What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over roast chicken, veggies and gravy followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: gammon steak and Mediterranean roasted veggies followed by SF jelly, cream and LC chocolate granola.
 
Quiet in here today. Must be the holiday season....

Eaten a lot today.

Breakfast - hungry early on. Ate M&S smoked Lochmuir salmon parcels (smoked salmon with salmon mousse) and copied @gennepher with a couple of squares of 92% chocolate. Leaving said chocolate at work on Friday worked for chocolate avoidance over the weekend, but I hadn’t hidden it well enough to avoid eating it at work.

Lunch was 2 fried eggs, 3 rashers bacon and grated cheese and a bit more of the chocolate.

Dinner was a Diet Doctor breakfast sandwich followed by cream and almond butter.

As designated baker for 2 birthdays at work this week, made a batch of CCBs and a raspberry clafoutis; chocolate olive oil,cake to follow tomorrow. Have sampled the CCBs and decided I no longer like them.

@shelley262 hope all goes well with your mum tomorrow and have a fabulous holiday in Spain.

NE1: a handful of almonds
NE2: beef broth with a dollop of wild boar pate stirred in. I bought the pate jar nearly a year ago and opened it on a whim. Rather disappointing! My chicken liver pate is better. Which surprised me.
NE3: beef burgers with cumin onion rings. We were out. This time i asked to swap the chips for some bacon and they agreed. It was fab. Result, eh?
 
Lunch yesterday: Corned silverside fritters.
Dinner: Steak and veggies, gravy.
Breakfast: Cheese and mushroom omelette, steak, tomato, reheated spudlite, makes a change from bacon.

Drinks: Coffee no sugar / sweeteners, water.
 
Hello everyone! I am never ever ever going to catch up. It seems to be a choice between playing here or getting enough sleep. And for 3 days I've been afraid to even open the app bc I'm so far behind. However! Turns out y'all are my "hold me accountable" small group. So I'll try, try, try. Last week I had several really miserable days that resulted from 10 days of going full-out on way too little sleep. Don't want to repeat that.
Also, been spending more time on the dementia forum I frequent. Mom is declining mentally and I want to be familiar with things...
There has been lots of zucchini spiralizing going on here. Served it plain, with jarred spaghetti sauce (sickly sweet!), with grated cheese, and with smoked trout on top. That one was the best because... Smoked Trout!
Yesterday I invented the LC root beer float, a flavor from high school that still tastes good. So I took a can of root beer flavored seltzer, and added cream to it:

Yummm! It even looks like the old A&W draft root beer float, minus the brown and the frosty mug.
Today:
Bfast usual 1/2 avocado, handful pecans, 3 tbsp dunnie, decaf/soy/cream.
Lunch: avoided noontime group meal at a Bible study I took Mom to. Fooled her into thinking I'd eaten mine and the lettuce was my leftovers. But there was a stressungry NME at about 3:15: scoop cottage cheese, tee many poocans, and 1 sq 90% choc with cream. Cold cream doesn't do squat for melting the chocolate but didn't have time to make more coffee. Out to rehearsal. Back soon, and pow! it's time for supper:
Celery, spinach/hm dressing, my brown bread also with dressing.
Hope I can keep bedtime snack to a bare minimum!
See? Now I have to go do stuff! When am I going to catch up on 5 days of posts??! I am so sorry I'm missing so many things but I really am thinking of all of you.

It seems that while your liver is dealing with alcohol it cant push sugar out at the same time so it often helps in these situations. Not if you have too much though lol.

I am no expert but most people prefer dry wine or spirits with lo cal mixers. I imagine sweet licquers, sweet or fortified wines would be no nos as is Beer. But different people probably have different tolerances as usual. I was quite fascinated by your root beer seltzer with cream which I have never heard of and am quite certain I wouldnt enjoy. Each to their own.
 
Quick Venison meatballs in Tomato & Basil Sauce with Zero carb noodles/spaghetti.

Sometimes I can't be bothered to cook from scratch. I need something quick, easy & filling which is low carb too. So for the family evening meal, we had Lidl Venison Meatballs with a jar of Lloyd Grossman Tomato & Basil sauce. Sometimes I bulk the sauce out with mushrooms or whatever veg is in the fridge...but not tonight. This was served with Bare Naked noodles as a spaghetti substitute. I get mine from Morrisons. Parmesan shavings on top. Garden Salad as a side. All done in 15 minutes.

