What have you eaten today? (Low carb forum)

It's really good. I'm getting quite attached to this monk fruit sweetener. It looks like sugar, acts like sugar and no nasty aftertaste.

When you say it acts like sugar, could you brulee with it?

Hope all on the mend now - I think it is probably worse feeling ill when the weather is hot so it’s great that it’s cooling down now - should help sleep quality. My second birthday went well had a few issues with autistic son and mums whistling hearing aid But hey we got through it!
Breakfast bacon egg and mushrooms
Lunch lc seed crispbreads, pate @nd cheese
Dinner fillet steak, cauliflower cheese and a few tomatoes followed by a few strawberries and cream and a cup of coffee with a birthday chocolate from hotel chocolate from their low carb varieties gift from youngest son.

It caramelises so logic tells me it should. I'm sure @ianpspurs said inulin brulees?
You've encouraged me to make a brulee at the weekend and since I have both I will have a comparison between inulin and monk fruit with my trusty blowtorch. In the interests of The experiment I may have to eat both though.

I haven't had my blow torch out in an age, and I've been finishing off any SV items on the BBQ or with the heat gun, but I've been scratching my pyromaniacal itch with the weedkill flame thrower.

A girl's gotta be resourceful. :)

@maglil55 so sorry there are problems with your sister’s care, I’m amazed your bg levels are so good in such a stressful situation.

My menu as follows
B: smoked salmon, scrambled egg and avocado with coffe and cream.

Eldest daughter invited me on a ‘gentle’ walk with her Gt Dane - just 4 miles but Cornish terrain which was v hilly and rough - my enfeebled muscles struggled and I was really glad to find a pub at the end where we had lunch.
Ham egg and chips without the chips. They did me a lovely salad instead with homemade coleslaw and soft boiled eggs rather than fried. 1 pt Diet coke, then coffee and cream.

D: steak mushrooms and salad greens. 1/2 bottle of red.

My IP arrived! Spent the morning admiring it and meant to get meat from the butcher today, but was back from daughter’s too late and it was shut. It’ll be my priority tomorrow.

I'm surprisingly calm as my BGs show. I guess I'm more frustrated than anything else.
I sympathise with Social Work as they cannot magic staff who are not there but sympathy doesn't help an impossible situation.

I nearly ruined it before I started! Washed the innards then went to do the ‘water test’ : chucked in a cup of water then realised the inner pot was still on the draining board.

I can understand your frustration with the lack of support staff for your sister - it’s not their fault but it makes things so much more difficult for your sister and everyone else who loves her. It’s an awful situation.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: egg mayo with raw cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: lemon chia pudding and a black coffee.
Dinner: kedgeree made with cauliflower rice, smoked mackeral, egg, garlic, spring onions and petit pois followed by SF jelly, cream and a spoonful of LC chocolate granola.

I can understand your frustration with the lack of support staff for your sister - it’s not their fault but it makes things so much more difficult for your sister and everyone else who loves her. It’s an awful situation.

Oh heck. Have you given the pot a decent opportunity to dry out?
 
B. Semi-dead avocado so I rescued bits of it, mashed it with lime juice, salt and pepper and chopped tomatoes and had it on 2 slices of HiLo toast. Black tea and black coffee.
L. Out in cafe. Falafel and grilled humous, mixed salad, some chips, black coffee.
D. Laksa prawns, tbsp rice, leftover courgette and green bean salad, Jelly and a few berries.
 
Evening all, as forecast we have had some showers today, very much cooler but alas grey skies :arghh:
B Coffee with cream and a cheese omelette
L 3 small slices of pork loin wrapped around little chunks of Bishop cropwell cheese, peppers, cucumber and a pickled egg with mayo to dip into
Frothy coffee and 2 squares of Lindt 90% when I got home from work
D sausages, asparagus wrapped in bacon, mushrooms and poached egg

Basically they are turkey mince meatballs with plenty of seasoning (garlic, onion and twiddles) and a v intense sauce made from dry cider, tomato purée and balsamic vinegar. So intense in fact that you don’t need much of it!

The recipe is from the Official World of Warcraft cookery book, which is rather surreal. ;)

Oh look what I've found IP creme brulee with a Monk Fruit topping. What more could we ask for.
Now that @ianpspurs has confirmed the inulin I will still try both but its not an IP and blowtorch job.

Not sure if the right thread but today is exactly 2 years since we started making our own almond milk. Don't think we would ever get enough almonds from our land but it is worth investigating now winter has set in:angelic:
Update: Mrs P has gone rogue and ordered all sorts - my fault for buying her an iPad:bigtears: Man struggled to the door with a large box from Bulk Powders. One of the items was a range of syrups which taste very good - the Maple one is rather spiffing for me and puts some of the Hemsley gals recipes back on the agenda. She is currently making high fibre chocky bars with inulin toffee and the chocolate caramel syrup , which was very much to my taste.Link here if it is of interest - if not no worries
