What have you eaten today? (Low carb forum)

Breakfast (10:30am) Bacon and Mushroom Omlete
Lunch (2:00pm) mug of homemade Brocolli and Stilton Soup and 4 Homemade cheese 'Nachos'
Snack (3:30pm) handful of cashew nuts
Dinner (6:30pm) Homemade pork, leek eggs and cheese 'muffins' - 1st attempt and turned out really well.

Also made a Latticed bacon based 'Pizza' with a cheese and peppered german sausage topping for tomorrows Dinner
Sounds excellent menu hope your pizza invention tastes good it sounds it.
 
This was my tea last night- beef, chorizo chilli with one spiralized carrot in the whole pan, two peppers, chillies and onion. Spiralized courgette too. Hard cheese on top. Had half a slice of lo dough bread with garlic and cheese on. My levels went up by 4mml! I'm trying to work out what spikes me, I'm not in ketosis or anything I'm just trying to get my levels down. I'm thinking possibly carrots and peppers? Thanks in advance!View attachment 28444
Hi I think it may be the carrot I can’t have them but it’s individual but also could be the onion I use a small amount of spring onion or a sprinkle of onion salt instead for flavour. I have pepper which for me is ok but not huge amounts. A bit more experimentation needed good luck!
Edit ps lo dough seems to be fine for most of us it’s hardly any carb at all!

Carrots and peppers spike me - at least when cooked.
 
if I may take liberty to ask, what do you refer as levels that required meds, interested. Here in spain they put myself with meds when in surgery white coat syndrome situation were showing 130/80. I had no idea of levels at this point, after this I did homework and researches and found out not one number fits all and age also is important. To indicate or compare when my blood pressure is taken at home environment, using I might add exactly the same brand make blood pressure monitor as the Doctors office uses my numbers are 107/62 heart 74 for example this morning, and highest ever over 3 years have been 117/78 heart 80, I drink coffee two times a week black no sugar, each body and person differences re tolerance zone as you say, curious the level coffee upts one to a degree it requires medication, as for sure, my Doc medicated myself, unnecessarily, after I did research, his thinking was 130/80 a one off level test, was higher than my majority normal, due to worry, anxiousness, nerves as always in the surgery, and yes it really does exist white coat, my current doctor refuses to wear a white coat, its so funny he has it hanging behind his door, why, to try and save people having a white coat syndrom.

I agree with you @pollensa , i also have white coat and yes it is real. My blood pressure when at home for the most part is 116/64 almost always. At the doctor it can go as far as 160/74. He still thinks i am like that all the time even after i show him my blood pressure kit. It's so frustrating.
 
B, Bacon and scrambled eggs and green tea. L.Nothing, just tea and fluids in general. D. Porterhouse steak with broccoli and cauliflower casserole i got of diet doctor and green tea. Might have some strawberries and cream later.:singing:

Didn't post for two days -- been spending time outside having fun. It's surprising how many posts accumulate in such a short time.

@DJC3 -- Congrats on your HbA1c results. I understand they are higher than you like. I really empathize with your frustration, as your daily blood sugars were much lower only a month ago. (and yes, blood sugars a month before the test contribute about 50% to your results). The important thing thoug is they are still in the non-diabetic range, so well done.

@ianpspurs -- Is there any reason, you are trying to avoid erythritol and have switched to inulin instead?

@lcarter -- Lots of good comments on the reason for the rise so far. I agree onions, bellpeppers, and carrots can lead to a rise as they have about 5% carbs. Could the beef and chorizo maybe also contribute to it. I am not a T1, but have often seen posts that say that protein can also lead to a rise in blood sugars for T1s. Just a thought, though.

Well, let me see if I can remember what I had for the last two days.

Friday

Breakfast: Two double decaffeinated espressos with cream and erythritol. Scrambled eggs with fried okra (frying it does away with the slimey taste, which I hate) and cheddar.

Lunch: Nothing.

Dinner: Eating out with my hubby at one of our favorite tapas places. One at half glasses of rioja, a few slices of manchego cheese, a few fried sardines, a little bit of cucumber and tomato with aioli. A couple of pieces of 85% chocolate.

When I got home, I was still hungry, so I had a bit more chocolate and a DD keto roll with beef salami, another Spanish cheese (not Manchego, but forgot the name) and mayonnaise.

Saturday

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll with mayonnaise, lettuce and shrimp. Scrambled eggs with cheese. About ten small strawberries with erythritol-sweetened whipped cream.

In the afternoon, we went to Düsseldorf, did some windowshopping at the Kö (which is a much frequented street with lots of premium designers, also a good place to watch people) and had a cafe macchiato with erythritol.

Dinner: Lamb with an avocado, Lamb's lettuce with Caesar's dressing and parmesan. The second to the last piece of the carrot-zucchini cake -- still good, but getting a bit crumbly by now.

@ziggy_w Your menus sound divine - manchego is a winner with me. Erythritol is not a taste or texture I like unless massively disguised in the few cakes I eat. In that recipe I can't see the purpose of eyth if anything it just spoils things. Basically, I seem to either want very sweet or nothing hence triple zero stevia or sucralose.
 
