What have you eaten today? (Low carb forum)

No, I used stewing steak, which I think is skirt or flank, from our butcher, if I recall. Ox cheek would worrk very well for it though. The ACV and lime juice act as tenderisers, so I imagine it'g go very nicely.

To be honest, I don't get too carried away on exact amounts of meat etc. I decide what amount of meat we need for any given meal, then for things like this, double it, so that we have leftovers/freezer candidates for another time.

In this hacienda a recipe is like a line drawing we "colour in" as we wish. Of course, sometimes it goes horribly wrong, when I'm in the hot seat! MrB is far more bullet-proof in culinary matters than I am.
Thanks for that - kind of answered some of my concerns. Even after 3+ years I am struggling with quantities to eat - some of the recipes don't seem realistic - way too little even for my reduced frame. All the carb counting, ratios, not too much protein, etc seems to have removed all the common sense and pleasure from food. More of an advanced maths exercise each day - think I need to take back control.

I’ve been at work all day - in all fairness fasting till 6pm happens frequently as I’m not a breakfast person and am usually so busy at work before I know it lunch has gone. Don’t think I could attempt a fast at the weekend when I’m home all day. Way too much temptation lying around

I agree, I find it difficult at the best of times, impossible if home all day. Well done anyway.

I also didn't shred the meat at the end. Radical? Moi?

I hope you find your ring, I often find mine slipping when I’m washing up etc so I think I need to get it altered before I have to go rooting through rubbish or drains ;)
I know what you mean, my engagement ring is so loose now, especially now it's colder. Taking it to be re-sized tomorrow. Didn't realise you could lose weight from you fingers!!

E9A52F4B-B383-47E5-9208-6941B08A0AFA.jpeg Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cod fillet with creamy peppercorn sauce and mixed veg followed by Greek yoghurt and raspberries.
Mid afternoon: peach chia pudding and black coffee.
Dinner: fathead pizza topped with sour cream, chicken, mushroom, orange tomatoes and extra strong cheddar.

I much prefer sour cream to tomato sauce on pizza too. I’d never come accross it before reading this thread.

Ian I hope you eventually find that ring!

Very early morning / late midnight snack of applewood smoked cheddar & a few roasted pecans instead of breakfast (due to little dog coming for a cuddle just as I was dropping off to sleep - as a result ended up wide awake all night); mid morning decaf hazelnut with cream.

Lunch: chicken stock cube "soup"; more of my shredded ham and mixed pea salad; choccified Meridian crunchy hazelnut butter pud; apple ginger, cinnamon tea. Couple of pieces of 85% Lindt choc.

Dinner: chorizo sausages with rather too well wilted in butter kale with roasted salted pecans, a few cranberries, sweet paprika and a splash of lemon. (Variation of a Diet Doctor recipe which I also use with pork or pork sausages, and sometimes cabbage mix instead of kale. I love both the rich colourful look and the taste of it!) Finally :joyful::joyful: very last of raspberry Oppo with a teaspoon of chia berry jam and some fresh raspberries. More apple etc tea.

Stable levels all day after yesterday's high and slightly wobbly ones, with pre dinner 6.7, post 6.9.

ETA @Janey27 I 'd gone up a good half to full shoe size and into a wider fitting after I'd put on a lot of weight pre diabetes - the first thing I really noticed was this reducig to original fittings when I first started low carbing . Sadly now oedema means for the time being I can't even get my old big fat shoes on again... :banghead::banghead:

Hug for the oedema and concern about the ring.

You might find this site useful @ianpspurs There are some interesting recipes using the noodles and the rice.

@SueJB Thanks for the link it looks good. The first thing I latched on to was the sweet mandarin sweet and sour sauce but couldn't find it. That is absolutely top of my list of something i want back in my world. At first I saw eat water and thought someone is having a "right bubble" What I like most is a section headed wellness which seems (to me) to be a dog the doesn't bark much in the low carb counter culture.

@ianpspurs - Are there any detectorists in your area, who could scan the area around your trampoline with their gizmos? You could pay them in beer or LC hot chocolate?

You could have a look for Nextdoor (website and app). Our village has one. There's stuff on there from lost cats, to looking for someone to clean ovens, to someone looking for storage space, and so on.

Thanks for that. I am sending Julie to scour the area whilst I swim and stack logs, She commissioned the ring in the first place.

@Goonergal I’ve just received a surprise package of 5 Teaolat bags! A friend who travels a lot for work went into the Leeds HC looking for them for me, they didn’t have any in the shop but when she asked in the cafe they just gave her 5 free!!!
