What have you eaten today? (Low carb forum)

Evening all. Mild and drying day in The Fens so hope all you at altitude had a good day. More food on board today and a new addition to the menu - evening meal awaits.
Nothing but tea until about 15.00 hrs then manchego with chilli, chorizo and olives followed by BLT with mayo on livlife bread; several crescent shaped CCBs which tells you I was hungry - needed refilling (polite version). Evening meal in a few minutes: Pigeon casserole from IP and veggie crisps - dehydrated then deep fried.
@dunelm that bread looks good. @maglil55 thanks for the website link the food fairy has apparently ordered comestibles without a chitty.
Edit: The Pigeons were very nice as usual just a pity season is so short, At 80p each - 1 per person - an amazing bargain way cheaper than pheasant which is over rated in comparison IMHO. Veggie crisps worked as well so game and veg comes up trumps.

It was amazing!!! Anybody have any ideas whether this sort of recipe could be re-heated? The cooking time means not doable for work in the week unless I could make of a weekend and warm up of a morning in the microwave?
Mid afternoon - bowl of berries, extra thick double cream and chopped hazelnuts

Dinner - can’t lie, no idea yet. Gin has been poured - only ever have one or two and only been a couple of occasions. Not had a ‘real drink ’ So to speak since diagnosis as feel like I can’t or shouldn’t. Even on holiday I was very restrained. But after almost a whole day of coursework I’m totally in the mood for a few drinks and an unwind. The music is on, the crazy dancing around the living room will soon commence so not going to punish myself, going to try and enjoy my night - and my promised lie in in the morning!
It's very frittata like so should reheat fine. If you're going to give it a blast in a microwave I'd be inclined towards a quick blast (30/40 secs) if it's high powered as there would be the risk of it going rubbery. Oven? Wrap in foil and a low heat to warm. Looks like it would be good cold too - I can see a tomato relish going well with it.

@Emma_369 I agree with @maglil55 it seems like a frittata to me and I’m sure it’d be just as good cold as reheated. It looks great.

My omad day is tomorrow, today just breakfast and lunch, bgs been a lot better behaved today thank goodness
B: Smoked salmon, avocado and a scrambled egg. Coffee&cream
L: 2 poached eggs on wilted spinach with grilled halloumi and chrorizo.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: fried egg, bacon and cherry tomatoes followed by Greek yoghurt and blueberries.
Mid afternoon: caramel Carb Killa bar and black coffee.
Dinner: gouda and chorizo rollitos with cauliflower and brocolli salad, coleslaw and pork scratchings followed by SF jelly, cream and LC chocolate granola.
 
Hi all working again today - needs must - but at least it was rainy here and I’ve finished for now so on with the weekend!
Breakfast bacon, egg and one slice of lc Lidl roll toasted
Snacks at desk - with cups of tea and coffee - a few nuts, slither of hc Yule log (OH working on reducing it now but still a bit left!) later one square of 90% Lidl choc and one 100% hc button ( think it was boredom with the Content management programme I was working on) ! Probably should have taken time out and had a proper lunch!
Dinner chicken curry on bed of cauliflower rice with two white wine soda spritzers ( just a dash of white wine for flavour) and lc lemon mousse.
@dunelm once I’ve reduced my freezer supply of lc bread I must have a go at that bread recipe. Funny about the PH comment - I was thinking when looked at that recipe that I may adapt a bit and add some powdered ph I love the stuff and think it improves many recipes itsclearly individual preferences!

Snap, I was going to say the same. Frittata reheats really well, but also great cold for lunch boxes.
 
Yeah that’s a fab idea. I could make the mix then muffin tin pour it so I’d got individual portions. Thank you!

Have you looked up recipes for "Egg Bites"? They're just individual portions of eggy deliciousness. Some folks do them in a muffin tray, ramekins or even mini kilner jars, the latter for ease of transport to work, picnic, or whatever).

Something like these, although these are titled Egg Muffins?

A pretty chilled but damp day today here in the Peaks with nothing much to report. We had a lovely walk to a local village and popped into another local café (we'd already had breakfast out) for a coffee. Ordered new yoga kit, as my stuff was far too big and has gone to the charity shop. Hoping to sign for a new class when it arrives.

Brunch: At our fave local café. Mr B had full English without the toast, beans or hash brown. I went ever so feral and had a Derbyshire oatcake with smoked salmon, cream cheese and spinach. All washed down with americanos with cream.
Dinner: Chicken escalope coated in Parmesan, almond, thyme and lemon zest. Served with avocado, tomato and little gem salad. Small portion of courgette shoestring fries.

The shoestring fries need some work. I think I cooked them at too high a temperature, as they caught in places. However, the chicken worked really well. I used to make a similar dish with breadcrumbs before we went low carb. I honestly couldn't tell the difference, it was delicious! I'm now thinking chicken Katsu curry might be back on the menu served with cauli rice.
