What have you eaten today? (Low carb forum)

Today I am eating usual brekkie LL toast, thick salted cornish butter, tea lots. Lunch 2 slices ham and large spoon coleslaw dotted with Stilton crumbs and cucumber.
Supper is Bolognese with courgetti for me.
Having a restorative gin & soda atm.

Need to do biggish shop in next few days in order to self isolate as friend battling cancer coming to recuperate at weekend after surgery. Wondering about internet shop but suspect I will only get frustrated with missing items so will probs do this one in person, after that we’ll see. Lucky have two very good farm shops within 15 min drive, one specialising in seasonal veg the other has excellent butcher (as long as we all stay well).
 
Just a quick post - as usual I have been really enjoying reading all your posts but I can't do much typing or using my kindle to post because it really hurts the joints in my hands and then they go buzzy (like electric shocks) and painful. I had the x-rays and blood tests - now just waiting for the results - should be next week if I can get in to see a doctor. I tried to make an appointment with my GP only to be told that they have changed the system back to the previous 'on the day' appointment system (which failed miserably) so I phoned this morning at 8am and it took until 8.40 before I managed to get through only to find that all the appointments had been allocated. Rumour has it that they will be moving to phone consultations for the duration of the Covid 19 virus very soon.

I also found out that the long awaited new GP surgery in this village (there had been LOTS of excitement about this new surgery) and another established surgery in a village a few miles away are going to be run by my existing GP practice (which are based in a village in between). So, basically, they'll corner the market in rubbish standard of care for miles around. My GP's surgery is one of those that received such a bad CQC assessment a couple of years ago that it nearly got closed down or taken over to be administered by the government. It doesn't inspire confidence.

We have got some Corona virus panic buying madness going on in this area. On Saturday we drove past our local (fairly small) Sainsbury about an hour before the store opens only to see a queue of people waiting outside. That afternoon I mentioned it to a neighbour who said there had been a rumour on Facebook that there would be a hand gel, paracetamol and toilet roll delivery to the store so several people had said they would turn up early to be sure to get some. Luckily I stock up with most things we use a lot of when they are on special offer so we would be fine (but bored) for a month without needing to buy anything if a supply chain problem does develop.

ANYWAY.... back on topic.... my food and BGs are going well. I've been having a quick and very yummy breakfast, a sweet omelette made with eggs and double cream and cooked in butter then drizzled with free syrup (carb free syrups from TK Maxx) - cooked until almost but not quite set. This is SPECTACULARLY nice when made with vanilla and cinnamon - much like the filling of a custard tart.

Lunches are generally just about 40-50g of zero carb cheese or green gloup (although I'm rapidly going off of the green gloup - there's just so much raw kale a girl's digestion can cope with!)

Dinners have been veggie curries with paneer or lentils and Bombay celeriac, veggie spag bol with that black bean spag from Aldi, cannellini beans with pesto, garlic and spinach (yum), Jamie Oliver's lentil tabbouleh, veggie chill and an occasional quorn roast dinner. I'm trying to keep as low carb as possible as I find my morning FBG increases if I eat even slightly too many carbs at the previous dinner time - so I aim for no more than 10-15 (mainly as veg).

Sorry to hear that your hands are so bad still. Trouble is, it sounds as though getting appointments with a GP is going to get even more difficult over the next weeks. I do hope not.

This my recipe - I started with the Diet doctor seeded crackers on but have changed it a lot! my adapted one works for me but you may wish to look at the DD one too. I'll put the link below my own recipe

Seeded Crispbreads


4 grams of carb for whole mix if 40 crispbreads each crispbread is 0.1 of carb.

Makes 40 crispbreads using a 2” square cutter or you could just cut out to size wanted with a knife

Equipment:

Need 2 large flat oven trays – you can use oiled greaseproof paper to cook them on but I’ve found it more economical and easier to buy oven proof silicone tray liners – which you don’t need to oil. (I use three of them using two to roll out on and then pop into the oven trays and one to use on top - which I use to make rolling out much easier as it doesn’t stick to the liner)

Ingredients

• 150g of Dry ingredients in total - I now use the following but you could do a mix of ground and whole seeds that you like:

o 80g of milled seeds could use just ground flaxseed but I used a mix of flaxseed, sunflower and pumpkin seeds and think it added more flavour to the mix (Linwood’s or Aldi’s version and used this as my carb count)

o 20 g of Psyllium Husk

o 30 g of whole hemp heart seeds – these are shelled and very soft and nutty - but any favourite seeds would work!

o 20g of whole mixed seeds

o Some ground psyllium husk powder for rolling out the crispbreads

• Seasoning to taste I used a mix of salt, a few herbs and pepper

• 2 tablespoon of olive oil and 9 tablespoons of water (you may need a bit extra when mixing you’ll need to judge it to make sure good sticky texture)

Method

1. Put oven on to 160 fan – or equivalent

2. Mix water and oil

3. Mix liquids with dry ingredients - adding more Psyllium Husk if very sticky or more water if very dry and not binding into a ball for rolling out. Go steady as Psyllium Husk takes a few mins to thicken so don’t overdo it.

