What have you eaten today? (Low carb forum)

Breakfast - Hi-lo toast with butter
Lunch - Rollitos, yesterdays chicken cold, salad and olives. Berries and cream.
Dinner - Chicken liver pate with home made flaxseed bread, more salad! Lindt 90% chocolate
Supper - Pork scratchings! (I miss crisps)...
 
Hi all

Eaten a lot today. Mixture of being hungry, picking and reacting to a stressful day at work.

Lunch was a reheated tuna melt - agree @Rachox they are delicious - and a selection of the treats I took to work

Dinner was 2 Waitrose free range Cumberland sausages and 2 rashers bacon followed by some moon cheese and salted almonds

Throughout the day picked at CCB bars, chocolate almond squares and lemon zucchini cake that I took to work.

@Guzzler good to see you on this thread

@DJC3 all the CCB controversy and experimenting paid off, they were the most popular of the 3 items I took to work today

@jayney27 did you enjoy the nut butter squares?

It’s an American invention - delicious snack. I spent a lot of time tracking it down on my summer trip and brought a few bags back. https://mooncheese.com/

Also found another brand called Whisps, which are even nicer: https://www.whisps.com/

Today we ate very early, because we were both hungry. As I was head chef today, I chose, and chose this, which I had never done before: https://twosleevers.com/instant-pot-chicken-adobo/

It was so simple, and very quick to make, although I had started it before going out for any appointment at 14:15. The cauldron and it's Keep Warm function comes into its own again.

I like Two Sleevers recipes, but the other Adobo recipes I looked at contained onions and they were considered an important ingredient, so I threw some in.

It was delicious.
 
Breakfast one quarter piece lodough eggy bread with fried egg on top
Lunch one tin mackerel in olive oil with AVC and lc seeded crispbreads and some nuts. One square 90% choc
Dinner chicken and salad followed by raspberry clafoutis with cream and yoghurt.
Managed lots of walking today lovely weather but work meeting tomorrow - where did the summer go? Made us think about hols hoping to sort one out soonish.

Oh yes, mine are quite unique as I didn’t have enough almond butter so added some chocolate peanut butter, also used up odd squares of dark chocolates so they contain some hotel chocolate dark batons, green and black dark with chopped almond and some with a hint of orange flavour. I had one with my afternoon coffee, it was delicious and because I made them in my flower shaped cases they look extra special too.
 
Hope everyone had a good day - autumn is coming, chickens go in coop before 8 these days. Mrs P's finger requires antibiotics but they seem to have had an odd effect - apparently I loaded the dishwasher correctly:angelic: Fitbit have fixed the software so I can add and edit foods, so I now analyse again. Database reckons today was keto - stroked my ego a bit but didn't do anything else for me. Try again tomorrow.

Wakey Wakey: 3 pints tea with almond milk - standard fayre
Beakfast/Morning snack 11.00: 2 x Schneider Brot Protein bread toast with smashed avocado and tsp h/m mayo; 3 pints tea
Lunch: None
Afternoon snack 14.45: CCB and Tea
Evening meal : Ribs cooked in oven ( long story but not great); mushrooms and 8 cherry tomatoes cooked in Goose fat - read about Gascon paradox yesterday

Just waiting for dinner to finish cooking so I’m catching up.
No breakfast and as per norm for me BG didn’t come down even though I didn’t eat anything until about 10.30
Almond milk smoothie with a little bit of low carb home made granola to make it chocolatey
L lo dough cheese and tomato quiche M&S chorizo crisps and their lovely scrumptious whipped cream cheese
Coffee with peanut butter square yum yum
D caramelised onion burger, portobello mushroom, celeriac chips
Will have a glass of wine when I get home later, need to pop to a friends first

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll, half with goat cream cheese and smoked salmon, the other half with cheese and beef salami. Lamb's lettuce with Caesar's dressing and parmesan. A soup with mushrooms, tomatoes, bellpepper and merguez sausages.

Snack: Overdid it with half a container of Oppo's chocolate-hazelnut ice cream. Measured blood sugars after and results were 6.2 at half an hour. After 50 minutes, they were already on their way down with 5.9. So, no damage done and good to know that my body can handle this. Not that I'm planning on having half a container of Oppo's regularly.

Dinner: Cauli rice with coconut milk, coconut, onions, lime oil, cilantro, onion and cilantro with pan-seared filet of fish. About 10g of 90% chocolate.

L: Out with a friend in a trendy cafe. Chargrilled chicken breast with 3 salads - roast cauliflower, broccoli with ginger&soy and roast red pepper with feta. All delicious but expensive

A handful of hazelnuts late afternoon

D: After yoga - starving, had a whole tub of M&S prawn cocktail with an avocado. Then strawberries and cream.

Hi @DJC3,

Agree. Before diagnosis, I could have easily emptied an entire container of Hagen Dasz by myself. Now, I usually try to limit ice cream (Oppo) to about one-fifth of a container.

I am grateful that Oppo has decided to introduce their ice creams to the German market and to all of you for recommending it.:happy:

And did you find anything useful? Confit duck would be fine but I don't see how you would make a good LC cassoulet - I loved that dish. Big Rugby area and Armangac is in there so it gets my vote.

It was interesting to be sure and I could just eat confit duck, (even though Ive not long had a meal) as for Armangac, haven’t had that for yonks, reminds me of my lovely dad who was a bit of a bon viveur.

I need someone to find an LC cassoulet recipe perhaps using rutabaga (swede) or celeriac in some way and, off topic, I definitely feel deep inside I missed a trick not upping sticks to Aquitaine. Not likely now as Mrs P seems to have an irrational attachment to those gals:arghh::arghh:

The beans are an essential part of cassoulet though, how would you substitute them? If you just put swede or celeriac in, it’d simply be a casserole. Let me know if you figure it out.

I can imagine you as the new Peter Mayle, but you’re right, wild horses won’t drag Mrs P away now. I’d be the same.
