsie bread rolls x2 with spinach and poached eggs. Wish I’d made some hollandaise too. Coffee and cream

L: 2 more Oopsie rolls with M&S creamy cheese and smoked salmon and a green salad with olive oil/ acv dressing. SF jelly and 1spoonful of cream.

Afternoon a big jug of iced tea and some radishes with homemade baba ganoush ( Googled recipe and used Jamie Oliver’s: dead easy and no low carb modifications needed - 1.5g carb per tablespoon) Number 3 daughter who was home for a couple of days earlier in the week deckared this the nicest thing she’d ever eaten! She polished off most of my DD crackers with it too.

D: Kobi Keema ( a dry mince and cabbage curry) cauli rice and a dessertspoon of dahl. Choc chia pud afterwards and a glass of red now.

@shelley262 I hadn’t realsied your son had suspected meningitis - how scary for you all. I’m so glad he’s on the mend now and it was ‘only’ flu.

Today has been an Eating Day :D

Full English, minus the gluten
Afternoon snack of 2 slices PaleoBrot with vintage cheddar, Branston and mayo. Went a bit mad with the Branston. Blast from the past! Childhood memories in a jar...
Evening pizza made with lo-dough, cheddar, mozarella, passata, ham and pepperoni. Also about a teasp of finely chopped green pepper and onion.

So, a day of low carb bread.
You might have noticed all the lo-doughing lately. Lol.
Been giving it a good going over to see if we want to reorder.
Mr B certainly wants to!
The pizza today wasnt as good as a fathead pizza, but then it only took 5 mins of prep, and then 7 mins in oven, and it was still very nice!

I’ve also been hammering it every day for 3 days to test intensively whether i react to the wheat fibre like i react to gluten.
No problems so far.

However, i intend to ease off soon. Far too expensive for everyday use.

Thanks for the welcome back all and very good news about your son, @shelley262 must have been very worrying for you.

@jayney27 if you see the Taza wicked dark chocolate on your trip, avoid it! I threw that one out after 1 square. Really dry and not tasty at all. The Alter Eco and Trader Joes are the nicest bars and the Ghirardelli 92% good as come in individual squares (and bars). Cheesy things are great. Also look out for Volpi Roltini - like giant M&S rollitos. Delicious.

Pleased to report a low carb flight home - with some tweaking of their menus and addition of my items:

Breakfast - in airport. 2 fried eggs, bacon and a Roltini.

Lunch - got them to ditch bagels and rolls and give me a plate of smoked salmon, cream cheese and bacon. Added 35g bag of salted macadamias.

Snack - bag of cheddar Whisps.

Dinner - steak. Ditched potatoes and sauce, used the butter which looked lonely without any bread, as an alternative sauce. Added 25g Trader Joes 85% chocolate.

On way home and looking forward to bed!