Do you know of a source of inulin that won’t break the bank? I’d only use it for CCBs and can’t justify that. I have bought some monkfruit sweetener as recommended by @maglil55 so might try that in the caramel next time.
I got mine on Amazon but there was an offer on at the time. The Lakanto Monk Fruit the Diet Shop were the best prices for that.

A few posts have been deleted this morning from this thread.
One was for advertising/promoting a holiday destination.
The rest were for debating the moderation decision, instead of taking the matter to a private message (as per the forum rules).

I would like to remind everyone that while this is most definitely a friendly, social and supportive thread, it is also intended for people to give details of their food intake. It allows us to keep track of what we ate, and gain inspiration from what others eat. Friendly chat is a nice spice on top of that, but it would be a great pity if the low carb food emphasis got buried under pages of posts on other subjects.

Sorry if this cramps anyone's style, but the reason this thread is so popular, long running, and helpful, is because of the emphasis on low carb food, not in spite of that emphasis.

So, in the spirit of this thread:
I just had an absolutely fabulous low carb gluten free brekkie while out on dog walk.
Bacon, egg, mushroom, a few beans, a tiny slice of GF toast and butter and a pot of echinacea and raspberry tea.
Lovely.

Got to agree. Carrot is a tiny quantity veg for me. Lo dough? I doubt it would do anything.

How are your blood sugars? Have you gotten over your flu/cold-like thingy?

You are right, we've been to the tapas place much less often lately. There are two reasons for it. First, we've also found a French tapas place, which has gorgeous foods, so we tend to alternate these days. The other reason is that I went a bit overboard with clothes shopping (which is a nasty and expensive habit, though it is just so much more fun now that I fit into smaller sizes) -- anyway had to make up for it by cutting back on going out for a bit.

Once again I have a lot of catching up to do. Think I got as far as Wednesday last time.

So , Thursday - Bed 5.8 FBG was also 5.8. A busy day. Usual school run but have the boys here for dinner after they've been to after school club. They requested mince so the IP will be on the go.
B. Tassimo Americano grande with a dash of cream.
L. Once I got the shopping a slice of Tesco high protein bread with pate pate the fruity one and 4 mini plum tomatoes.
D. Venison burger with mushrooms, mini plum tomatoes, slice cheddar melted on top, lettuce, 1/2 avocado. A little Frenchy's mustard on the side.
Last of the Keto creme brulee.
Friday - 1/2 day at school so got the boys from lunchtime . Going out tonight with the visiting in-laws from Australia.
Bed 5.2 FBG 5.8.
B. Stuck with the slice of Tesco high protein bread with pate pate the fruity one and mini plum tomatoes. Tassimo Americano grande with a dash of cream.
L. Nothing was busy with the eating machines home from school.
D. Went to the local Argentinian Steak House. Started with calamari. The just spice them - not a drop of batter or crumb in sight. They serve the spiced calamari with a very delicate salad of rocket, peas shoots and radish. They are spiced with chimichurri.
8 oz rib eye with salad, mushroom , tomato and wilted spinach.
Couple of large glasses dry white wine and a liqueur coffee. Wheels then came off the wagon as I had 3 tia Maria's. Didn't do any damage until next day.
Bed 4.4 FBG 5.6 - obviously I'd kept my liver busy with the alcohol. Going to visit sister today.
B. Tassimo Americano grande with a dash of cream. Wasn't going to eat but my rising BGs was enough to add in a slice of Tesco high protein bread with a slice of melted cheddar cheese on it.
L. Black coffee before heading off.
D. Shopping on the way back from Sisters and never have I been so tempted by a Scotch Pie! But I resisted.
Early dinner. Slice each of roast pork leg, ox tongue and ham. Lettuce, mini plum tomatoes, cucumber, radish, egg mayonnaise, coleslaw and another coffee.
After hitting 8.6 earlier in the day my BGs had returned to more stable low 5's so I didn't suffer too much for my Tia Maria fest.

@ziggy_w nice to see you back, with a very good reason for not being around! About to do the same - sun is out.

Posting early to thank whoever it was that posted the tuna melt recipe - I think it may have been @Rachox delicious!

Dinner will be short rib beef. Salivating already.

Hi ziggy - I've just updated. I had a self inflicted jump but as it was alcohol inflicted I've returned to normal.
I know what you mean about clothes. I was picking up some bits and bobs and bought my "usual" size only to have to take them back and drop 2 sizes. My mind still didn't see myself as thinner even although I know I've lost a fair bit weight. I think the trouble is I still have a bit to go so it doesn't register. As least it didn't until we were out on Friday.
I usually avoid photos but there was one taken with Hubby and sister in law and that's when it dawned I am a lot thinner - Still a bit to go but its the first time I've been conscious of the difference. Still at least I can invest in some smaller clothes now!

Don't invest in new clothes too heavily while you're still on the way down. I bought a couple of pairs of smaller trousers, wore them only a few times before they were also too big and I had to buy more.