4. Sprinkle powdered Psyllium Husk onto the two silicone tray lines and tip half the dough out on each sheet and using another sheet and rolling pin roll and press out until as thin as possible - the thinner the better. Do one and then the other. Once rolled out remove the top silicone mat that’s only to assist the rolling out.

5. When you’ve got a rectangle the size of the silicone mat, press out/roll out the size and shapes of crispbread required. Or just cut the shape you want. You should be able to spread them out on the mat and then when completed just put into the oven tray - should make about 20 on each tray, if thin enough. They don’t spread so can be quite close together for baking

6. Bake in oven for 35 mins - checking and then leaving longer and/or in a cooling oven if not crisp enough. I tend always to leave them for a least a couple of hours until they are quite crunchy. If you don’t manage to roll them out thinly enough and they are thick or too wet they will need a longer cook. They should snap a bit before you turn the oven off if at all chewy because of thickness cook them for longer!

Busy day today - as well as caring also had to pop into Brum for a few hours but got sorted what needed to so feeling pleased with that! Brum was so quiet though as were the trains , a bit strange but made it quicker to get around and found it so easy to get served etc!

I made some changes ditched the tahini and used all almond butter instead and also ditched the coconut also didnt dip in choc just added extra choc to the bars, and also swapped in some butter just a dollop rather than the coconut oil (my preference!) - I made 12 so froze half they froze really well and have kept me going over past few weeks! Easy to grab and cheaper that the ready-made bars you can buy.
Dinner LC seeded crackers whilst cooking, cajun chicken, halloumi fries and salads with glass of dry white wine followed by SFJelly and cream plus just had a square of choc with decaff coffee.
River Severn on the rise yet again due to rain in Wales but barriers are all in place still awaiting redeployment and our PM has cast his beady eye over them - so maybe they will behave this time round!! After all BJ said he woud get Bewdley done. Joking aside I dont think the rise is predicted to breach the barriers this time round but may mean longer journeys again for a while.....

they were in the vertical chillers, in the fish section.
Because they are made of fish... but it was a fluke we found them!
 
Breakfast: Usual cheese and mushroom omelette, bacon, tomatoes, spudlite.
Lunch: Toasted cheese and onion sandwiches.
Dinner: Spicy seafood marinara, small portion of reheated pasta spirals.

Drinks: Black coffee no sugary, water.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: 2 x Babybels followed Greek yoghurt, coffee chia pudding and LC chocolate granola.
Mid afternoon: caramel phd bar and black coffee.
Dinner: chicken supreme with mixed veg followed by SF jelly, cream and berry and almond grain free granola (newly discovered from The Paleo Foods Co from Waitrose)

Today:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: left over cauli rice with melted cheese followed by Greek yoghurt, coconut chia pudding and berry and almond grain free granola.
Mid afternoon at Nero’s coconut cappuccino with a birthday Carb Killa bar.
Dinner: LC fish pie and roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.

Yesterday, in Morrison's - a bit off the tack for us, but was in there yesterday - they had whole salmon on offer at fantastic prices.

Morrisons are good for whole salmon. Definitely have good offers in the run up to Christmas and Easter plus at least 1 other point in the year. 60 mile+ round trip from here though.
 
Got a bit of catching up to do. My throat developed into a nasty cold and I'm still weak. Thankfully it is just a bad cold - no fever so it isn't Covid19. Sunday, apart from a sore throat I was OK during the day. Bed 6.3 FBG 6.8. BGs slightly higher but the approaching bug was behind it. Legs were bad so that should have been the clue.

D. Really wanted lamb so I did a small leg in the IP. Seared the outside then under pressure for 20 mins with a little stock. Had 3 slices with mint sauce, halloumi roasted in the oven and a mini cob. Usual campari and soda.
By evening my throat was raw so I had some of the Grahams Goodness coffee ice cream with paracetamol followed by a hot shower as the paracetamol started me sweating.

@DJC3 - I liked the look of that keto meat pie. I'll do that once I feel better again. @Tipetoo - great results. @ianpspurs - super cute puppies. When will they be due to arrive at yours?
 
Bed 6.1 FBG 6.4 Monday - my cold was really nasty yesterday. I'm plastered with VIC, dosed on First Defence and paracetamol but even with that I'm struggling. It's my throat that's worst but thankfully it's easing now. I'm really tired though.

D. Moved the ribs from later in the week. Was supposed to have a slaw with it but I didn't have the energy so just did the lamb ribs in the air fryer. Mixed up a curried mayo but struggled to eat the ribs.

Early night was needed.
 