How do you like the Barenaked noodles? I like the rice in curries
 
I made some CCBs today, I know they have to be stored in the fridge but I can’t remember if they freeze ok. I’d like to save some to take on holiday in a couple of weeks. @ianpspurs do you know?
 
Yesterdays food:
NE1: 1 slice HiLo toast, butter, tea x 2.
NE2: Lettuce, tomato, cucumber, mayo and small amount smoked salmon. (Dont really like it much but with everyone away needed eating.
NE3: 3 egg spinach omelette, 4 squares Lindt 90 (if only I could stop at 2).

Today
NE1: Same
NE2: Whole avocado, tub prawn cocktail, 1 tomato.
NE3: Cauli rice, mixed with fried mushroom slices, and poached salmon flakes.
Will try to resist afters but who knows!
Happy days everyone.
 
Eaten today

Couple cubes chocolate

Eggs and cheese thrown in microwave

Then later on because tidying cupboards
I used some lentils from a tin and made them into a veg soup
But I was choking on it. The skin even though soft sticks on the way down. I have been become by more like this for awhile. So threw all tins lentils and beans away. Yes I know I can blitz them, but still sticky skin bits.

So awhile later I opened a small tin of fruit to soothe my throat, and plenty of double cream.

Then later a couple eggs and two slices bacon.

No idea today how my blood sugar levels are. Not tested. Fingers want a holiday.

There was a bit more chocolate in between that lot above.

Water with salt or lemon juice in

One coffee with cream

Cups tea with smidgeon of cream

That’s my story and I’m sticking to it...

Dinner: chicken supreme and mixed veggies followed by SF jelly, cream and LC chocolate granola and one of the CCBs I made this afternoon.
 
Own up, who stole summer? Another set of NEs fully analysed in chronometer. Like the England cricket team looks good on paper/screen BUT just as cricket is played on grass not paper so food does its stuff in my body not in chronometer.
No B but lots of tea. First dubious event was coffee with soy single cream - coffee not cream dubious part. NE1 2 large flaxseed crackers made into sandwiches, buttered with 1 slice of tongue in each plus a chicken leg. NE2 was big salad with 3 eggs and cheese 50 gms?. Liked the crunch of celery and radish but have to say best part of today's food was the apple cider vinegar taste in the dressing. Originally intended to have Fage yog and raspberries but I really can't be bothered.
ETA: I ate a chunk of pork I was putting in the fridge. Don't judge me.

I didn't get chance to post yesterday, as I was so tired. We had courgetti bolognese with plenty Parmesan last night, followed by a mini LC cinnamon cheesecake. Not sure what we had for lunch and breakfast was the same as today. Today's menu was as follows:

B: Lime chia pudding with raspberries and flaked almonds
L: Nothing for me, just black coffee. Mr B had cold bratwurst sausage, smoked German cheese, hm coleslaw, salad leaves, olives. I'm sure he had a small piece of 85% choc too.
D: Butter chicken (https://www.gnom-gnom.com/low-carb-keto-butter-chicken/) with cauli rice. LC Nutella quick mouse - just a little Nutella whipped with double cream until thick, served with chopped hazelnuts. Decaf coffee with cream.

Snap on the butter chicken @Brunneria! I'm afraid even the thought of corned beef (with or without butter chicken!) makes me queasy.:spitoutdummy: I've never been a fan.

Breakfast: Cheese and mushroom omelette, cooking bacon, tomato, reheated spudlite.

Drinks: Black coffee / tea, no sugar / sweeteners, water.
 
We’re away for a few days, but now, after a couple of days of sore throat, I have the cold that follows. I was going out with our friends, but after ibuprofen, hot shower and breakfast I still had wobbly legs so have stayed behind at the pension- on a rather uncomfortable long chair on the balcony.
So to food.
Monday, no breakfast, tea. We had a picnic in the way here, hard boiled eggs, a slice of LC bread, cheese, mini toms. More tea and water.
Dinner. At a restaurant, good food but few veggies. Turkey strips in a cream sauce, side salad. White wine spritzer.
Tuesday. Breakfast, a slice LC bread, plus cheese. The eggs were not edible for me - very very undercooked- and only sweetened yoghurt available which I couldn’t eat. Tea.
Coffee.
Lunch was a rather disgusting sausage with mustard, without the bread roll. I ate some almonds to take away the taste.
Dinner. Chicken well seasoned with orange pepper in creamy sauce and with a side salad. Some good Grauer Burgunder.
The good side to all this is that yesterday and today my fasting bg were in the 5s both times. 5.6 and 5.9 this morning.
So hopefully all this is working!!