Slept in again today - awake quite a lot during the night but then decided on "just another 10 minutes" at 5.45. Woke up at 8.30! Then I got up and sat in the kitchen chair with my cup of tea and fell asleep again, for another hour. So much for fasting sunrise to sunset. Just couldn't do it today. I've had the remnants of a cold for months now - never went away completely, but now it is developing into another cold - a bit of sneezing and runny nose plus a bit of a dry cough. No way it is this new virus - none so far on the Island, but it will sound suspicious to others. Probably shan't go to the kids' group on Friday - no need to pass anything on to them. I was going to try to make an appointment with the GP for one or 2 issues, but Probably nothing they will be interested in with all that is going on just now, so I'll leave it and see what happens. Nothing major, I don't think.

So - breakfast at about 10 am - 2 slices black pudding, fried tomato and 2 fried eggs.

Made a big pot of green soup in the afternoon but didn't have any then made fish pie topped with celeriac and cheese mash for dinner. Had it about 8 pm - but didn't have much of it. It tasted fine but just was no longer hungry. NOTE to me: in future chop the hard boiled eggs, don't just slice them - didn't particularly enjoy the texture of the slices.

I do hope you are feeling better soon, @maglil55. Even things like colds can get you down and tire you out, can't they? And a sore throat, I think, is the worst aspect - it can be so uncomfortable and keep you awake.
 
Anybody having trouble getting through to the Diabetes UK website to see the item about Coronavirus? I've tried a few times but can't get through to the website at all. Might be something important on there that I haven't heard already.

Nearest Morrisons to us is in Inverness - about 100 miles away, including a 21/2 hour ferry crossing. Probably not really worth the effort. When we do get a chance, though, we do "hit" the shops. Last time was when I had my thyroid hacked away at in 2017. Neil hit the shops for me - I wasn't really up to it.

Breakfast nut granola. 2!x CWC, Scrambled eggs with bacon.
Lunch was meant to be avocado, tomato and cheese salad, but most of the avocado had gone over, so it was cheese, tomato and avocado salad. Not quite the same. Lettuce, cucumber and coleslaw. Tea to drink.
Mid afternoon Tea.
Going out shopping , at 6pm. So had chunk of cheese before we went and several more when we got home. Nearly died at the price of electrical bits. Switches, sockets and cable points. Over €200. We also bought two parts for showers and a 30l can of xtreme blanc paint. Am hoping that is brilliant white.
Today used about half the creamy white paint on the biggest bedroom walls. Usually I would paint the ceiling first, but MrSlim was still working on some of it, so that is tomorrow's job.
Dinner; another Christmas duck leg, MrSlim had a cheese and potato pie. With more potatoes. Did suggest they were not neccessary, but he insisted. Both of us had leeks fried in butter and oil with cabbage and the last of the frozen green beans. Put them on the shopping list Liz.
Glass of wine. And bedtime will be lemon tea.

@Goonergal And @DJC3 like the sound of chocolate almond squares. Are they easy to make?
@maglil55 you seagull theif reminded me of being robbed by one. Swooped out of the sky and snatched my icecream cornet.
@shelley262 Thanks for posting the low carb crackers recipe. Can I ask which band of psyllium husk you use. Have looked at it, but never bought any. Completely put off by the idea of purple bread.
And to round off the day- the bed collapsed.
So MrSlim and I attempting to reconstruct at midnight. Not the best fun in the world, as it is very heavy and really more than either of us should be lifting at the moment.
No doubt we will sleep well after that little bit of drama.

Today ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Half a DD keto roll with goat cream cheese and salmon, the other half keto roll with mayonnaise and goose breast. Two small pieces of Sacher torte.

Dinner: A very large portion of cauli mash with onion and tahini. Green asparagus fried in butter and olive oil. Some dry red wine.

@Annb and @maglil55 sorry to hear you’re also not well.

I’m voting for Morrison’s too. Have ordered online due to being stuck inside, so not able to take advantage of I store fish/meat offers, but having been the only supermarket with available delivery slots for today when I looked yesterday morning, they’ve just emailed with the good news that ‘there are no missing items or substitutions in your order’. Guess that’s to do with the lack of carbs/loo roll in the order.

@ziggy_w many thanks for the offer. My bread consumption is purely temporary for ease.

@SlimLizzy the almond squares are very, very easy to make. My recipe is as follows: 100g 90% chocolate (obviously substitute up or down with cocoa percentage depending on taste), 60g salted butter (unsalted would work too, but I like the slightly salty taste), 60g chopped almonds (any chopped nuts will work - Brazils are good), 60g smooth almond butter, 0.5 tsp vanilla extract, pinch of salt.

Grease and line a very small baking tray (mine is about 6 x 4 inches). Melt chocolate and butter, add everything else (keep some of the chopped nuts for topping), stir well and add the batter to the greased dish. Allow to cool for a couple of minutes, add the remaining chopped nuts. Refrigerate until solid (couple of hours will be fine), then remove and cut into small pieces. This yields about 24 small squares. But who am I kidding? Might as well be 3 or 4 large squares for the amount of time they last :D :hilarious:

They do freeze well too, so that’s an option for portion control.
